1 (2 pound) loaf processed cheese (such as Velveeta®), cubed
2 (15 ounce) cans chili without beans (such as Hormel®)
2 (8 ounce) packages cream cheese, cubed
1 (16 ounce) jar picante sauce (such as Pace®)

Steps:

  • Place processed cheese, chili, cream cheese, and picante sauce into a slow cooker, set on Low, and let processed cheese melt, about 30 minutes. Stir until thoroughly combined; serve warm.

Why am I calling this a cherry folditup, and not a cherry galette, its correct culinary name? Because one sounds like something that's easy to make, and one doesn't.

6 ounces white whole wheat flour
1 teaspoon white sugar
½ teaspoon salt
6 tablespoons chilled unsalted butter, cut into 1/2-inch chunks
¼ cup ice cold water
1 tablespoon ice cold orange vodka
1 cup cherry pie filling
2 teaspoons milk
2 tablespoons white sugar

Steps:

  • Whisk together flour, sugar, and salt in a bowl. Cut in cold butter with a pastry blender until the mixture resembles coarse crumbs. Make a well in the flour mixture and pour in water and vodka, if using. Toss with a fork until flour mixture is moistened, then use your hands to bring dough together into a ball. Flatten into a disc, wrap in plastic wrap, and refrigerate for at least 2 hours.
  • Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper or a silicone baking mat.
  • Roll dough into a large disk about 13 inches wide and 1/8-inch thick. Transfer dough to the prepared baking sheet.
  • Pour cherry filling into the middle of the dough, leaving a 3-inch border. Fold the outside edge of the dough over the fruit, making occasional pleats.
  • Brush milk over dough; generously sprinkle with sugar. Bake in the preheated oven until crust is golden and the fruit is bubbling, 35 minutes.

4 ounces soft chevre cheese
4 ounces cream cheese
1 tablespoon fresh parsley, chopped
1 tablespoon fresh marjoram, chopped or 2 teaspoons dried marjoram
2 teaspoons fresh dill, chopped or 1 teaspoon dried dill
fresh ground pepper, to taste

Steps:

  • Combine ingredients well, and serve either packed into a bowl and drizzled with olive oil, or formed into a ball and rolled into chopped toasted walnuts or almonds.

As I have evolved, so has my beloved grilled cheese sandwich! It has 3 types of cheeses and a kick. It will make you feel so grown up just eating it.

2 tablespoons butter, divided
4 slices whole wheat bread
2 slices white American cheese
4 thin slices tomato
½ avocado, thinly sliced
2 tablespoons chopped fresh basil
1 teaspoon red pepper flakes
1 pinch garlic salt, or to taste
4 ounces fresh mozzarella cheese, thinly sliced
2 slices provolone cheese

Steps:

  • Preheat skillet on medium heat.
  • Spread 1/2 tablespoon butter onto one side of each slice of bread to cover evenly. With buttered sides of the bread facing out, layer 1 slice American cheese, 2 slices tomato, and 2 slices avocado onto each of 2 of the bread slices. Sprinkle about half the basil, red pepper flakes, and garlic salt atop the avocado layer. Finish by topping each with half the mozzarella and 1 slice provolone. Top each with 1 of the remaining bread slices with the buttered side facing out.
  • Cook in hot skillet until bread is golden brown and cheese is melted, 3 to 4 minutes per side.
