Steps:
- Combine the soy sauce with 1 cup of water in a small mixing bowl and stir together.
- Combine the gluten flour, baking powder, and optional nutritional yeast and/or seasoning blend in a medium mixing bowl.
- Gradually add the liquid to form a stiff dough, stirring with a spoon at first, and then working together with your hands. Drizzle in a little more water if need be; you want all the dry ingredients to be moistened, while making sure the dough remains stiff.
- Turn out onto a floured board (you can use additional gluten flour for this) and knead for 2 to 3 minutes. It's not going to be completely smooth, but really work it!
- Return the dough to one of the bowls you used, then cover with a clean tea towel. Let it rest for 15 minutes.
- Meanwhile, fill a soup pot about 2/3 full with water. Add the bouillon cubes and ginger. Start heating.
- Once the dough has rested, divide it into two more or less equal pieces and pull into long, narrow loaves the shape of miniature French breads. This dough isn't easy to work with; it tends to spring back to whatever shape it's in, but do the best you can - it will come out fine.
- With a sharp, serrated knife, cut each section of dough crosswise into slices no thicker than 1/2 inch.
- When the water comes to a slow boil, gently drop in each slice of dough. Within a couple of minutes, the dough is going to puff up and look like it's threatening to escape the cooking pot! It will settle back; keep pushing the pieces down into the water. I like to reach in with kitchen sheers and cut pieces that have expanded crazily, but this is optional.
- Simmer gently and steadily for 30 minutes. Scoop out pieces of seitan to use in recipes (usually about a third to a half of the amount made with this recipe is what you'll need for an average recipe). Set on a plate or cutting board until cool enough to handle, then cut into smaller slices or chunks.

Steps:
- Add about an inch of water to a pot with a steamer basket and bring to a light boil.
- In the meantime, whisk together the vital wheat gluten, flour, vegetable broth powder, onion powder, garlic powder, and salt in a medium bowl. Pour in the water and mix to form a ball of dough. Lightly grease the steamer basket, then tear off bite-sized pieces of the seitan dough and place them in a single layer in the steamer basket. Cover, and steam the seitan for 10 minutes.
- In the meantime, in a small bowl or a measuring glass, mix together the Thai sweet chili sauce, hoisin, soy sauce, water, rice vinegar, and sesame oil. Set aside. (See notes for other sauce options).
- When the seitan is done steaming, heat 2 tablespoons of oil in a large skillet or non-stick pan. Use tongs to remove the seitan bites from the steamer basket, and place them into the hot oil in the pan. Be careful as it may splatter. Cook the seitan bites a few minutes per side until they are golden brown and crispy. Remove from the heat and add the sauce and toss to coat. Garnish with green onions and sesame seeds if desired and serve hot.

Steps:
- Gluten dough: Combine all dry ingredients and mix thoroughly. Combine all liquids and add to the dry mixture; mix with a fork until the dough reaches a kneadable consistency. Knead a couple of dozen times, then let the dough rest 3-5 minutes. Wet hands (to prevent gluten from sticking) and knead another dozen times, then let the dough rest another 10 minutes. While waiting, prepare broth (below). Wet hands and a knife; cut gluten into 6-8 pieces and pull into thin strips. Simmer in broth for 45-60 minutes. Broth: Combine all ingredients in a large pot with a lid. Bring broth to a boil, add gluten dough pieces, reduce to a simmer and cover. Check occasionally and add more water if needed.
BEST HOMEMADE SEITAN
This seitan is eaten by vegans as a meat substitute. The flavoring for this goes well with pretty much any dish, but depending what you are using it for you can change the flavors up a bit by adding finely-chopped herbs to the mixture, or if you're making something Asian or Indian, some grated ginger wouldn't hurt.

