DIY LIME CORDIAL (ROSE'S LIME JUICE) RECIPE
Rose's Lime Juice / Cordial was created in 1867 and was the world's first fruit concentrate. It was the accessible and necessary sweet fruit preserve of choice by sailors to take their daily dose of vitamin C to fight off scurvy. The Rose's brand isn't readily available in some countries, this DIY Lime Cordial recipe is an excellent substitute and a crucial ingredient in a Gimlet. The Gimlet was featured in Harry Craddock's The Savoy Cocktail Book in 1930.

Steps:
- Strain the lime juice and keep aside.
- Heat a pan over low flame.
- Pour the 175 ml water and add the sugar.
- Stir well until sugar has fully dissolved.
- Add the lime rinds and bring to a boil.
- Continue to boil for 2 to 3 minutes.
- Transfer to a large jug or vessel.
- Add lime juice and stir well.
- Strain into sterilized bottles and keep aside to cool.
- To serve, mix 1 part lime syrup with 4 parts mineral water or as per taste.
HOMEMADE ROSE'S LIME JUICE (LIME CORDIAL)
Rose's Lime Juice is difficult to find and prohibitively expensive where I live. Internet to the rescue! Here's a recipe by Maria J. on Chowhound. I've posted the recipe exactly as written, but I never add the drop of food coloring. For some reason, it always turns my cordial a bright turquoise color... Use this anywhere you would use Rose's Lime Juice. We especially love our Gimlets!

- Measurements are just approximate, read all instructions first to determine what you might need.
- Wash the limes VERY thoroughly, then remove zest from ten of them using a vegetable peeler. Avoid the white, bitter pith. Set aside.
- Squeeze enough limes to make 16 oz. (2 cups) juice. Place in a saucepan.
- Bring the lime juice to a boil, reduce heat to medium and reduce the juice by half. Have a heatproof measuring cup on hand. When it looks close to half its former volume, pour into the cup and check. Return to the boil if necessary. Reducing it too much is better than not enough.
- Once it's reduced by half, measure the lime juice reduction again and add an equal amount of cane sugar, by volume (ie: using the same cup to measure). That is, if it's 8 FL oz of juice, add 8 FL oz sugar. Stir to dissolve.
- Stir in the zest and allow to steep for 15 minutes, then strain.
- OPTIONAL: Add a very small drop of BLUE food coloring and mix well! It is supposed to turn a pale green, but I've never been successful at this. Mine always turns a bright turquoise blue. YUCK! The food color is purely for aesthetic purposes but does not affect the taste. The "real" Rose's Lime Juice uses the food coloring.
- Pour into a sealable glass bottle and store in the refrigerator. Will keep indefinitely.
- Note: you can make a grapefruit cordial the same way. Looks wonderful (red grapefruit), but the color vanishes in a cocktail. It tastes great by itself, or try a Paloma (tequila, grapefruit cordial, fresh lime and soda). Bottoms up....

HOW TO MAKE A VODKA GIMLET FROM SCRATCH
Replacing store-bought lime cordial or juice with our homemade version makes our gimlet fresh, zesty and bright. They are a little sweet, but not overly so. If you prefer them less sweet, add an extra squeeze of lime juice to each drink or bump up the vodka by a 1/2 ounce to 1 full ounce to balance out the syrup. The recipe below makes enough lime cordial for 4 cocktails (about 1 1/4 cups).

- Combine 1 teaspoon of lime zest, sugar and water in a small saucepan over medium-low heat. While whisking constantly, bring to a low simmer and cook until the sugar has completely dissolved into the water, about 5 minutes. Set pan aside to cool completely. Strain lime syrup then mix with the fresh lime juice.
- For each gimlet, add 2 ounces of vodka and 2 1/2 ounces of homemade lime cordial to a cocktail shaker filled with ice. Shake well then strain into a glass. Garnish with a lime slice.

- Gather the ingredients.
- In a small bowl, stir the citric acid (and tartaric acid, if using) into the sugar.
- In a medium saucepan, bring the water to a boil and add the sugar.
- Stir constantly until the sugar is fully dissolved.
- Remove the pan from the heat, add the lime juice and peel, and stir well. Place it back on the stove, reduce the temperature, and allow to simmer for 2 minutes.
- Remove from heat, cover, and let rest until the cordial cools completely (about 1 hour).
- Pour the mix into a well-sealed container and refrigerate overnight.
- Strain out the lime rinds using a fine-mesh strainer.
- Pour the cordial into a clean bottle with a tight-fitting lid and refrigerate for another day before using it. Use it in your favorite drinks and enjoy!
