HOMINY CASSEROLE
I love hominy so I made a casserole featuring it. It is easy to make and I love serving it as a side dish.-Marion Thurman, Crossett, Arkansas

Steps:
- In a small skillet, cook onion in oil until tender. Add garlic; cook 1 minute longer. Remove from the heat. In a large bowl, combine onion mixture, sour cream, half of the cheese, milk, chilies and cumin. Stir in hominy. , Pour into a greased 2-qt. baking dish. bake, uncovered, at 350° for 30 minutes or until heated through. Sprinkle with remaining cheese.

Steps:
- 1. Puree the hominy in food processor until no whole kernels remain. or you can mash with a masher or fork
- 2. Heat a medium saucepan and add 1 tablespoon olive oil.
- 3. Add the green and red onions, garlic, jalapeno, cumin, cayenne, cinnamon, salt and cilantro; saute until softened and turn translucent.
- 4. Mix with the hominy and fold in the cheese and 1 egg.
- 5. To test the seasoning fry a little of the batter and taste, adjust seasonings if needed.
- 6. Proportion into 2-ounce cakes.
- 7. Pour the flour into a dish.
- 8. In a second dish, beat the remaining 2 eggs with 1 tablespoon water.
- 9. In a third dish pour the Panko crumbs.
- 10. Coat each hominy cake first with flour, then dip into the egg wash, then roll in the panko crumbs.
- 11. Heat the remaining 2 tablespoons olive oil in a skillet until very hot.
- 12. Enjoy
JOHNNYCAKES
These are though to be the original pancake. Serve them hot with maple syrup. They are also known as hoecakes. Serve hot with honey and butter.

HOMINY GRITS
Hominy and hominy grits are often confused. Hominy is the whole kernel of corn which has been treated with lye to remove the hulls. Grits are the finer particles or broken hominy. Grits are cooked very much like rice and is served with butter or gravy as a vegetable OR as a cereal. Leftover grits may be molded, cut into thick slices, dipped in cornmeal and fried (delicious served with sorghum, maple syrup or honey). - Mix all ingredients together except for the frying oil in a bowl until well combined. Heat the frying oil or butter in a large skillet over medium heat. Drop the batter into the hot skillet. Use about 2 tablespoons of batter per hoecake. Fry each hoecake until brown and crisp; turn each hoecake with a spatula, and then brown the other side. With a slotted spoon, remove each hoecake to drain on a paper towel-lined plate. Makes about 16 hoecakes.
