THE BEST HUMMUS
This is a classic tahini-forward, bright and lemony hummus, and is similar to what you would find in Israel. We tried this recipe with from-scratch dried chickpeas as well as with canned, and the flavor and texture were only marginally better with the freshly cooked. And we saved 24 hours of prep time! So for a creamy, satisfying 15-minute hummus, we're going with the can.

Steps:
- Drain the chickpeas in a medium mesh sieve, reserving the liquid. Reserve about 7 chickpeas for garnish.
- Process the tahini, garlic and cumin in a food processor. With the motor running, slowly drizzle in 2/3 cup of the reserved chickpea liquid (if you don't have exactly 2/3 cup, add water until the total amount is 2/3 cup) and process until light and very creamy, 1 to 2 minutes. The mixture will appear broken at first but will come together after all the liquid is added and has been processed for a minute or two.
- Add the chickpeas, the lemon juice and 1/2 teaspoon salt to the tahini mixture. Process until the mixture is extremely smooth, scraping down the sides occasionally, about 4 minutes. Thin with more water if you prefer a looser consistency. Taste and season with more salt, lemon juice or cumin as desired.
- Spoon the hummus into a shallow bowl, making a well in the center, and drizzle liberally with oil. Top with the reserved chickpeas and sprinkle with paprika. Serve with pita bread, pita chips or cut raw vegetables.
SOUTHWESTERN HOMINY
This recipe has been in our family for a long time, but I'm not sure where it originated. Though it has a Southwestern flair, we love it here in Missouri.

- NOTE: Allow 2 pounds rinsed, trimmed, raw vegetables such as bell peppers, jicama, and celery for every 8 to 10 servings. Drain the hominy. In a food processor or a blender, combine the hominy, creamed corn, lemon juice, garlic, cumin, and cayenne. Whirl until smooth. Mound hummus into a bowl. (If making ahead, cover and chill up to a day; let warm to room temperature.) Sprinkle hummus with chopped radishes and offer crisp raw vegetables to scoop up the mixture.
YELLOW HOMINY AND CHILI PEPPER HUMMUS
Steps:
- Put all ingredients into a food processor and blend until smooth, approximately 20 seconds. If dip is slightly thick, add 1/4 cup water and blend again. Taste and adjust seasoning and/or chipotle pepper if needed. Garnish with a drizzle of extra virgin olive oil. Serve room temperature with grilled pita or flatbread. Will last in the fridge for 2 days.

- We’ll start by quick-roasting a clove of garlic. If you like the zingy flavor of raw garlic, skip this step. I like it either way, but Kev likes it less zingy. I quick roast garlic the same way I reheat pizza, just at a lower heat. In a cast iron pan or small skillet, turn heat to medium. Once the pan is hot, add the garlic with the skin still intact and toast all sides, about 30 seconds each or until the skin is lightly browned. Pour in water, 2 tablespoons or so, and cover. Turn off heat and allow garlic to steam. Water will dissolve. Garlic is ready once it’s soft to the touch, about 3 minutes. If garlic is still hard, return to the heat, add another tablespoon of water, cover and repeat.
- While the garlic cooks, add the beans, 1/4 cup of water, tahini, lemon juice, and kosher salt into a high-powered blender or food processor. Add in the peeled garlic once it’s ready. Begin blending on low to incorporate everything. Turn the speed up to medium-high, blending until the mixture stops. Turn off the machine and scrape down the sides. Add in half of the remaining water (about 2 tablespoons). Blend again on medium-high for about 3 minutes until the mixture is smooth and pale in color. The hummus will be thicker than a smoothie but will still blend easily. If the mixture stops moving (which is likely), stop the blender and break the air bubble. If the hummus is still too thick to blend easily, add in the rest of the water (the final 2 tablespoons) and blend. Hummus will thicken a bit as it sets.
- To serve, remove from blender into a plate or a bowl. Using the back of a spoon, pull river beds into the hummus. Repeat a couple time to make a bulls-eye pattern. Pour in good quality olive oil to the beds. Sprinkle with herbs or spices to garnish.
