Homemade Peanut Butter Cups (Best You'll Ever Have!) image

These homemade peanut butter cups are truly perfect! This recipe shows you how to temper chocolate to get a glossy sheen and make a mouthwatering peanut butter filling.

1/3 cup unsweetened peanut butter (or any nut butter)
2 teaspoons maple syrup
1 teaspoon powdered sugar
1/4 teaspoon allspice
1/4 teaspoon vanilla extract
8 ounces high quality semisweet chocolate baking bar*
Chunky sea salt, for the garnish

Steps:

  • In a small bowl, stir together the peanut butter, maple syrup, powdered sugar, allspice, and vanilla until fully combined into a sticky mixture. Line a baking sheet with parchment paper.
  • Divide the mixture into 18 even pieces, about 1 scant teaspoon each, onto the parchment paper. Then roll each peanut butter piece in your hands into a ball and flatten the top so it forms a disc. Make them as even as you can (see the photo).
  • Test the size in a mini muffin cup to make sure that the peanut butter disc is just narrower than the size of the circle at the bottom, so that the chocolate will fully cover it. Set aside the peanut butter.
  • Break the chocolate bars into small pieces.
  • Start a small saucepan of barely simmering water.
  • In a heat-proof bowl that is completely dry that will fit over the pan of simmering water, add about 2/3 of the chocolate pieces (we used a small metal bowl). Make sure not to get any water into the chocolate, since it will cause the chocolate to seize up! (There are fixes for siezed chocolate but it's not pretty.) You'll hold the bowl with the chocolate above the other saucepan with boiling water to create a double boiler (or you can use a double boiler if you have one!). Place a towel on counter next to the stove so that you can transfer the bowl to the counter as necessary and avoid any water getting into the bowl.
  • Hold the bowl of chocolate over the simmering water. Allow the chocolate to melt a bit, then gently stir with a spatula until the chocolate fully melts and warms to 115°F. Use a quick-read digital thermometer to check the temperature often; the chocolate will heat quickly at the end.
  • Once the chocolate is at 115°F, immediately remove it from the burner onto the towel. Add the remaining 1/3 of the unmelted chocolate (called seed chocolate) and stir constantly until it melts and the chocolate temperature falls to 84°F. Be very precise about the temperature, checking with the candy thermometer every so often.
  • Here's the important part: When the chocolate is 84°F, return the bowl of chocolate to above the pan of simmering water, and bring it back to 90-91°F. Keep checking with the quick-read digital thermometer until it is 91°F, then remove from the heat immediately.**
  • Working as quickly as possible, place about a heaping 1/4 teaspoon in the bottom of each mini muffin cup. Use the measuring spoon to spread the chocolate into a thin circle on the bottom. Bang the pan onto the counter a few times so that the chocolate evenly spreads.
  • Continuing to work quickly, place the peanut butter discs into the centers of the chocolate, being as exact as possible.
  • Then, pour about 1 teaspoon of chocolate onto the tops of all 18 cups so that the chocolate fills in around it to make a chocolate cup. If the chocolate looks like it's starting to firm up, you can return it to above the hot water and stir for just a minute to heat it back up. Keep working to evenly divide the remaining chocolate between the cups. Then bang the pan several times against the counter so that the chocolate spreads evenly and the tops are level.

2 cups sifted confectioners' sugar
1 1/2 cups smooth peanut butter, preferably all-natural
3 tablespoons unsalted butter
1 pound bittersweet or semisweet chocolate
36 1 3/8-inch paper candy cups

Steps:

  • Combine sugar, peanut butter, and butter in an electric mixer fitted with the paddle attachment. Beat on medium-low speed until combined. Transfer mixture to a pastry bag fitted with a 1/2-inch plain tip, and set aside.
  • Melt chocolate in a double boiler over simmering water. Keep melted chocolate over hot water near work area. Use a small spoon or small paintbrush to coat insides of the paper candy cups with the melted chocolate, making sure to cover the bottom and sides well. Transfer cups to a rimmed baking sheet or muffin tins (which will keep the cups from sliding around). Transfer to freezer until set, about 10 minutes.
  • Remove cold chocolate cups from the freezer. Pipe peanut-butter filling into each cup until three-quarters full. Spoon melted chocolate into each cup to cover. Return to the freezer until set, 15 to 25 minutes.

