This is a great homemade sauce. It's savory and spicy, as well as thick and chunky. The secret is the combination of Italian sausage, green onions, red wine and red pepper flakes. Easily double or triple amount and top on anything! Even better the next day. Enjoy.

2 tablespoons olive oil
4 cloves garlic, minced
1 pound Italian sausage
4 green onions, chopped
1 (8 ounce) package fresh mushrooms, sliced
1 tablespoon dried basil
1 tablespoon dried oregano
1 (15 ounce) can tomato sauce
1 (14.5 ounce) can stewed tomatoes
1 (6 ounce) can tomato paste
½ cup water
½ cup red wine
1 teaspoon red pepper flakes
2 tablespoons white sugar
1 pinch salt and pepper to taste

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Saute garlic until browned. Add sausage and cook for 4 minutes, breaking apart with a spoon. Add green onions and cook until sausage is evenly browned, about 10 minutes.
  • Stir in mushrooms, basil and oregano; cook for 5 minutes. Stir in tomato sauce, stewed tomatoes, and tomato paste. Add water, red wine, red pepper flakes, and sugar. Season with salt and pepper to taste. Reduce heat to low and simmer for at least 1 hour.

I grew up in an Italian household with my Grandfather (Carl D'andrea), teaching me from early childhood, his family recipe for 'basic tomato sauce' or marinara (not written down, completely from memory). I know this recipe like the back of my hand, and when I recently found myself with leftover italian sausages, peppers, and onions from italian sausage sandwiches the night before - I decided to 'get creative' with my grandfathers marinara recipe in combination. Awesome flavor, very good over pasta -- enjoy, & as my Grandpa used to say, 'Mangia!' (which means 'EAT' in Italian)...

28 ounces tomato sauce (use a good sauce such as Furmano's)
3/4 cup onions, chopped fine or 1 small onion
3 -4 garlic cloves, chopped or 2 -3 tablespoons store bought minced garlic
1/2 cup green pepper, chopped
1 medium size tomatoes, chopped
3 -4 Italian sausages, pre-cooked and chopped in food processor (sweet or hot, your preference)
1/4 cup extra virgin olive oil
1/4 cup dry red wine (a good one that you will drink)
3/4 cup water
2 -3 bay leaves
2 -3 tablespoons dried Italian herb seasoning (oregano, basil, parsley, thyme mixture)
2 teaspoons fennel seeds
1/4 teaspoon fresh ground black pepper
1/4 teaspoon kosher salt
1 pinch sugar

Steps:

  • In a large non-stick skillet with a lid, add the olive oil and warm over medium heat, allow oil to heat for approximately 2 minutes.
  • Add chopped onion and green pepper, cook for about 2-3 minutes or until onion is soft and you can see thru it, stir for even cooking.
  • Add chopped/minced garlic, stir and continue to simmer thru for another 2 minutes.
  • Add dry seasonings, chopped tomato, and chopped Italian sausage. Stir all and cook for another 2 minutes then add the ¼-cup dry red wine and stir all together.
  • Add fennel seed & black pepper, cook another 2 minutes longer.
  • Next, add the tomato sauce and water, bay leaves, salt and sugar, stir all and cover with lid, allow to cook on medium until mixture begins to slow boil, then remove lid. Stir again, cover and turn heat to a low simmer, allowing to cook for several hours or until ready to serve with pasta.
  • Allowing sauce to slow cook for at least 2-3 hours makes for a more robust sauce ~ serve with al dente pasta, a good crusty Italian bread (ciabatta for example), freshly grated Italian cheese (a good quality aged Pecorino Romano made from sheeps or goats milk is best, never cows milk), & your favorite red wine (our favorite is a good cabernet).
  • Sauce is also better the next day, so as a time saver make this sauce up a day ahead, allow to cool thoroughly before refrigerating, then serve the next night for dinner.

