HOMEMADE BUNS
I attend a mom's group at my church and one Tuesday morning our "craft" was making buns. The experienced bun makers of the previous generation taught all of us young moms the craft of bun making. Now I am proud of my bun making and I am glad that I had a chance to acquire this new skill. (Thank you Mavis!) Prep time does not include rising time. Sometimes I will make a big batch of this recipe and then make breadsticks, hoagie rolls, small buns for kid's lunches, and even a batch of cinnamon rolls but adding cinnamon and sugar and rolling up the dough. All of these can be tucked into the freezer until you need them.

Steps:
- Mix Yeast items and let stand in a large bowl (I like my tupperware thatsa bowl!).
- Knead out until dough is soft and does not stick to your hands.
- Cover and let rise 45 minutes.
- Punch down and let rise 30 minutes.
- Shape into buns and let rise for 2 hours.
- Bake at 375 for 15-17 minutes or until golden brown.
HOMEMADE KIELBASA
Preparing the unique combination of roughly chopped, perfectly seasoned pork, ground beef, herbs and spices by hand, stuffing them into natural pork casing and using a live fire to smoke them produces sausages with a meaty, smoky taste, coarse texture and distinctive snap when you bite into them.

Steps:
- The better and fresher the meat is, the better the taste of the kielbasa.
- They say it adds a little moisture and some additional flavor.
- Others want all lean meat in their sausage.
- The next step is to slice narrow strips of the pork and cut those strips into thirds.
- Then grind the pork using a medium size plate in the grinder.
- This grinds the meat coarse.
- When making traditional homemade kielbasa, the meat should be a little chunky.
- This is where commercial kielbasa with its smooth, mealy texture is inferior to hearty, substantial, homemade, traditional version.
- Once you grind the meat, it's time to add the spices.
- Mix the salt, Cure #1, sugar, black pepper, garlic, onion powder, mustard seed and water and mix thoroughly into the meat.
- When the meat mixture is prepared and you are ready to stuff it into the casing, you should make sure to soak the casing in warm water first.
- once the casing have been rehydrated and become flexible, you should rinse them three or four times to ensure you remove as much of the unwanted salt as possible.
- You can do this by putting one end of the casing on the faucet, letting the warm water run through the inside and flushing out the salt.
- The casings can then be cut it into 4 foot lengths to prepare them to be stuffed with the mixture of beef, pork and a variety of spices.
- To properly cook the kielbasa and add that delicious smoky flavor, your smoker must maintain a temperature of 165 degrees until the kielbasa's internal temperature gets to 155 degrees.
- It must also contain the right wood chips to impart the smoky flavor many people love in their kielbasa.
- The smoky flavor acts like a seasoning and there's no substitute for it.
- For people with charcoal or wood smokers, all it takes to create flavorful smoke is to add some cherry wood or apple wood chunks to the fire.
- The key to creating the most flavorful kielbasa sausage is a consistently low temperature.
- Smoking the kielbasa at between 160-165F is ideal.
- Once the temperature in the smoker has reached 165 degrees, put in the sausages and leave them for three to four hours.
- That gives the internal temperature of the sausages to reach 152 degrees and the smoky flavors to permeate the kielbasa.

MOM'S HOMEMADE BUNS
My Mom's Homemade Buns are the perfect dinner roll for any occasion! Incredibly soft and fluffy, use all purpose or whole wheat flour, make a big batch and freeze for later.

Steps:
- In a small bowl or liquid measuring cup, whisk together the warm water, yeast and sugar.
- Let sit for 10 minutes or until bubbly -- this is how you know your yeast is working. This step is technically not required when using instant yeast, but I do it always anyways, so that I know my buns will be a success.
- In the bowl of a stand mixer (or a very large bowl if you are kneading by hand), whisk together the 2 cups warm water, butter, 1/3 cup sugar and salt.
- Add the bubbly yeast mixture and stir to combine.
- Place the bowl in the stand mixer and put the dough hook on the machine. You can also knead by hand.
- Add the flour, one cup at a time, and mix until nearly combined before adding more. You can use all purpose or whole wheat or a combination. Start with 4-5 cups flour, mixing until each is incorporated.
- The closer you get to your dough being ready, the less flour you will add at once. We want a smooth, soft dough, never stiff, so we need to watch and stop adding flour at just the right moment.
- Add up to 6-7 cups flour total, very gradually at the end, until the dough comes together in a smooth, soft ball and does not stick to the sides of the stand mixer. When you touch it, it should be smooth and slightly tacky but not sticky.
- Place dough in a large lightly greased bowl (you can use the same bowl and grease it), and cover with plastic wrap or a clean kitchen towel.
- Set in a warm spot (I use the oven with the light on -- turn the oven on to preheat for 2-4 minutes before turning off and adding the dough) and let rise until doubled, about 1.5 hours.
- Uncover dough, punch down, and roll out 20-24 rounds -- smoothing the top and pinching the seam in the back to smooth (see video for additional details).
- Place on a parchment lined baking sheet and let rise (you don't have to cover them) in a warm spot for 30 to 90 minutes (instant yeast will be quicker) until doubled.
- Bake at 350 degrees for 15-20 minutes, until light golden brown.

EASY QUICK BUNS
These are super easy, super quick buns. I get requests to take them everywhere we go. They are great for those last minute dinner guests, or a nice surprise for breakfast. They freeze well, and make excellent toast. This recipe is a combo of my grandmothers recipe and a few others, all tweaked to make a fast, easy, soft, fluffy bun.

Steps:
- Mix 2 C flour& yeast in a large bowl.
- In a separate bowl, heat milk, water, oil, sugar& salt to lukewarm in microwave.
- Add all at once to flour mixture and beat till smooth. (Approx 2 mins in a Kitchenaid stand mixer).
- Mix in enough flour to make a soft dough (2 - 2 1/2 Cups).
- Mix well until dough is soft and slightly sticky, then turn out onto floured surface and let rest under a large greased bowl for about 15 minutes.
- Shape dough into 12-15 small balls and place on greased baking sheet to rise until doubled in size. (approx 45 Mins).
- Bake in preheated 400 degree oven 12-15 minutes.

I got this recipe from a combination of videos and I just took parts and put them together. Best homemade biscuits I have ever tasted, even if I do say so myself.

- Preheat the oven to 450 degrees F (230 degrees C).
- Divide 1/2 cup butter into 12 to 16 small chunks.
- Mix flour, baking powder, and salt together in a bowl. Mix in butter chunks using a pastry blender. Make a well in the middle of the mixture; pour in buttermilk. Mix until dough comes together.
- Knead dough on a lightly floured surface until just formed together. Cut discs out of dough using a cookie cutter or a cup. Butter both sides of cut biscuit dough with 1/2 of the melted butter. Place biscuits onto a baking sheet.
- Bake in the preheated oven until golden, 12 to 15 minutes. Remove from the oven and brush with remaining melted butter while hot. Serve.

- In a large mixing bowl, mix together flour, salt, baking powder, spices and sugar. Mix thoroughly
- and add fruit.
- Make a well in the center of mixture and add melted butter and beaten egg.
- Mix again until like coarse bread crumbs.
- Make another well in center of mixture and add beer or stout.
- Mix the whole thoroughly and turn into well greased baking pans.
- Bake for 1¼ hours at 300° F. Makes two meatloaf pans.
- If desired, press a few whole cherries into the top of each bun.
