The Best Ever Homemade Guacamole is all about the fresh ingredients. Homemade tortilla chips are so easy and you will never want to buy the bagged tortilla chips again.

2 Large or 3 Medium Ripe Avocados
1/4 White or Red Onion (finely diced (approx 2 Tablespoons))
2 Tablespoons Fresh Cilantro (diced)
1/2 Jalapeno (seeded and finely diced)
2 Tablespoons Fresh Lime Juice
1 Roma Tomato (diced)
1-2 teaspoons Salt (to taste)
1/2 teaspoons Cumin Powder
1/2 teaspoon Cayenne Pepper
1/4 cup Pomegranate Arils
1/4 cup Cotija Cheese
2 Tablespoons Pepitas
2 cups Oil
12 Corn Tortillas (cut into triangles)
Salt

Steps:

  • In medium bowl or molcajete, roughly mash avocados. Add onion, cilantro, jalapeno, lime juice, tomato and salt and stir together. Taste to ensure it is salted enough.
  • Add optional add-ins - cumin, cayenne, pomegranate, cotija, and pepitas.
  • To make homemade tortilla chips:
  • In skillet, heat oil over medium high heat for about 5 minutes. It should start to smoke slightly. Add corn tortilla triangles, making sure not to crowd them. Watch carefully to see if the oil is too hot. If the chips are browning too quickly, remove from heat and turn it down. The proper oil temperature will cook them on each side for approximately 1 minute.
  • Once they are a nice light golden brown color, remove from heat and place on paper towel lined plate.
  • Salt the chips as soon as you remove them from the oil so the salt soaks into the chip. Eat while the chips are hot and fresh.

4 firm, ripe avocados, halved, pitted, and peeled
1/2 medium white onion, minced (about 4 tablespoons)
3 tablespoons chopped fresh cilantro leaves
1 medium lime, freshly squeezed (about 2 tablespoons)
Kosher salt and freshly ground black pepper
12 fresh corn tortillas
1/2 cup vegetable oil
Kosher salt

Steps:

  • To make the guacamole:
  • In a medium bowl, coarsely mash the avocado. Lightly mix in the onion, cilantro and the lime juice. Season the guacamole liberally with salt and pepper.
  • To make the chips:
  • Preheat oven to 400 degrees F.
  • Brush each tortilla lightly with oil. Slice the tortillas into 8ths. Using 2 baking sheets, distribute half the chips onto each sheet, making sure they are evenly spread out and not overlapping. (If the chips overlap they will not crisp in the oven.) Bake on the top rack until golden and crispy, about 10 to 12 minutes. Remove from the oven to a serving bowl. Season with salt and serve immediately.

2 cups butter
2 cups sugar
2 cups brown sugar
4 eggs
2 tablespoons vanilla
4 cups flour
1/2 teaspoon salt
2 teaspoons baking powder
2 teaspoons baking soda
2 cups oats
2 cups bran flakes
1 cup flaked coconut
1 cup chopped pecans
1 cup raisins
1 (12 ounce) bag chocolate chips
1 (6 ounce) bag peanut butter chips

Steps:

  • beat butter and sugars together until blended.
  • Add eggs and vanilla and beat until smooth.
  • In separate bowl, combine flour, salt, baking powder, and baking soda; gradually add to sugar mixture and stir well.
  • Sir in remaining ingredients.
  • Drop cookies with a 1/4 cup measuring cup onto a lightly greased cookie sheet, 6 to a sheet.
  • Bake at 350 for 12-15 minutes.
  • Cool on wire rack.
