Here's an easy homemade seitan recipe for this high-protein plant-based meat alternative.

2 tablespoons soy sauce, tamari, or Bragg Liquid Aminos
1 cup water
2 1/4 cups vital wheat gluten; I like Bob's Red Mill®
1 teaspoon baking powder
2 tablespoons nutritional yeast, optional
1 to 2 tablespoons seasoning or spice blend (good options: BBQ seasoning, jerk seasoning, vegan poultry seasoning or rub spices), optional
Water
1 large or 2 regular-sized vegetable bouillon cubes
2 tablespoons soy sauce, tamari, or Bragg Liquid Aminos
3 to 4 slices fresh ginger or a good squeeze of bottled ginger

Steps:

  • Combine the soy sauce with 1 cup of water in a small mixing bowl and stir together.
  • Combine the gluten flour, baking powder, and optional nutritional yeast and/or seasoning blend in a medium mixing bowl.
  • Gradually add the liquid to form a stiff dough, stirring with a spoon at first, and then working together with your hands. Drizzle in a little more water if need be; you want all the dry ingredients to be moistened, while making sure the dough remains stiff.
  • Turn out onto a floured board (you can use additional gluten flour for this) and knead for 2 to 3 minutes. It's not going to be completely smooth, but really work it!
  • Return the dough to one of the bowls you used, then cover with a clean tea towel. Let it rest for 15 minutes.
  • Meanwhile, fill a soup pot about 2/3 full with water. Add the bouillon cubes and ginger. Start heating.
  • Once the dough has rested, divide it into two more or less equal pieces and pull into long, narrow loaves the shape of miniature French breads. This dough isn't easy to work with; it tends to spring back to whatever shape it's in, but do the best you can - it will come out fine.
  • With a sharp, serrated knife, cut each section of dough crosswise into slices no thicker than 1/2 inch.
  • When the water comes to a slow boil, gently drop in each slice of dough. Within a couple of minutes, the dough is going to puff up and look like it's threatening to escape the cooking pot! It will settle back; keep pushing the pieces down into the water. I like to reach in with kitchen sheers and cut pieces that have expanded crazily, but this is optional.
  • Simmer gently and steadily for 30 minutes. Scoop out pieces of seitan to use in recipes (usually about a third to a half of the amount made with this recipe is what you'll need for an average recipe). Set on a plate or cutting board until cool enough to handle, then cut into smaller slices or chunks.

3/4 cup vital wheat gluten
1/4 cup all-purpose flour
1 teaspoon vegetable broth powder
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon salt

3 tablespoons Thai sweet chili sauce
3 tablespoons hoisin sauce
2 tablespoons soy sauce
2 tablespoons water
1 tablespoon rice vinegar
1/2 teaspoon sesame oil
2 tablespoons light oil for frying ((such as canola or vegetable))
1 tablespoon sesame seeds (for garnish)
1 small handful chopped green onions or chopped chives (for garnish)

Steps:

  • Add about an inch of water to a pot with a steamer basket and bring to a light boil.
  • In the meantime, whisk together the vital wheat gluten, flour, vegetable broth powder, onion powder, garlic powder, and salt in a medium bowl. Pour in the water and mix to form a ball of dough. Lightly grease the steamer basket, then tear off bite-sized pieces of the seitan dough and place them in a single layer in the steamer basket. Cover, and steam the seitan for 10 minutes.
  • In the meantime, in a small bowl or a measuring glass, mix together the Thai sweet chili sauce, hoisin, soy sauce, water, rice vinegar, and sesame oil. Set aside. (See notes for other sauce options).
  • When the seitan is done steaming, heat 2 tablespoons of oil in a large skillet or non-stick pan. Use tongs to remove the seitan bites from the steamer basket, and place them into the hot oil in the pan. Be careful as it may splatter. Cook the seitan bites a few minutes per side until they are golden brown and crispy. Remove from the heat and add the sauce and toss to coat. Garnish with green onions and sesame seeds if desired and serve hot.

2 tsp. garlic powder
5 cups low-sodium vegetable broth, divided
2 Tbs. low-sodium soy sauce
1/2 small onion, diced
1 clove garlic, crushed

Steps:

  • 1. Combine wheat gluten, yeast, and garlic powder in large bowl. Stir in 1 cup broth and soy sauce until dough forms, adding more broth if necessary. Knead dough in bowl with spoon 3 minutes, or until elastic. Shape into 2 loaves. 2. Place loaves in large saucepan, and add remaining 4 cups broth, onion, garlic, and enough water to cover seitan. Cover, and bring to a boil over medium heat. Reduce heat to medium-low, and simmer 30 to 45 minutes, or until seitan is firm. Remove from heat, and cool in broth.

