Homemade Hot Pepper Sauce image

Fresh hot peppers and the perfect blend of complimentary ingredients create this spicy, delicious hot pepper sauce that will definitely impress.

1½ pounds (about 25 average-sized) fresno peppers (or any other kind of hot pepper)
5 cloves garlic, whole
2 cups white vinegar
1 tablespoon lime juice
1 teaspoon mineral salt
1 teaspoon smoked paprika
1 bay leaf

Steps:

  • Cut the green tops off all the peppers. Discard tops and set peppers aside.
  • Slightly smash each clove of garlic just enough that the paper loosens; remove the paper and discard it.
  • In a medium, non-reactive (i.e. stainless steel, ceramic, or glass) pot, add the prepared peppers and garlic cloves. Pour in the vinegar and lime juice then add the salt, paprika, and bay leaf. Stir together to mix in the salt and paprika.
  • Bring the mixture to a boil. Reduce heat to medium-low, cover, and allow to simmer for 20 to 30 minutes or until the peppers are soft.
  • Remove from the heat and add to a food processor or heat safe blender (no need to remove bay leaf). Pulse until smooth and liquidy (be CAREFUL--it is HOT), adding more vinegar if necessary to make it more liquid.
  • Smoosh through a fine mesh sieve into a bowl and discard any seeds and large chunks left in the sieve.
  • Refrigerate in an airtight container for at least one week prior to using.

In Mexico, the bottled hot sauce is used every day to spice up street fares such as potato chips, fruit cocktails, popcorn, and other fried foods sold as snacks in plastic bags. It is also used in some seafood cocktail preparations and alcoholic drinks. I hope you enjoy this delicious recipe.

20 Arbol peppers (About 10 grams, seeds removed*)
3 Guajillo peppers (About 15 grams, deveined and seeds removed)
2 garlic cloves
3 cups of water
1/3 cup white vinegar
1 teaspoon Mexican oregano
½ teaspoon ground Cumin
½ teaspoon thyme*
½ teaspoon marjoram
1 clove
6 peppercorns
Salt to taste

Steps:

  • Place the arbol peppers, guajillo peppers, and garlic in a saucepan with the water. Turn the heat to high, and once the water starts boiling, turn the heat down and simmer for about 20 minutes, or until peppers are very soft. Due to the fumes, the peppers will give off, make sure your windows are open or turn on the exhaust fan.
  • Remove saucepan from heat and allow to drop to room temperature. Once it has cooled, place the peppers, garlic, spices, dried herbs, vinegar, and one cup of the cooking water into a blender. Puree until you have a very fine texture.
  • Pour this mixture into a glass container using a strainer, to remove any pieces of pepper skins left.
  • Pour the mixture into the saucepan again, turn to medium-high heat, and gently simmer for about 5 minutes. This is just enough time to reduce the salsa to the desired consistency and allow the spices' flavors to blend. Again, don't forget to have the windows open and/or the kitchen exhaust fan on.
  • Allow cooling. Pour the sauce into a sterilized bottle and secure with an airtight cap or lid.
  • You can use this sauce immediately, although the flavors will be better about two weeks later. This sauce can last stored in your refrigerator for about 6 months. Enjoy!

20 tabasco or serrano chiles, stemmed and cut crosswise into 1/8-inch slices, or 12 very ripe red jalapenos (about 10 ounces)
1 1/2 tablespoons minced garlic
3/4 cup thinly sliced onions
3/4 teaspoon salt
1 teaspoon vegetable oil
2 cups water
1 cup distilled white vinegar

Steps:

  • Combine the peppers, garlic, onions, salt and oil in a non-reactive saucepan over high heat. Saute for 3 minutes. Add the water and continue to cook, stirring occasionally, for about 20 minutes, or until peppers are very soft and almost all of the liquid has evaporated. (Note: this should be done in a very well-ventilated area!) Remove from the heat and allow to steep until mixture comes to room temperature. In a food processor, puree the mixture for 15 seconds, or until smooth. With the food processor running, add the vinegar through the feed tube in a steady stream.
  • Taste and season with more salt, if necessary. (This will depend on the heat level of the peppers you use as well as the brand of vinegar used.) Strain the mixture through a fine mesh sieve and then transfer to a sterilized pint jar or bottle and secure with an airtight lid. Refrigerate. Let age at least 2 weeks before using. Can be stored in the refrigerator for up to 6 months.

