Chorizo, hominy and green chile casserole is perfect with a fork, in a tortilla, or with a fried egg on top. Quick and simple to make, this is a great supper idea.

1 lb chorizo (cooked, browned and crumbled)
1/2 c chopped onion
1/2 t cumin
1 t oregano
1 t ancho chile powder
1 16 oz can white hominy, drained
1 c sour cream
1 4 oz can chopped and drained green chilies or 1/2 c fresh chilies, roasted, peeled and chopped
1 can Rotel tomatoes mixed with chiles, drained
1 c grated Cheddar or Jalapeno Jack Cheese
1 c grated cheddar cheese

Steps:

  • Preheat oven to 375.
  • Brown chorizo and onions in a skillet. Drain grease.
  • Stir in drained hominy, green chiles, tomatoes and seasonings.
  • Place into a greased casserole dish and top with cheese.
  • Bake for about 20 minutes, uncovered.

GREEN CHILE HOMINY CASSEROLE WITH CHORIZO

Number Of Ingredients 15

2 poblano chiles
1 teaspoon vegetable oil
1/2 pound Mexican chorizo,removed from casing and crumbled
1/2 medium yellow onion, diced
2 jalapeños, seeds and stems removed, diced
4 cloves garlic, minced
2 15-ounce cans hominy, drained
8 ounces sour cream
1/2 teaspoon cumin
1/4 teaspoon cayenne
1/2 cup cilantro, chopped
2 teaspoons lime juice
2 cups 8 ounces shredded cheddar cheese
Salt
Pepper

Steps:

  • Roast the poblano chiles under the broiler until blackened, about 5 minutes per side. Place chiles in a paper sack or plastic food-storage bag, close it tight and let the chile steam for 20 minutes. Take the chile out of the bag and rub off the skin. Remove stem and seeds and cut dice chiles.
  • Preheat the oven to 350° F.
  • On medium-low heat, heat the vegetable oil and then cook the crumbled chorizo while occasionally stirring in a 10-inch cast-iron skillet until brown, about 8-10 minutes. With a slotted spatula, remove the chorizo and drain any excess grease from the skillet, leaving 1 teaspoon. Add to the skillet the diced onions and jalapeños while occasionally stirring, cook on medium-low heat until onions are translucent, about 5 minutes. Add the garlic and cook for 30 more seconds.
  • Remove the skillet from the heat and add the diced poblano chiles, chorizo, hominy, sour cream, cumin, cayenne, cilantro, lime juice and half of the cheddar cheese. Stir until well combined, taste and add salt and black pepper and adjust seasonings. Top with remaining the cheddar cheese and bake uncovered for 30 minutes or until brown and bubbling.

Butter, for greasing the pan
8 slices bacon, chopped
1 onion, chopped
1 red bell pepper, chopped
One 30-ounce can hominy, drained and rinsed
3/4 cup half-and-half
Hot sauce, to taste
1/2 cup grated Cheddar
1/2 cup grated Monterey Jack cheese
Kosher salt and freshly ground black pepper
1/2 cup breadcrumbs

Steps:

  • Preheat the oven to 375 degrees F. Butter an 8- or 9-inch square baking pan.
  • In a large skillet, fry the bacon over medium-high heat until crispy, 5 to 7 minutes. Remove and drain on paper towels. In the bacon fat, cook the onion and pepper until just starting to brown, 6 to 8 minutes. Stir in the hominy, half-and-half and hot sauce. When the mixture is bubbling, turn off the heat and stir in the bacon and some of the Cheddar and Monterey Jack, reserving some of the cheese for later. Taste and adjust the seasoning with salt, pepper and more hot sauce if needed.
  • Pour the mixture into the prepared pan and top with the remaining cheese and the breadcrumbs. Bake until the top is golden brown and the casserole is bubbling, about 20 minutes. Let rest for 15 minutes before serving.

