This easy low carb tomato soup recipe is bursting with roasted tomatoes & fresh basil. Who knew keto roasted tomato soup could be so delicious? There's a paleo option, too.

10 medium Roma tomato ((cut into 1"cubes))
2 tbsp Olive oil
4 cloves Garlic ((minced))
2 cup Chicken bone broth ((or any chicken broth))
1 tbsp Herbs de Provence
1/2 tsp Sea salt
1/4 tsp Black pepper
1/4 cup Heavy cream ((or coconut cream for paleo))
2 tbsp Fresh basil ((cut into ribbons))

Steps:

  • Preheat the oven to 400 degrees F (204 degrees C). Line a baking sheet with foil and grease lightly.
  • Toss the tomato chunks with olive oil and minced garlic. Arrange in a single layer on the baking sheet. Roast in the oven for about 20-25 minutes, until the skin on the tomatoes puckers.
  • Transfer the tomato chunks into a blender (including garlic and liquid in the pan) and puree until smooth. (This works best with a high power blender. You can try batches with a regular blender. Alternatively, use an immersion blender right in the pot you'll be using.)
  • Pour the tomato puree into a pot over medium heat. Add broth. Season with Herbs de Provence, sea salt and black pepper to taste. Simmer for 10-15 minutes.
  • Stir in the cream and basil.

4 Medium Tomatoes (500g) ... OR USE 28Ozs (411g) Whole Canned Tomatoes
3 Tbsp (42g) Olive Oil
5 Garlic Cloves (13g) ... or pre-minced garlic
2 Cups (480mL) Chicken Broth
1 Tbsp (3g) Herbs de Provence
1/2 Tsp Salt
1/4 Tsp Black Pepper

Steps:

  • 1. Preheat your oven to 400℉ (204℃).
  • 2. Place tomatoes and garlic cloves on a baking sheet. Drizzle with olive oil. Roast in the oven for 25 minutes...alternatively you can use canned tomatoes and pre-minced garlic as listed above.
  • 3. If you used fresh tomatoes, discard the skins. Use a spatula to transfer the roasted tomatoes, garlic, and oil into a blender or food processor. Purée until smooth.
  • 4. Pour the purée, broth, and seasonings into a small stockpot. Stir well. Bring to everything to a boil. Simmer for a bit longer if you prefer a thicker consistency.
  • 5. Serve hot!

Steps:

  • Combine all of your ingredients in a medium size sauce pan.
  • Cook until all the ingredients have been cooked together throughly and bubbling. Should take about ten minutes.
  • Season with salt and pepper to taste. Serve.

14 1/2 ounces canned tomatoes
8 ounces canned tomato sauce
1 cup chicken or 1 cup vegetable stock
1 medium onion, diced
1 tablespoon garlic, minced
1/4 cup parmesan cheese
1 pinch italian seasoning
2 tablespoons butter or 2 tablespoons ghee
1 tablespoon olive oil or 1 tablespoon avocado oil
red pepper flakes, heavy cream (optional)

Steps:

  • Add butter and oil to a pan.
  • Add in minced onion and saute until soft and translucent, about 5 minutes.
  • Add minced garlic and cook one minute or until fragrant.
  • Add canned tomatoes, tomato sauce, stock, Parmesan cheese and any desired seasonings.
  • Bring to a boil, reduce to a simmer for 20 minutes.
  • Blend with immersion or standard blender until desired consistency has been reached.
  • Finish with heavy cream, if desired.