"MINUTE" STEAK AND EGG WITH RED HOT BUTTER SAUCE

1 (6 ounce) top sirloin steak
salt and freshly ground black pepper to taste
4 teaspoons fine dry bread crumbs
2 tablespoons clarified butter, melted
1 large egg
1 teaspoon clarified butter, melted
2 teaspoons butter, at room temperature
1 tablespoon Louisiana-style hot sauce
2 teaspoons water
1 teaspoon sliced green onions

Steps:

  • Place steak between two pieces of plastic wrap and pound to a ¼-inch thickness. Season one side generously with salt and pepper, then sprinkle ½ of the bread crumbs over top. Place the plastic wrap back over the steak and pound a few times with the meat mallet. Repeat to season the other side with salt, pepper, and remaining bread crumbs.
  • Set a pan over high heat. Add 2 tablespoons melted clarified butter and wait until it starts to smoke. Quickly and carefully add steak to the pan and cook for 1 minute. Flip steak and reduce heat to medium-high; cook until you see a little bit of pink juice pool on top of the steak, about 1 more minute. Flip again, turn off the heat, and transfer steak to a warm plate.
  • Let the pan cool for 30 to 60 seconds, then add 1 teaspoon melted clarified butter. Turn heat to medium and add egg. Break the egg white so it's all the same thickness and the yolk is in the center. Add a pinch of salt and cook until egg white is cooked through with brown and crispy edges. Place the egg on top of the steak.
  • Add room temperature butter and hot sauce to the warm pan. Swirl the pan until the butter has melted and emulsified into the hot sauce. Stir in water if sauce is too thick or starts to separate.
  • Spoon sauce over steak and egg, and garnish with chives.

18 fresh cayenne peppers (ends & stems removed)
1 1/2 cups white vinegar
2 teaspoons garlic, minced
1 teaspoon salt
1 teaspoon garlic powder

Steps:

  • USING FRESH CAYENNE PEPPERS.
  • There are two different ways to prepare this sauce. You can use fresh cayenne peppers, or you can use cayenne peppers from your garden that you have canned.
  • If you're using fresh cayenne peppers, simply remove the ends and measure all of the ingredients into a small saucepan.
  • Heat over medium heat until boiling.
  • Reduce the heat slightly, but so the mixture continues to boil.
  • Simmer about 20-25 minutes.
  • Remove the mixture from heat, carefully pour it into a blender & puree until thick and smooth.
  • Transfer the mixture back into the saucepan and simmer another 15 minutes.
  • USING CANNED CAYENNE PEPPERS.
  • If you're using canned cayenne peppers, which is what we used in this particular recipe --.
  • In a blender add 18 peppers, 1 cup of vinegar (we used the juice from our home-canned peppers), garlic, salt, and garlic powder.
  • Cover and puree until smooth.
  • Transfer to a saucepan and bring to a boil.
  • Reduce heat and simmer for 20 minutes.
  • The sauce is much better if you allow the flavors to marry overnight in the fridge, but if you don't have enough time to let it marinate overnight it will still turn out great wings!

1 cup white vinegar
9 dried pequin peppers, seeded
4 dried arbol peppers, seeded
6 cloves garlic, minced
2 tablespoons ground paprika
1 tablespoon onion flakes
1 teaspoon salt
2 tablespoons cold water
¼ teaspoon xanthan gum

Steps:

  • Combine 1 cup water, vinegar, pequin peppers, arbol peppers, garlic, paprika, onion flakes, and salt in a small saucepan over medium heat until the mixture reaches 180 degrees F (82 degrees C) and keep at that temperature for 10 minutes. Transfer to a blender and puree until smooth. Allow to cool to room temperature in the blender, about 15 minutes.
  • Combine 2 tablespoons cold water and xanthan gum in a small bowl. Add to blender with pepper mixture and puree for 30 seconds. Transfer mixture to a bottle and store in the refrigerator for up to 9 months.