2 - poblano chilis
1 teaspoon(s) olive oil
3/4 pound(s) mexican chorizo,removed from casing and crumbled
1/2 medium onion,diced
2 - jalapeno,seeded and minced
4 clove(s) garlic,minced
2-15 oz can(s) hominy.drained
8 ounce(s) sour cream
1/2 teaspoon(s) cumin
1/4 teaspoon(s) cayenne pepper
1/2 cup(s) cilantro, chopped
2 teaspoon(s) lime juice
2 cup(s) chedder cheese,shredded
- salt & pepper to taste
- sliced green onions,optional

Steps:

  • Place the poblano chiles directly on a gas flame or under the broiler, turning occasionally, until blackened. Put the charred chiles in a paper sack or bowl covered with plastic wrap to steam. Once cool enough to handle, rub off the skin, remove the stem and seeds, and dice the chiles.
  • Preheat the oven to 350.
  • Heat an oven-safe pan (preferably cast iron) over medium heat and add the oil. Once hot, cook the chorizo until brown, about 8-10 minutes. With a slotted spatula, remove the chorizo and place on paper towels to drain. Drain any excess grease from the skillet, leaving about 1 teaspoon. Add the onions and jalapeños to the skillet and continue cooking on medium-low heat until onions are translucent, about 5 minutes. Add the garlic and cook for 30 more seconds.

1 (8 ounce) carton sour cream

  • Mix all ingredients except the cheese.
  • Pour into 8 or 9" baking dish.
  • Sprinkle grated cheddar cheese on top.

1 medium onion, chopped
1 tablespoon canola oil
1 garlic clove, minced
1 cup sour cream
3/4 cup shredded cheddar cheese, divided
1/4 cup milk
1 can (4 ounces) chopped green chilies
1/4 teaspoon ground cumin
3 cans (15 ounces each) golden hominy, drained

Steps:

  • In a small skillet, cook onion in oil until tender. Add garlic; cook 1 minute longer. Remove from the heat. In a large bowl, combine onion mixture, sour cream, half of the cheese, milk, chilies and cumin. Stir in hominy. , Pour into a greased 2-qt. baking dish. bake, uncovered, at 350° for 30 minutes or until heated through. Sprinkle with remaining cheese.

oil or butter, for greasing casserole
1 lb chorizo sausage, sliced 1/4 inch thick
3 large garlic cloves
2 large onions (about 3/4 lb.)
2 tablespoons olive oil
1 large green bell pepper, diced (about 1 1/2 c.)
1 large red sweet bell pepper, diced (about 1 1/2 c.)
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
3 tablespoons coarsely chopped cilantro leaves, divided
salt, pepper to taste
6 cups whole white hominy, cooked (or 3 1-lb. cans, drained and rinsed)
2/3 cup light cream or 2/3 cup half-and-half
2 cups shredded sharp cheddar cheese, divided (about 6 oz.)
1/2 lb monterey jack cheese with chile, cut into 1/2-inch cubes

Steps:

  • Oil a 12-inch-wide by 3-inch-deep glazed pottery or other ovenproof casserole and set aside.
  • Saute the sliced chorizo in a large skillet until lightly browned all over. You may need to do two batches. Drain itt on paper towels. Discard the rendered fat in the skillet and wipe it out with paper towels.
  • In the bowl of a food processor, finely mince the garlic, then add the onions and pulse five or six times.
  • Heat the olive oil in the skillet over medium heat and saute the onion and garlic for 5 minutes, stirring occasionally. Add the peppers and continue to saute another 5 minutes. Remove the skillet from the heat and add oregano through the hominy (using 2 tablespoons of the cilantro), stirring gently to combine. Add the cream,, 1 cup of the cheddar, and all the pepper jack cubes. Stir to mix well.
  • At this point the mixture can be put into a bowl, covered, and refrigerated until you want to bake the casserole, or you can bake it right away.
  • To bake, preheat the oven to 400 degrees Fahrenheit. Transfer the mixture to the oiled casserole, cover with foil, and bake 20 minutes. Remove the casserole from the oven, discard the foil, and top the casserole with the remaining cheddar. Bake, uncovered, an additional 10 minutes, or until the cheese is melted. Scatter the remaining cilantro on the surface before serving. Serve hot from the baking dish.
