Steps:
- Put the raspberries in a pan with the sugar and vinegar. Mash over a low heat for 10 mins until smooth and syrupy. Rub through a sieve into a clean pan.
- Tip the seeds from the sieve into a bowl and stir in 300ml water, then sieve again to remove the last of the pulp from seeds. Pour the liquid into the pan with the sieved pulp, stir well and boil for 1 min. Pour into small sterilised bottles and seal. The cordial will keep unopened for a few months. Once opened, store in the fridge.

Steps:
- Pour raspberries into a large jar and cover with sugar. Pour vodka over all and close with lid.
- Shake several times the first day until all of the sugar has dissolved.
- Store in a cool, dark place for a minimum of one month (I recommend 6 weeks, longer is fine too). Shake every day or two.
- When the liqueur is ready to be bottled, line a strainer with a couple of layers of cheesecloth, preferably butter muslin and place it over a large pot or bowl. Pour the liquor over the cheesecloth slowly letting the liquid drain while the strainer catches the solids. Repeat if necessary.
- When ready, store in bottles. I like to keep one in the fridge for an icy after dinner drink!

HOMEMADE RASPBERRY NON ALCOHOL CORDIAL
I made some of this for the first time and am amazed at how much better it than the store bought stuff. Next time i make it I am planning to use blackberries instead and see how that is. Steps:
- 1. Rinse the berries in a strainer pour into a large bowl and set aside and cover with plastic wrap.
- 2. Place 12 cups of cold water in a large pot add the sugar and place on the stove over medium heat and heat the water and sugar to boiling stirring constantly to dissolve the sugar, about 10 or 15 minutes.
- 3. Unwrap the bowl with the berries and add the lemon juice and stir till all berries are covered, then pour the hot water in the bowl with the berries.Stir it but don't stir to the point where the berries become mash. Just enough to move them around in the water. Cover the bowl again with plastic wrap and set aside in a cool dark place to cool for 12 hours. After the 12 hours place in the fridge for another 24 hours so as to let it blend.
- 4. After the 24 hours strain the berries with a fine mesh strainer or triple cheese cloth. Now at that point you can throw away the berries or save them for other recipes or freeze them for desserts later. Once straining is done just use a kitchen funnel to bottle the cordial or pour into gallon jugs or pitchers whatever you prefer. This cordial can be stored in the fridge for up to 1 month. Note: I'm not sure how many servings you can get but I came up with a gallon and plus some. Enjoy!

HOW TO MAKE HOMEMADE CORDIALS OR FINE SPIRITS IN 6 STEPS
From morningchores.com
Estimated Reading Time 6 mins
- Choose Your Alcohol Base. For consistent results, use “neutral spirits”. People define this term in different ways. But for the purposes of making cordials, that means it should not have any added flavoring.
- Choose Your Flavor Infusions. For me, the most fun part of making cordials is playing with different flavors. You can use fruits, barks, herbs, spices, flowers, and even bacon (ever heard of bacon vodka?)
- Infuse your Alcohol. Now for the easy part, when your water infusion tastes right, drain off the water and replace it with alcohol. Close the jar and store it in a cool, dark place to infuse.
- Dilute Your Infused Alcohol. You don’t have to dilute your alcohol. If you are trying to make bacon or pepper vodka to make martinis, then you can strain your solids, and skip to step #6.
- Add Sweetener. You also don’t necessarily have to use this step. For dry flavors, like making bitters to mix in your Old-fashioned or Sazerac, just skip to step #6.
- Bottle Your Fancy Spirits. At this point, you have now made your very own fancy spirits. If you plan to give them as gifts, then put them in fancy bottles to impress your recipients.

- In a medium sized sauce pan, combine raspberries and sugar. Cook over medium low heat until raspberries have broken down and sugar is dissolved, stirring occasionally. Use a berry masher or two forks to mash berries completely.
- Set a strainer over a large bowl. Pour the raspberry mixture through the strainer, pressing on it with a spoon to get all the juices out. Discard what's left in the strainer or eat it with a spoon like I did because it's SO GOOD.