I used Mario Batali's recipe for basic tomato sauce and added the flavors I love. That means crumbled italian sausage and red wine (my favorite italian flavors). I love the taste of this sauce because it uses thyme as the main flavor. It seems that others like it too, as I am always having to give the recipe out. I especially like to use it in my lasagna. 1/4 cup extra virgin olive oil
1 Spanish onion, diced small
4 garlic cloves, peeled and chopped
3 tablespoons fresh thyme leaves, chopped
1/2 medium carrot, finely grated
1 (28 ounce) can crushed tomatoes
1 (28 ounce) can diced tomatoes with juice
1 lb sweet Italian sausage
1 cup red wine (I use Cabernet Sauvignon)
salt (optional)

Steps:

  • Saute 1 lb. sweet italian sausage until light pink, almost done.
  • Add olive oil, onion and garlic and cook on medium until soft and golden brown, about 8-10 minutes.
  • Add the thyme and carrot and cook 5 minutes more, until the carrot is soft.
  • Add the red wine and cook for one minute.
  • Add the canned tomatoes and bring to a boil, stirring often.
  • Lower the heat and simmer for 30 minutes until consistensy is thick.
  • Season with salt if desired (I usually don't need to) and serve.
  • You can substitute 1 tablespoon dried thyme for the fresh thyme.
  • Try adding 2 cups of grated fresh zucchini at the same time as the tomatoes for a fresh summer sauce.
  • Try adding one pound of fresh sliced mushrooms at the same time as the carrots.

2 tablespoons olive oil
2 cups tomato sauce
1 teaspoon oregano
1 cup chablis
1 lb mushroom, fresh and sliced

Steps:

  • Saute Italian sausage for a few minutes in olive oil - just long enough to seal it or firm it up.
  • Remove sausage and let cool.
  • Cut into bite-size pieces.
  • Mix the rest of the ingredients in the skillet.
  • Bring to a boil.
  • Add sausage and cook for 1 hour on low heat.
  • Serve as a hot appetizer.
  • You may wish to be cautious with the wine at first.
  • Some may find 1 cup too much.

4 spicy Italian sausages, pierced several times with toothpick
1 large onion, finely chopped
4 large garlic cloves, minced
1 1/2 28-ounce cans crushed tomatoes with added puree
1/4 cup chopped fresh Italian parsley
2 small bay leaves
2 teaspoons dried basil
2 teaspoons dried oregano

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add sausages, onion, and garlic. Sauté until onion begins to color, about 10 minutes. Add crushed tomatoes and herbs and bring sauce to boil. Reduce heat to medium-low, cover, and simmer until flavors blend and sausages are cooked through, stirring often, about 30 minutes. Season with salt and pepper. Slice sausages thinly, if desired.

My fiance also believe this recipe could be prepped in a crockpot and left to sit all day, but I haven't tried that. See the Directions for an alternative spicier version. Enjoy!

2 (28 ounce) cans whole tomatoes (can be pre-seasoned if you like)
2 (6 ounce) cans tomato paste
6 -8 whole garlic cloves, peeled and chopped
1 large yellow onion, coarsely chopped
1/4 cup sun-dried tomato, chopped
2 -3 tablespoons extra virgin olive oil
3 -4 sprigs fresh basil leaves, finely chopped
1 -2 tablespoon dried oregano
1 -2 tablespoon dried parsley
1 -2 tablespoon dried Italian seasoning
salt, to taste
1/4 cup freshly grated pecorino romano cheese
1 (750 ml) bottle merlot

Steps:

  • In a large pot, sweat the chopped onions and garlic in the olive oil over med-low heat.
  • Add the peeled tomatoes, crushing them with your hands one by one into smaller chunks. Be careful- they squirt all over the place! Make sure to pour in all the liquid in the cans as well. Add all ingredients except salt, cheese, and wine.
  • Stir all ingredients together. Cover, and increase heat to med-high. Simmer/cook 30-40 minutes, stirring occasionally so that the sauce doesn't burn on the bottom.
  • Add about 1/3 of the bottle of merlot. Add the cheese. Stir, reduce heat slightly and let that cook uncovered for another 15-20 min, stirring occasionally.
  • Taste and determine if you need salt, and add to taste. For salt with a little tang, add some more cheese, if you have it. Let simmer another 15 minutes uncovered, stirring occasionally.
  • During the last simmering stage, cook your pasta.
  • Serve over pasta (1 ladleful is gracious plenty). Extra sauce can frozen for up to a month. To reheat, let simmer on low uncovered, stirring frequently so the sugar in the merlot doesn't burn.
  • *Spicy alternative: For a spicier sauce, use shiraz in place of merlot and add 2 tsp of dried red pepper flakes.