Steps:
- Combine the vital wheat gluten flour and nutritional yeast flakes in a bowl; set aside. In a separate bowl, mix the vegetable stock, 1/2 cup of soy sauce, tomato paste, garlic, lemon zest, and seasoning blend.
- Pour the wet ingredients into the flour mixture and stir with a firm spatula. Knead the dough until a spongy, elastic dough forms, about 3 minutes. Roll the dough into a log shape and cut it into 3 equal pieces.
- Combine 1/2 cup of soy sauce and cold water in a large pot. The simmering broth should be very cold when you add the dough to help it keep a firm texture and ensure that it doesn't break apart. Place the dough pieces in the cold broth, partially cover the pot, and bring it to a boil over high heat. Reduce the heat to low, partially cover the pot, and simmer for 1 hour, turning the dough pieces occasionally.
- Remove the pot from the heat and let the gluten cool in the broth for at least 30 minutes. To store the gluten, refrigerate, covered in the broth, in a sealed container for up to 5 days.
- If your recipe calls for seitan, cut the gluten into pieces. Add vegetable oil to a heavy skillet and turn the heat to medium-high. Add the gluten pieces and cook for 20 minutes, turning the pieces occasionally.

SEITAN CHICKEN
It might look like a lot of steps, but this seitan chicken recipe is not hard to put together. Cooking the patties in foil makes for easy cleanup. If you are looking to save even more time, you can skip the dredging step and just fry the patties in oil. It may take a little bit longer to achieve a nice crust on the outside, but the result will still be crispy and golden brown. -Peggy Woodward, Taste of Home Senior Food Editor

Whisk 1 cup broth and miso in a medium bowl (or large measuring cup); add to the dry mixture. Mix on medium-low until elastic, about 3 minutes (or knead by hand in the bowl until elastic, 3 to 5 minutes), adding more broth if the dough is too dry. Shape into two 3-by-5-inch loaves.
- Transfer the loaves to a large saucepan. Add the remaining broth, ginger and enough water to cover the loaves; bring to a boil over medium-high heat. Reduce heat to medium-low, cover and cook until firm, about 30 minutes. Remove from heat, uncover and let stand for 15 minutes. Transfer to a colander to cool.

- Heat the olive oil in a skillet over medium heat. Add the onion and salt, and cook for 5-7 minutes, stirring frequently, until onion is softened slightly.
- Reduce the heat to medium-low and add the garlic and stir. Cook for 2-3 minutes, until the garlic is softened and fragrant. Add the sweet paprika and other spices to the pan, stir, and cook for 60 seconds or until fragrant. Remove from the heat.
- Use a spatula to transfer the onion-garlic mixture, including oil, to a blender or food processor. Add the tomato paste, vegetable broth, soy sauce if using, chickpea flour, and nutritional yeast. Blend until smooth. (Raw chickpea flour tastes terrible so I don't recommend sampling this).
- Transfer the mixture to a mixing bowl and add the vital wheat gluten, then stir until evenly combined. Once stirred, use your hands to knead the mixture until it becomes more firm and a little bit springy, about 2 minutes. Do note that this will feel wetter and moister than many other seitan recipes, due to the fact that we are steaming it rather than boiling it. The dough will be quite loose and moist, so this won't feel similar to kneading bread.

- In a large bowl, whisk together the vital wheat gluten, flour, chicken seasoning, and paprika. Stir in the water until a dough forms. Knead for 1 minute, form into a ball and then leave in the bowl. Cover and let sit for 20 minutes.
- Knead for another minute and then divide the dough in half. Working with one piece at a time, twist the dough into a tight twist and then tie it into a knot. This gives the seitan texture similar to chicken and makes it more shreddable (if that’s what you’re going for). You can also skip the twisting and just put it directly into the pan as it is.
- In a large skillet, heat the oil over medium heat. Once hot, Add in the dough knots and sear on each side for 3-4 minutes or until a nice crust forms.
- Add in the broth so that the seitan is about 1/2-2/3 covered. Bring to a boil, lower to a gentle simmer, cover and cook for 1 hour. No need to stir but I like to check mine to make sure it’s not boiling at all (just maintaining a very gentle simmer).

- In a large bowl, stir together the vital wheat gluten, chickpea flour, onion powder, garlic powder, and salt.
- Add the water or vegetable broth and stir into a dough. Turn out onto a work surface and knead for 5-10 minutes. The more you knead, the more meat-y your seitan will be. If you’re looking for seitan that can shred, knead longer. If you want more tender seitan, knead for less time. Cover and let the seitan rest for 5 minutes.
- While the seitan is resting, bring the vegetable broth, onion, carrot, celery, and soy sauce up to a boil in a very large pot then turn the heat down to the lowest it will go, so that it’s barely simmering.
- Cut the dough into at least 4 large pieces and shape. You can also cut or pull the dough into small strips or chunks.Optional: Shape and wrap the seitan in foil before simmering. This will give you a more dense, meaty texture because the seitan won’t have as much room to expand.

