HOMEMADE TOOTSIE ROLLS
Steps:
- In a large bowl, sift together the cocoa powder, powdered sugar, dry milk and salt.
- Add the corn syrup, melted butter and vanilla extract to a small bowl. Using a fork, whisk vigorously until everything is completely combined.
- Stir the syrup mixture into the dry mixture. It will at first appear like there isn't enough liquid to bring the tootsie roll dough together, but keep going. Using your hands knead the mixture together for a few minutes. Eventually it will go from powdery to chocolatey and smooth. Form the dough into a round disc.
- Using a sharp knife, cut the dough into 1/2-inch slices. Take one slice and roll it into a long, thin rope; cut the rope into 1-inch tootsie rolls. Transfer the cut tootsie rolls to a baking sheet or cooling rack. Repeat the process until you've formed about 30 tootsie rolls. Place the tootsie rolls in the fridge for 1 hour and until firm. Wrap the tootsie rolls in parchment or wax paper that are 3 1/2-inch x 2 1/2-inch squares.

- Stir the wet into the dry.
- At first it will look like there isn't enough liquid. Keep going.

- Using a sharp knife, cut the dough into managable pieces and roll it into a long, thin rope; cut the rope into 1-inch "tootsie rolls."
- Transfer the cut tootsie rolls to a baking sheet or cooling rack.

- Wrap the "tootsie rolls" in parchment or wax paper that are about 3 1/2 x 2 1/2 inch rectangles.
- Yeild depends on how thin your ropes are. Time does not include chill time.

HOMEMADE CHOCOLATE TOOTSIE ROLLS
Tootsie Rolls seem to be on everyone's top 10 list of childhood treats. I toted two lunchboxes packed with bite-size Tootsie Rolls to Brownie camp; they came in handy as friend magnets, bribes and peace offerings, as well as snacks. Later on, I found that you never forget that chewy texture or the chocolatey, surprisingly orange-tinged flavor. So imagine my surprise when I learned that the basic formula is so simple: melted chocolate mixed with corn syrup. Pastry chefs have long used this combination, which takes on a plasticine-like texture, as a kind of moldable chocolate. It lasts almost forever and is incredibly easy to shape into roses, roll into sheets, form into a child's initials -- whatever you can think of. These make a glamorous presentation when wrapped in gold or silver foil paper and served on a silver platter.

- Line a 13 by 17-inch cookie sheet with sides with plastic wrap.
- Melt the chocolate. Add the remaining ingredients, stir well, and scrape into the prepared pan. The mixture should be about 1 inch thick in the pan; it will not fill the pan entirely. Cover and let set overnight at room temperature; the mixture will be stiff but still flexible.
- Turn the candy out onto a work surface and peel off the plastic wrap. Cut into 3/4-inch wide strips, then use your hands to "scrunch" each strip into a log. Roll the logs thin between your hands (or on the work surface) until they are about 1/2-inch in diameter. Cut into 1-inch long sections. Set aside to firm up a bit before wrapping or serving (the mixture warms up and softens as you handle it).
- Roll each candy up in a square of colored foil or cellophane, twisting the ends to secure. You can also form the modeling chocolate into leaves, roses, ropes for initials or animals.

- Line a baking tray (with sides) with plastic wrap and set aside.
- In a medium microwave safe bowl, melt chocolate. Stop to stir every 5-10 seconds so chocolate will not burn. Add the remaining ingredients and stir well. Scrap mixture onto the prepared baking sheet and press down with the back side of a spatula to a 1″ thickness. (Paula's Note: It will not completely cover the pan). Cover mixture with another piece of plastic wrap and let it set overnight at room temperature. The mixture will be stiff, but still moldable and flexible the next day.
- Peel off the plastic wrap and cut into strips (about 1/2″-3/4″ wide). Form each strip into a log and roll out the logs between your hands or on your work surface until they are about 1/2″ in diameter. Cut into sections as long as you like and set aside for a few minutes to harden up again after you have heated them with your hands. Wrap in waxed paper or colored foil squares.
- Paula's Gift Packaging Tip: I love giving gifts in vintage containers I find while junkin'. With my Homemade Tootsie Rolls, I wrapped them in silver foil candy squares and filled a Vintage drinking glass. I finished with a coordinating gross grain ribbon tied on the glass.
