HONEY-COCOA FROSTING
This recipe was created to go with my whole wheat chocolate chiffon cake. It contains no refined sugar and no egg. For white frosting, reduce the honey to 1/2 cup and omit the cocoa powder.

Steps:
- Whip the cream cheese with an electric mixer until fluffy. Beat in the honey, cocoa powder, and vanilla extract.
- Beat the cream in a separate bowl until stiff peaks form. Lift your beater or whisk straight up: the cream should form a sharp peak that holds its shape. Gently fold the whipped cream into the cream cheese mixture.

FLUFFY WHITE FROSTING
This is the type of frosting that is cooked over the stove, then whipped. This goes well on almost any type of cake.

Steps:
- In a saucepan, stir together the sugar, water and cream of tartar. Cook over medium-high heat until the sugar is dissolved and the mixture is bubbly.
- In a medium mixing bowl, whip the egg whites and vanilla to soft peaks. Gradually add the sugar mixture while whipping constantly until stiff peaks form, about 7 to 10 minutes. Frost the cake of your choice.

CLASSIC MERINGUE PIE TOPPING
Steps:
- Gather the ingredients.
- In a mixing bowl-preferably stainless steel or glass- beat the egg whites and a pinch of salt using the low speed of an electric mixer until they are frothy.
- Add the cream of tartar and increase the mixer speed to medium. Continue beating until the whites are fluffy, with large bubbles forming around the edges.
- With the mixer running, add the sugar a few teaspoons at a time, mixing the sugar in completely before adding more. Continue until all of the sugar is incorporated.
- Continue beating until the peaks are firm but still glossy. Add the vanilla .
- Spoon the meringue onto the hot pie filling. If you are topping an unbaked pie filling, have it at room temperature (not cold) before you top it with the meringue. Spread the meringue to the crust edge to seal the filling in. Fluff it with the back of a spoon to make decorative peaks across the pie.
- Bake at 350 F/180 C/Gas Mark 4 for about 12 minutes for 2 egg whites or about 15 minutes for 3 egg whites.
- Serve and enjoy.

7-MINUTE FLUFFY WHITE FROSTING

Steps:
- Gather the ingredients.
- Combine the egg whites, sugar, water, corn syrup, and salt in the top bowl of a double boiler. Add water to the bottom pot and bring to a simmer.
- Beat the mixture off of the heat with an electric hand mixer for a minute. Place the pan over the boiling water (make sure the bottom of the pan is not touching the boiling water).
- Continue beating for about 6 minutes, or until the frosting mixture is white, fluffy, and will stand in stiff peaks .
- Remove from the heat and beat in the vanilla. Use immediately to frost a two-layer cake or cupcakes.

- Use a stand mixer. It will change your life. You can make this using a hand mixer, but it just takes time. In a clean bowl (any grease on your bowl or utensils will ruin the icing — egg whites hate grease!), beat the egg whites and salt on high speed until foamy.