- You Don’t Need to Knead (as Much). Seitan is a dough. Like any other dough, kneading determines a lot about the final texture. As you knead, more gluten develops.
- Use a Plastic Wrap to Cover the Dough. After the dough is properly kneaded, don’t rush and put it in the pot right away. Instead, wrap it in plastic wrap and securely tie both its ends (like the video shows below at 55 seconds).
- Freeze It Before Cooking. Briefly freezing your raw seitan dough before cooking can hinder the gluten development, which again, can result in a meatier texture.
- Fine-Tune the Simmering. Alright, now the most challenging part. The broth must cook at the perfect temperature, or else your seitan can get alllll messed up.
- Wait Before Removing It from the Pot. After the seitan finishes simmering for about 1 hour, don’t remove it right away. Let it swim in the broth for something like 15 minutes more.
- Store It for a Day Before Eating. Many people will tell you that seitan tastes better the next day. And this actually makes sense. Storing gives time for excess water to escape, converting the seitan into more of a dense mass.

HOW TO MAKE PERFECT SEITAN - ONE GREEN PLANET

Author Rhea ParsonsPublished 2020-10-23Estimated Reading Time 4 mins
- The Basic Ingredients. Technically, all you need to make seitan is vital wheat gluten and water. But no one wants to sit down to a dish of pasty, flavorless dough.
- Season Inside and Out. As with any meat you would prepare, seitan needs to be seasoned. One of the advantages of making your own seitan is that you can season it from the inside as well as on the outside.
- You Need to Knead. Seitan is a dough, and like most dough, it needs to be kneaded. Kneading helps develop the gluten and brings elasticity and stretch into the dough.
- Simmering Seitan. The most traditional method of making seitan, and probably the one everyone tries first, is simmering. Simmering may be the method of choice for tender, less chewy seitan.
- Steaming Seitan. Steaming is the method I use most when making seitan for sandwiches, cutlets, and steaks. I also use it for making vegan sausages. Cooking the seitan in this method makes it firm and chewy and I don’t need to make a huge vat of flavored broth.
- Baking Seitan. My favorite way of making seitan is to bake it. To me, this is the easiest method of all three because there is no broth, no big pot of water and no individual foil packets to worry about.
HOMEMADE SEITAN RECIPE - THE SPRUCE EATS
From thespruceeats.com
- Ingredients for Homemade Seitan. 1 cup vital wheat gluten. 1/2 cup chickpea flour. 1/2 cup nutritional yeast. 1 teaspoon ground ginger. 1 teaspoon garlic powder.
- Create the Dough. To make your homemade seitan, combine the vital wheat gluten flour, chickpea flour, nutritional yeast, ground ginger, and garlic powder in a medium-sized bowl.
- Knead Dough. Once the mixture is well-combined, knead your seitan 10 to 15 times, allow it to sit for 5 minutes, and then knead a few more times. Don't skip this step, as kneading develops the gluten, a protein found in wheat, to give the final product the consistency that you want.
- Form Seitan Into Smaller Pieces. Separate your ball of gluten into three or four smaller chunks. Gently stretch each piece into a flat cutlet, around 3/4-inch thick.
- Simmer in Broth. Add the seitan to 4 to 6 cups of cold vegetable broth — don't boil the liquid first — in a large pot and bring to a slow simmer. Add extra flavor to the seitan by using extra soy sauce or tamari, fresh ginger, or sliced onion.
- Prepare Seitan or Store Until Needed. When the seitan has expanded and firmed, remove it from the broth, allow it to cool, and store until use. Seitan keeps well in the freezer in a sealed container or zip-top bag, so make a double batch and freeze for use later.

- Juicy seitan burger. A really good meatless burger is hard to come by. Store-bought ones taste too processed.
- Vegan Philly cheese sandwich. As the name probably implies, there’s usually nothing vegan about a Philly cheesesteak.
