Homemade Shake and Bake image

Shake and Bake is easy to make at home. It just takes some seasonings and breadcrumbs, plus a little trick where you add oil to the crumbs.

Number Of Ingredients 9

1 cup unseasoned, plain breadcrumbs
2 tsp. onion powder
2 tsp. dried parsley
2 tsp. dried basil
1 tsp. salt
1 tsp. paprika
1 tsp. garlic powder
2 Tbsp. cooking oil
2 - 2 and ½ lbs. of skinless chicken pieces or pork chops*

Steps:

  • In a ziptop bag, mix together the breadcrumbs, onion powder, dried parsley, dried basil, salt, paprika, and garlic powder. Store in sealed bag until ready to use, or up to 6 months.
  • When ready to use, preheat oven to 450°F. Line a baking sheet with foil.
  • Add the oil to the bag and squeeze it around until all the crumbs are coated.
  • Moisten two pieces of poultry/meat with water, shaking off any excess. Put the pieces into the bag. Seal the bag and shake. Remove the pieces and put them onto the prepared pan. Repeat with remaining pieces.
  • Bake until cooked to a safe temperature, 165°F for chicken and 140-165°F for pork, as read on an instant read thermometer pierced into the thickest part without not touching any bone. That will be approximately 45 minutes for bone-in chicken and for thick bone-in pork chops, or 25 minutes for boneless chicken pieces or for most boneless pork chops and for thinner bone-in pork chops.

1 1/2 teaspoons Salt
1 1/2 teaspoons Pepper

1 1 /2 teaspoons Parsley
2 tablespoons Canola Oil

Steps:

  • Put all the ingredients in a bag, close it and mix well.
  • Add the pork or chicken one piece at a time and shake.
  • Place the meat on a cooking sheet covered with foil and sprayed with non-stick spray.
  • Bake the pork chops in a 400-degree oven for 20 - 25 minutes, or until done depending on the thickness of the chops. The temperature should reach 145 degrees.
  • Bake the chicken in a 400-degree oven for about 20 minutes for boneless, about 45 minutes for bone-in or until done. The temperature should reach 165 degrees.

1/4 cup Vegetable Oil

1/2 teaspoon ground black pepper
1 teaspoon paprika
1/2 teaspoon celery salt

1 1/2 pounds pork chops
1/4 cup vegetable oil

Steps:

  • Preheat oven to 425 degrees.
  • In a gallon-sized zip top bag, place breadcrumbs, salt, black pepper, paprika, celery salt, onion powder, and garlic powder. Seal the bag and shake gently to mix all ingredients.
  • Place vegetable oil on a baking sheet. Spread out in a thin layer.
  • Place one pork chop at a time into the bag, seal the bag, and shake. Place the coated pork chop onto the oiled baking sheet. Repeat with remaining pork chops.
  • If desired, if there is mix still left over, you can gently sprinkle it onto the breaded pork chops, and pat the seasoned mix into the pork chop. Discard seasoning mix after use.
  • Bake for 15 minutes, then flip over the pork chop. and cook for the remaining 10 minutes.

Steps:

  • Combine ingredients and store in a sealable container or zipper topped plastic bag. This will keep up to 4 months in the pantry, depending on the humidity (you may just want to keep it in the freezer). This recipe will also double or triple well.
  • To Use: Preheat oven to 375°. Place one cup of mix in a plastic bag. In a bowl, mix an egg and 1/2 C skim milk.
  • Dip chicken pieces one at a time in the milk mixture, then shake one at a time in the plastic bag.
  • Place on a baking pan and bake for appropriate time (depending on the chicken you're using -as a little as 20 minutes or up to an hour for bigger, bone-in pieces).

2 Tbsp olive oil
1 1/2 cups breadcrumbs ((or Panko))
2 Tbsp cornmeal ((optional))
2 tsp salt ((table salt))
2 tsp paprika ((smoked paprika is best))
1/2 tsp celery salt
3/4 tsp garlic powder
1/2 tsp ground black pepper
1/2 tsp onion powder
1/2 tsp chili powder
1 pinch oregano ((optional))
1 pinch parsley ((optional))

Steps:

  • Preheat oven to 400°F (205°C) and line a baking sheet with parchment paper.
  • Rinse you chicken thighs, then pat dry with paper towels.
  • Brush olive oil on both sides (all surfaces) of all the chicken.
  • In a large Ziploc plastic bag add the bread crumbs, optional cornmeal, salt, paprika, celery salt, garlic powder, ground black pepper, onion powder, chili powder, plus optional oregano and parsley if desired. Close the bag and mix the ingredients together by shaking the bag gently until well combined.
  • Reopen the bag of breadcrumbs and seasoning, then place 1 chicken thigh in the bag at a time. Seal the bag leaving a bit of air in the bag.
  • Next, shake gently to coat the mixture over the entire chicken thigh until coated on all sides. Place the coated chicken onto your prepared baking sheet, leaving space between the chicken thighs. Repeat for each thigh, then discard any remaining breadcrumb mixture.
  • Bake in your preheated oven at 400°F (205°C) for approximately 40-45 minutes, until cooked through and the internal temperature is 165°F (74°C). Remove from the oven when done and serve immediately.