4 cups water
1/4 cup reduced-sodium tamari or shoyu
3-inch piece of kombu (a seaweed)*

Steps:

  • Gluten dough: Combine all dry ingredients and mix thoroughly. Combine all liquids and add to the dry mixture; mix with a fork until the dough reaches a kneadable consistency. Knead a couple of dozen times, then let the dough rest 3-5 minutes. Wet hands (to prevent gluten from sticking) and knead another dozen times, then let the dough rest another 10 minutes. While waiting, prepare broth (below). Wet hands and a knife; cut gluten into 6-8 pieces and pull into thin strips. Simmer in broth for 45-60 minutes. Broth: Combine all ingredients in a large pot with a lid. Bring broth to a boil, add gluten dough pieces, reduce to a simmer and cover. Check occasionally and add more water if needed.

The flavoring for this goes well with pretty much any dish, but depending what you are using it for you can change the flavors up a bit by adding finely-chopped herbs to the mixture, or if you're making something Asian or Indian, some grated ginger wouldn't hurt.

¼ cup nutritional yeast
1 cup ice cold vegetable stock

Steps:

  • Combine the vital wheat gluten flour and nutritional yeast flakes in a bowl; set aside. In a separate bowl, mix the vegetable stock, 1/2 cup of soy sauce, tomato paste, garlic, lemon zest, and seasoning blend.
  • Pour the wet ingredients into the flour mixture and stir with a firm spatula. Knead the dough until a spongy, elastic dough forms, about 3 minutes. Roll the dough into a log shape and cut it into 3 equal pieces.
  • Combine 1/2 cup of soy sauce and cold water in a large pot. The simmering broth should be very cold when you add the dough to help it keep a firm texture and ensure that it doesn't break apart. Place the dough pieces in the cold broth, partially cover the pot, and bring it to a boil over high heat. Reduce the heat to low, partially cover the pot, and simmer for 1 hour, turning the dough pieces occasionally.
  • Remove the pot from the heat and let the gluten cool in the broth for at least 30 minutes. To store the gluten, refrigerate, covered in the broth, in a sealed container for up to 5 days.
  • If your recipe calls for seitan, cut the gluten into pieces. Add vegetable oil to a heavy skillet and turn the heat to medium-high. Add the gluten pieces and cook for 20 minutes, turning the pieces occasionally.

  • You Don’t Need to Knead (as Much). Seitan is a dough. Like any other dough, kneading determines a lot about the final texture. As you knead, more gluten develops.
  • Use a Plastic Wrap to Cover the Dough. After the dough is properly kneaded, don’t rush and put it in the pot right away. Instead, wrap it in plastic wrap and securely tie both its ends (like the video shows below at 55 seconds).
  • Freeze It Before Cooking. Briefly freezing your raw seitan dough before cooking can hinder the gluten development, which again, can result in a meatier texture.
  • Fine-Tune the Simmering. Alright, now the most challenging part. The broth must cook at the perfect temperature, or else your seitan can get alllll messed up.
  • Wait Before Removing It from the Pot. After the seitan finishes simmering for about 1 hour, don’t remove it right away. Let it swim in the broth for something like 15 minutes more.
  • Store It for a Day Before Eating. Many people will tell you that seitan tastes better the next day. And this actually makes sense. Storing gives time for excess water to escape, converting the seitan into more of a dense mass.

  • The Basic Ingredients. Technically, all you need to make seitan is vital wheat gluten and water. But no one wants to sit down to a dish of pasty, flavorless dough.
  • Season Inside and Out. As with any meat you would prepare, seitan needs to be seasoned. One of the advantages of making your own seitan is that you can season it from the inside as well as on the outside.
  • You Need to Knead. Seitan is a dough, and like most dough, it needs to be kneaded. Kneading helps develop the gluten and brings elasticity and stretch into the dough.
  • Simmering Seitan. The most traditional method of making seitan, and probably the one everyone tries first, is simmering. Simmering may be the method of choice for tender, less chewy seitan.
  • Steaming Seitan. Steaming is the method I use most when making seitan for sandwiches, cutlets, and steaks. I also use it for making vegan sausages. Cooking the seitan in this method makes it firm and chewy and I don’t need to make a huge vat of flavored broth.
  • Baking Seitan. My favorite way of making seitan is to bake it. To me, this is the easiest method of all three because there is no broth, no big pot of water and no individual foil packets to worry about.
