Steps:
- In a large bowl mix mashed potatoes, flour, breadcrumbs, cornstarch and egg. Mash with a fork until a dough forms. Season with salt and pepper. Roll dough out between two pieces of waxed paper to ¼ inch thick. Carefully peel off the top piece of waxed paper. Cut out 1½-inch circles, using the rim of a glass. Using the end of a drinking straw, cut out two circles for the eyes; use a spoon to cut out a mouth. Pour canola oil into a large pot to a depth of 2 inches. Heat until it reaches 350°F on a deep-fry thermometer. (Or add a pinch of dough to the oil; when it sizzles, the oil is ready.) Working in batches, cook fries in oil until golden brown and crispy, 2 to 4 minutes, flipping halfway through. Transfer to a paper towel-lined plate; sprinkle with salt. Serve with ketchup.

Steps:
- Preheat oven to 425 F. Bake sweet potatoes on a baking sheet for one hour or until easily pierced through with a fork and skin is easily removed. Leave oven at the same temperature to use later. Let roasted sweet potatoes stand for a few minutes until easy to handle and no longer steaming. When cooled sufficiently, peel off skin and drain excess liquid or pat dry as much as possible.
- Put soft, roasted, peeled potatoes in a large bowl and mash with a potato masher or fork. Add all the rest of the ingredients for the dough and mix together until a dough forms. Transfer to refrigerator and let cool for at least 1 hour.
- In the meantime, mix together ingredients for "parmesan" bread crumb coating and place aside in a bowl.
- If dough is still too sticky or difficult to work with, add more arrowroot powder 1 tbsp at a time. Take rounded heaping tablespoons of dough, roll into a ball, and flatten into a thick disc. Press both sides into bread crumb mixture and transfer onto a baking sheet lined with parchment paper. If desired, spray oil onto parchment paper. Use a straw to punch two "eyes" into the discs and the tip of a spoon to make a rounded smile. If desired, spray on top with oil as well.Bake smiles at 425 for 30-40 minutes, until slightly browned. Let cool and serve with your favorite dipping sauces.

HOW TO MAKE HOMEMADE FRENCH FRIES—RECIPE WITH …
From thespruceeats.com
- Cut the Potatoes. Wash the potatoes, scrubbing them well, and dry completely. Peeling is optional and comes down to personal preference. Peeled or unpeeled, the cut is absolutely key when making fries.
- Soak the Potatoes. Put the cut potatoes in a large bowl and cover with cool water. Soak for at least 20 minutes or up to an hour. This step gets rid of excess starch, resulting in fluffier and crispier fries.
- Drain and Dry the Potatoes. Drain the potato sticks and pat them dry with paper towels or a clean kitchen towel. Arrange them in a single layer to air-dry for a bit.
- Fry the Potatoes. Bring at least 2 inches of oil in a large heavy pot to 325 F. Once the oil is hot, fry the potatoes for about 5 minutes. Work in batches if you're making more than one or two potatoes' worth.
- Drain and Cool the Half-Done Fries. Lift the fries out of the oil using a slotted spoon or spider. Drain them on a cooling rack set over a baking sheet or on layers of clean paper towels.
- Fry the Potatoes Again. Bring the oil up to the 350 F to 375 F range. Use a thermometer or test the oil by dropping a fry in it—the oil should immediately sizzle around the fry actively but not violently.
- Drain the Fries. Once done, remove the fries from the oil. Drain them on a cooling rack set over a pan or on layers of paper towels. If you're salting your fries, season them while they are draining and still hot.
- Serve Your Homemade French Fries. To serve, pile the homemade French fries onto a platter or into a bowl. If you've made a particularly large batch for a crowd, consider serving them on a layer of brown butcher paper in the middle of the table—it's heaps of fun.