1 cup powdered sugar
1 1/2 cup peanut butter (melted)
3 cups milk chocolate chips

Steps:

  • Line muffin tin with cupcake liners. In a medium sized mixing bowl mix together the crushed graham crackers, powdered sugar, and peanut butter. (I just softened mine for about 40 seconds in the microwave). Mix together until combined.
  • Melt the chocolate chips in a microwave safe bowl stirring 30 seconds at a time until smooth. Add a heaping teaspoon into the bottom of each cupcake liner and spread along the bottom. Follow it by a heaping tablespoon of the peanut butter mixture. Lastly add a heaping teaspoon of the melted to the chocolate and spread evenly over the peanut butter layer. Refrigerate for about an hour until set and firm.

Steps:

  • Cut 12 regular-sized muffin liners, lengthwise, in half. If you have miniature muffin liners, skip this step.
  • Place half of the chocolate chips in a microwave-safe container. Melt in the microwave for 2 minutes, stirring after every minute.

This homemade Reese's Peanut Butter Cups recipe will satisfy your peanut butter cravings in just minutes, and they taste just like the real thing!

3/4 cup graham crackers (crushed)
1 cup powdered sugar
6 tablespoons butter
9 ounces peanut butter (either creamy or crunchy is fine)
4 tablespoons butter (divided)
12 ounces semi-sweet chocolate chips (you may want to have a little extra on hand just in case)

Steps:

  • In a medium-sized bowl, combine graham cracker crumbs and powdered sugar until well blended. Set aside.In a microwave-safe measuring cup, heat 6 Tbsp butter and peanut butter together in microwave for 15 second increments until melted. Stir until combined and pour over graham cracker mixture. Continue to stir until well combined. Set aside.
  • Melt half of the chocolate chips with 2 tablespoons of butter in a microwave safe bowl in the microwave for 15 second increments (stirring each time) until chocolate is melted. Place cupcake liners in cupcake tin (mini or regular depending on what size peanut butter cups you want to make-- makes about 36 mini cups or 18 full-sized cups).
  • Using a paint brush (I used a flat brush about 1/2" wide), "paint" each cupcake liner with melted chocolate. Be sure to evenly coat the bottom and half way up each cup (if using the "mini" cupcake liners). If you are using full-size cupcake liners paint about 1/3 of the way up each cup. Tip: You don't need to paint the chocolate super thick, just enough so you don't see any of the liner underneath.Place in the refrigerator to cool for about 5 minutes or until chocolate hardens.
  • Press about 1 teaspoon of graham cracker mixture in each mini cup (about 1 Tbsp. for regular-sized cups) making sure the top is somewhat flat (it doesn't need to be perfect). Just make sure you don't go above where you "painted" the chocolate on the cup.
  • Add remaining chocolate chips to remaining melted chocolate in the microwave-safe bowl and melt together with remaining 2 tablespoons butter (stirring every 15 seconds).Spoon a little chocolate over each peanut butter cup until the peanut butter filling is completely covered (you can lightly shake or tap the cupcake pan to even out the chocolate over the filling). You want the top of the peanut butter cup to look completely flat.
  • Place in refrigerator or cool area until chocolate hardens, then serve!

1/2 cup confectioners' sugar
1/4 cup saltine crackers, finely crushed (about 8)

Steps:

  • Melt the chocolate in the top of a double boiler. Keep the chocolate warm over low heat until you are ready to start assembling the peanut butter cups.
  • Combine the peanut butter, confectioners' sugar, saltines, butter and salt in a bowl and blend with an electric mixer until well combined
  • Prepare a muffin pan with 18 paper muffin liners. Add 1 teaspoon melted chocolate to the bottom of a muffin liner. Using the teaspoon, spread the chocolate in a thin, even layer on the bottom and a third of the way up the side. Repeat with the remaining liners. Place the muffin pan in the freezer until the chocolate is set and hardened, about 5 minutes.

½ cup crunchy peanut butter

  • In 1-quart saucepan combine chocolate chips and shortening. Cook over low heat, stirring occasionally, until melted and smooth (3 to 5 minutes).
  • Loosen top paper cup from stack, but leave in stack for greater stability while being coated. With small paint brush, coat inside top cup evenly with about 1 teaspoon melted chocolate to about 1/8-inch thickness, bringing coating almost to top of cup, but not over edge. Repeat until 30 cups are coated; refrigerate cups.

  • Melt half the chocolate either in a double boiler (the safer method) or in the microwave (the more dangerous, but easier/lazier method). I opt for the latter. If you don’t know how to melt chocolate this way, read my Explanation of Chocolate Behavior article.
