2 pounds in-shell raw peanuts*
2 tablespoons peanut oil
1 to 2 tablespoons kosher salt

Steps:

  • *Cooks note: If eating peanuts roasted right out of the shell, use Virginia or Valencia peanuts. If utilizing roasted peanuts to make peanut butter, use Spanish peanuts as they have a higher oil content.
  • Preheat the oven to 350 degrees F.
  • Rinse the peanuts under cool water to remove excess dirt. Pat dry and place in a large bowl and toss with the peanut oil and salt until well coated.
  • Place on 2 half sheet pans, making sure to spread them out into a single layer. Roast in the oven for 30 to 35 minutes, rotating the pans halfway through cooking. Once you remove the peanuts from the oven, let them cool slightly before eating. They will continue to "cook" and become crunchy as they cool.
  • If using peanuts to make peanut butter, remove shells and discard. Remove the skin by rubbing the peanuts together in your hands held over a salad spinner, allowing the peanuts and skins to fall into the bowl. Once the skin has been loosened from all of the peanuts close the salad spinner and spin until all of the skin has been separated from the peanuts.

This recipe makes a wonderful peanut butter that's better than anything in the store. It's all natural, and doesn't separate like some of the so-called natural peanut butters you can buy. I like chunky peanut butter, so I mix the batch until it is very smooth, then mix in peanuts that have been chopped separately.

1 ½ teaspoons peanut oil
½ teaspoon white sugar
⅛ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spread peanuts on a rimmed baking sheet.
  • Bake peanuts, stirring every 2 minutes, until golden brown and fragrant, 6 to 8 minutes.
  • Combine peanuts, peanut oil, sugar, and salt in a food processor fitted with a metal blade; process until peanuts are chopped and the mixture forms a ball, about 2 minutes. Scrape down the food processor bowl; continue processing to desired consistency, 1 to 3 minutes more.

Steps:

  • Process peanuts and salt in a food processor until desired consistency, about 5 minutes, scraping down sides as needed. Add honey; process just until blended. Store in an airtight container in refrigerator.

15 ounces shelled and skinned AB's Roasted Peanuts, recipe follows
1 teaspoon kosher salt
1 1/2 teaspoons honey
1 1/2 tablespoons peanut oil
2 pounds in-shell raw peanuts (see Cook's Note)
2 tablespoons peanut oil
1 to 2 tablespoons kosher salt

Steps:

  • Place the peanuts, salt and honey into the bowl of a food processor. Process for 1 minute. Scrape down the sides of the bowl. Place the lid back on and continue to process while slowly drizzling in the oil and process until the mixture is smooth, 1 1/2 to 2 minutes. Place the peanut butter in an airtight container and store in the refrigerator for up to 2 months.
  • Preheat the oven to 350 degrees F.

1 (16 ounce) jar dry roasted peanuts
3 -4 tablespoons peanut oil or 3 -4 tablespoons mild vegetable oil
2 tablespoons honey

Steps:

  • Using a food processor grind the peanuts until they are finely minced and begin to fold down into the bottom of the processor bowl.
  • Add peanut oil one tablespoon at a time with food processor on. The peanut butter will be quite soft at this point.
  • Then add in the honey and continue to process. The peanut butter will thicken after the honey is added. Transfer to a container and refrigerate. If you find the peanut butter too thick, add a few drops of oil and mix lightly.
