This recipe came from my mother-in-law and many say it's the best tomato juice they've ever tasted. It has a little eye-opening kick to it that's wonderful! -Beverly Cottrell, Ipswich, Maine

3/4 pound tomatoes (about 4 small), sliced
1/3 cup chopped onion
1/4 cup coarsely chopped green pepper
1/4 cup water
2 tablespoons sliced celery
1-1/2 teaspoons sugar
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a small saucepan, combine all ingredients. Bring to a boil. Reduce heat; cover and simmer until vegetables are tender, 30-35 minutes. Cool. , Transfer tomato mixture to a blender; cover and process until smooth. Refrigerate until chilled.

This is a recipe for homemade vegetable juice cocktail. You will need a pressure canner to do the whole batch, or scale it down to fewer servings, and drink within a couple of days. A great way to keep the taste of summer all year!

15 pounds fresh tomatoes
2 cups chopped celery
3 large onions, peeled and cut into chunks
1 green bell pepper, seeded and chopped
2 medium beets
4 carrots
3 cloves garlic, peeled
¼ cup sugar
1 teaspoon black pepper
2 teaspoons prepared horseradish
⅓ cup lemon juice
6 quarts water, or as needed
1 tablespoon Worcestershire sauce, or to taste
1 cup white sugar
¼ cup salt, or to taste

Steps:

  • Use a juicer to process the tomatoes, celery, onion, green pepper, beets, carrots, and garlic. Place all of the juice into a large pot. Stir in the sugar, black pepper, horseradish, lemon juice, and enough water to make a thin consistency. Season with Worcestershire sauce to taste. Bring to a boil, and continue boiling for 20 minutes.
  • Ladle into 1 quart jars leaving 3/4 inch of headspace. Stir 1 tablespoon of sugar and 1 teaspoon of salt into each jar. Wipe rims clean, and place lids and rings onto jars. Process in a pressure canner for 35 minutes at 10 pounds of pressure.

Surplus of ripe tomatoes from the garden? Canning your own tomato juice is one of the best way to preserve their fresh flavor for year-round use in bloody Marys, soups, or just as a healthy drink.

Number Of Ingredients 3

3 1/2 pounds tomatoes
1 teaspoon salt
2 teaspoons sugar (optional)

Steps:

  • Wash, drain, and core the tomatoes. Cut them into quarters. Place the tomatoes in a large saucepan over medium heat. Using a potato masher or wooden spoon, press down on the tomatoes to release the juices while they cook. Bring them to a simmer and cook until soft, stirring frequently. Remove the tomatoes from the heat and let cool slightly. Press them through a sieve or strainer and return the juice to the pan. Bring the juice just to a boil over medium heat. Pour the liquid into hot pint or quart jars. Fill to within 1/4-inch of the tops. Add the salt, and sugar if desired, to each jar. Wipe the tops of the jars and place the lids on as directed by jar manufacturer. Place in a canner or pressure cooker and cook at low pressure for 10 minutes for pint-sized jars, or 15 minutes for a quart-sized jar. Let cool, check seals, then store the juice for up to 6 months.

1 (6 ounce) can tomato paste
2 tablespoons lemon juice
2 tablespoons white sugar
1 teaspoon salt, or to taste
3 cups water, more if needed

Steps:

  • Blend 2 cups water, tomato paste, lemon juice, sugar, and salt together in a blender until smooth; pour into a 1/2 gallon container. Stir 3 cups water into mixture. Refrigerate until thickened, about 1 hour. Add 1 more cup water if juice is too thick.

Quick to make and very refreshing on a hot day. This has been adapted from Rita G. Springer's 'Caribbean Cookbook'. I never add the sugar. Obviously, you could add a shot of vodka to make it rather more daring.

2 -3 small celery ribs (optional)

Steps:

  • Combine all ingredients, except the celery ribs, in a jar that has a lid.
  • Cover and shake well.
  • Pour into glasses and add celery sticks as stirrers.
