Homemade Turkey Breakfast Sausage image

Homemade turkey sausage flavored with sage, marjoram, and a bit of red pepper with no preservatives. Freeze individually to store and cook throughout the week.

2 teaspoons dried sage
2 teaspoons salt
1 teaspoon ground black pepper
½ teaspoon red pepper flakes
¼ teaspoon dried marjoram
2 pounds ground turkey

Steps:

  • Mix sage, salt, black pepper, red pepper flakes, and marjoram together in a small bowl. Place turkey in a large bowl and mix the spice mixture into the turkey using your hands; form into patties.
  • Cook patties in a large skillet over medium-high heat until no longer pink in the center and the juices run clear, about 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Ground Turkey Sausage (perfect for making breakfast patties or using in your favorite recipes!) image

Yield 8-10 sausage patties

Number Of Ingredients 9

1.25 lbs ground turkey meat
1 clove garlic, minced
1 tsp ground sage
1/2 tsp celery salt
1/2 tsp onion powder
1/4 tsp cayenne pepper
1/4 tsp ground cumin
3/4 tsp sea salt
1/2 tsp fresh-ground black pepper

Steps:

  • Place all ingredients into a large mixing bowl. Using your hands, knead well until thoroughly combined.
  • Preheat 12-inch skillet over medium heat. Form turkey mixture into 8-10 balls and press them into patties. Place the patties on a plate until your finished forming them. (If the mixture is sticky, moisten hands with a little water to make it easier to form the patties.)
  • Add a little butter or oil to the skillet. Cook the patties about 3 minutes on one side, then flip and cook an additional 2 minutes. (Note: You may need to adjust cooking time depending on size and thickness of your patties.)
  • Alternately, you can freeze the uncooked seasoned meat for use in recipes calling for ground sausage. See the post above for details. Enjoy!

1 poblano chile, roasted, stemmed, seeded
1/2 cup fresh cilantro, tightly packed
1/2 cup fresh Italian parsley, tightly packed
1/2 cup romaine lettuce, tightly packed
1 bay leaf
1 1/2 tablespoons crushed fresh oregano (or 2 tsp. dried)
1/2 teaspoon salt
1/8 teaspoon fresh ground pepper
1/8 teaspoon ground cumin
1/8 teaspoon ground cloves
1/8 teaspoon fennel seed
1 lb lean ground turkey

Steps:

  • Place all ingredients, except turkey, in a food processor.
  • Process until smooth.
  • Scrape the mix into a medium size bowl.
  • Add the turkey and combine well with your hands until everything is evenly distributed.
  • Cover and refrigerate for at least 4 hours to blend flavors.
  • Heat a nonstick skillet over moderate heat.
  • Form the sausage into 3" patties.
  • Fry the patties for 3-6 minutes, turning once, until lightly browned.
  • Serve immediately. Enjoy!

1 pound lean ground turkey
2 teaspoons garlic powder
1-1/2 teaspoons fennel seed, crushed
1-1/2 teaspoons sugar
1 teaspoon salt

Steps:

  • In a bowl, combine the turkey, garlic powder, fennel seed, sugar, salt, oregano and pepper. Cover and refrigerate for at least 8 hours or overnight. Shape into eight patties.
