1/2 cup boiling water
1/2 teaspoon liquid smoke (optional)
3 tablespoons Braggs liquid aminos (gluten-free if needed for gf diet) or 3 tablespoons soy sauce (gluten-free if needed for gf diet)
1 teaspoon maple syrup
1/4 teaspoon blackstrap molasses
1/2 cup textured vegetable protein (gluten-free if needed for diet)
2 tablespoons nutritional yeast
1 teaspoon garlic powder
1/2 teaspoon crushed sage
1/2 teaspoon ground fennel
1/4 teaspoon black pepper
1/8 teaspoon cayenne
oil (for frying)

Steps:

  • Stir boiling water with liquid smoke (if using), soy sauce, maple syrup, and molasses.
  • Meanwhile, mix TVP with dry seasonings; stir to incorporate. Combine wet and dry mixtures. Then allow the TVP to absorb the moisture for about 5 minutes while you heat the oil.
  • Fry mixture in oil in an uncovered frying pan on medium heat, about 5 minutes (or until browned), stirring occasionally.

1 cup Basic TVP Crumbles (See notes below for recipe link.)
1 Flax Egg (1 tbsp flaxmeal/3tbsp water)
1 tsp Liquid Smoke
1 tsp Cumin
1 tsp Garlic Powder
1 tsp Onion Powder
1/2 tsp Dried Fennel Seed
Ground Pepper (To Taste)
1 tsp Liquid Aminos
1/3 cup Canned Pinto Beans, drained
1/4 cup Unbleached Flour

Steps:

  • Follow the recipe for basic TVP crumbles listed below. Don't bother with spices yet.
  • Preheat oven to 375°F.
  • Cover your baking sheet with aluminum foil and spray with cooking spray to prevent sticking.
  • In a food processor, blend all ingredients smooth.
  • Using about 1/4 cup portions, make patties by pressing mixture into a ball and then flattening between your palms into the desired shape.
  • Place each formed sausage patty onto your prepped baking sheet and spray each top with more cooking spray.
  • Bake for 10 minutes, flip, then bake for 10 minutes more.

TVP is such a simple and quick way to add a great deal of protein to your dish and get the meaty texture you desire for certain recipes. I've listed it out into a basic recipe with varying sections to flavor it in different ways.

1 cup Dried TVP Crumbles
1 cup Water
1 tsp Dried Fennel
1 tsp Liquid Smoke
1 tsp Liquid Amino Acids
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Poultry Seasoning
1 tsp Italian Seasoning
1 tsp Dried Basil (can omit, if you don't have)
1 tbsp Nutritional Yeast
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Cumin
1 tsp Paprika
1 tsp Onion Powder
1 tsp Garlic Powder
1/2 tsp Chili Powder
1 tsp Liquid Smoke
1 tsp Liquid Amino Acids
2 tsp Vegan Worcestershire Sauce
1/2 tsp Black Pepper (Adjust to taste.)

Steps:

  • Add water (and any of your selected spicing sets from above) to your sauce pan and set stove to high until boiling.
  • Turn off stove, add the dried tvp crumbles, cover and let sit for 5 mn.
  • Stir with a fork to fully combine any spices you added. Taste. Depending on what flavor you're going for, feel free to add any extra spicing from your chosen list. There is also the option of adding a tbsp of water or oil to moisten if you find it too dry.
  • That's it! So incredibly easy!!!!

I love this recipe because now I can make and freeze these crumbles and never have to read the labels again to see if there is something in it that I can't eat. It is flexible and can be spiced for any type of dish that you would make using a hamburger substitute. Egg could be added to make patties. Sprinkled on salad is wonderful. Enjoy!

2 cups textured vegetable protein (textured vegetable protein)
1 cup wheat germ
1/4 teaspoon curry powder
1 dash cayenne pepper
1 teaspoon sea salt
1 tablespoon Braggs liquid aminos, liquid amino acid or 1 tablespoon soy sauce
2 cups boiling water
whole wheat flour, for binding (handful)
olive oil, for browning sauce
garlic

Steps:

  • Place tvp, wheat germ, curry powder, cayenne, salt, and garlic in large glass bowl. Pour in boiling water, cover and let sit for 1 hour.
  • Taste test and add spices accordingly, then mix in flour until it resembles meat loaf consistency.
  • Heat oil, and brown mix stirring to keep even browning.
  • I cool mine on wire racks then freeze on cookie sheets, crumble and store in freezer bags.

  • In a mixing bowl combine the Soy Curls or TVP with the hot water and allow to soak for 20 minutes or until most of the liquid is absorbed. Drain any wring out and excess water. Fluff with a work if using TVP.If using soy curls instead make sure to give them a buzz in the food processor after soaking, so that the texture is similar to that of TVP or the rice grains. You want a nice texture not powder.
  • Add the cooked brown rice and the soy to the bowl of a food processor together with the soy sauce, smoked paprika, beets and all the spices including the tapioca. Use the pulse button to gradually mix everything until combined. DO NOT over process, make sure to keep the nice texture in there, a few quick of pulses is enough.
  • Transfer the mixture to a bowl and fold in the panko bread crumbs. (If you want an extra firm burger pattie that holds tighter together you also might wanna add the vital wheat gluten or or just up the bread crumbs until firm to your liking. You'll have to try both variations and see which one you like best.)
  • Wet or lightly oil your hands and form the mixture into patties. You can make 6 to 8 depending on how big you like them to be.

  • Start your mushrooms sauteing first since they take the longest to cook down. I preheat a large nonstick pan over my burner for a few minutes and then dump in the mushrooms and spread them out. They’ll release their own liquid, so no need to add water or oil.
