100 g Takoyaki flour ((or flour + cake flour))
1 tsp Dashi powder
2 eggs
¼ tsp baking powder
400 ml warm water
2 tbsp sesame oil ((use to oil the pan))
¼ cup cooked Octopus ((diced))
2 tbsp Tempura bits ((Tenkasu))
2 tbsp scallions
2 tbsp red pickled ginger ((benishouga))
Takoyaki sauce
Bonito flakes
Mayonnaise

Steps:

  • Pour 100 ml of water and add the dashi powder. Stir until completely dissolved. Set aside.
  • Weigh your Takoyaki flour (or AP flour), add the baking soda. Then, sift the dry ingredients using a fine mesh strainer.
  • After sifting, pour dry ingredients into the wet ingredients. Add the eggs and whisk the mixture to incorporate well until no lumps. Set aside.
  • Transfer the Takoyaki batter into a squeeze bottle (if available) or in a small measuring cup to avoid accidental spillages or reduce drippings.
  • Dice the octopus, cut the scallions and other toppings you want to add. Set aside.
  • Pre-heat the Takoyaki pan and brush some oil or dip a paper towel slightly in the oil and rub it on the pan.
  • Whisk the batter up one more time, and then pour it into the pan cavities and fill it up for about 90% as the batter will expand while cooking.
  • Let the batter cook for one minute and you may drop in your fillings like some diced octopus, scallions, and tempura bits. Doing this will ensure the fillings won't sink in the bottom.
  • Cook until the edges are a bit on the solid side about 2 to 3 minutes. Using a toothpick or a pick, check if the first Takoyaki can be easily turned or be released. If yes, turn the octopus ball at 45° way around.
  • Once you flipped the ball, there would be an opening in the Takoyaki cavity then, you can pour extra batter to fill that space.
  • Now, you can pour more batter into the entire pan and continue to cook. Use the pick to keep turning the Takoyaki around the edges and fold any excess batter into the balls.
  • Pay attention to your octopus balls, continue to flip the Takoyaki until it formed into a nice ball, and turn into a golden brown. Let the batter cook all the way without burning.
  • Serve them on a plate and drizzle with the Takoyaki sauce and Japanese mayonnaise then sprinkle with aonori (or seaweed flakes) and bonito flakes to serve.

How to make delicious, light and flavourful authentic Japanese Takoyaki octopus balls. (Makes approx 30 takoyaki, serves 2-3 people)

1 1/2 tbsp Worcestershire sauce
1/2 tbsp tsuyu sauce
1/2 tbsp ketchup
1 tbsp honey
500ml dashi
1 egg
100g cake flour
1 tsp tsuyu sauce
Sesame oil (for cooking)
120g boiled octopus (see post/note for alternatives)
4 tbsp benishoga (pickled ginger)
1/2 cup chopped spring onion
1/2 cup tenkasu (tempura crumbs)
Japanese mayonnaise
Aonori (Dried seaweed powder)
Katsuobushi (Dried bonito flakes)
Chopped spring onion

Steps:

  • First, make the sauce by pouring 1 1/2 tbsp Worcestershire sauce, 1/2 tbsp tsuyu sauce, 1/2 tbsp ketchup and 1 tbsp of honey in a small bowl and mix well. Set aside for later.
  • Next, take a mixing bowl, pour in 500ml of dashi and crack in one egg. Whisk well.
  • Once it's whisked together, add 1 tsp of tsuyu sauce.
  • Add 100g of cake flour (no need to sift) and whisk well until smooth.
  • Cut octopus into small pieces (approx 1 inch / 2.5cm) and finely chop the benishoga.
  • Heat up the takoyaki pan and generously coat the mold with sesame oil. (I recommend using a brush. If you don't have one, spread the oil using kitchen paper.)
  • Once the takoyaki pan is smoking, pour the batter into the mold, filling it half way.
  • Add the octopus pieces to each slot and then pour more of the batter over the top, making sure the surface is completely covered. (Even the surface around the slots.)
  • Sprinkle the chopped spring onion, tenkasu and benishoga generously over the top of the wet batter and allow to cook for 1-2 minutes.
  • Using wooden chopsticks or a long bamboo skewer, draw lines between the slots to evenly divide the batter on the surface around each takoyaki.
  • Roll the takoyaki once by scraping the bamboo skewer around the edge of the slot and in a circular motion with your wrist. It's okay if the shape is still messy at this point.
  • Leave to cook for a few minutes.
  • Roll the takoyaki again, tucking any messy parts into the bottom to shape it nicely. After the second roll it should already be more or less round.
  • Once your takoyaki is round enough, brush with another layer of sesame oil and keep rolling the takoyaki one by one.
  • Swap the placement of any white takoyaki with the more golden ones to ensure even cooking.
  • Once the outside looks golden and crisp, remove the takoyaki from the pan. (The middle is still usually a bit runny, this is normal and you don't need to cook it until it's firm all the way through.)
  • Place on a plate and brush the takoyaki with sauce, drizzle with mayonnaise and sprinkle with aonori, katsuobushi and chopped spring onion.
  • Repeat until the ingredients are finished.
  • Enjoy!

1/2 cup all-purpose flour
2 tbsp all-purpose flour

1 1/6 cup dashi stock
2 tsp dark soy suace
1 cup Octopus (cooked & chopped)
1/4 cup pickled ginger
1 tbsp seafood powder
2 scallions (chopped)
4 tbsp takoyaki sauce
4 tbsp Japenese mayonnaise
4 tsp Bonito flakes

Steps:

  • In a large bowl, whisk flour and salt together.
  • Whisk in the eggs, stock, and dark soy sauce until the batter is smooth.
  • Heat the takoyaki pan until very hot and brush each space well with vegetable oil.
  • Pour batter into each hole of the pan filling it completely.
  • Add fillings inside each hole of batter, don't worry if it overflows.
  • Cook for 2 to 3 minutes, until set, then carefully, use a chopstick to flip each ball 90-degrees. Pour more batter and around each ball until just filled.
  • Rotate the balls every minute, while cooking, adding scraped batter to form a smooth ball.
  • Cook the balls until the batter is cooked through and golden brown, for a total of 5 to 7 minutes.
  • Serve with takoyaki sauce, mayonnaise, scallions, and bonito flakes.

Steps:

  • Warm up iron plate and oil the surface.
  • Put the batter into half of hole.

  • When batter browns turn over to form balls. Continue to heat while turning it over and over until balls become evenly browned and well cooked inside.
  • Serve on plate, top with sauce, powdered dried bonito and aonori to taste desired.
