2 ½ pounds fresh apricots, pitted and finely chopped
⅓ cup lemon juice
5 ¾ cups white sugar
½ teaspoon butter
1 (1.75 ounce) package powdered fruit pectin

Steps:

  • Stir apricots, lemon juice, and sugar together in a large pot over medium heat; add butter to reduce foaming. Bring apricot mixture to a rolling boil, stirring constantly. Quickly stir in pectin; return to a full boil until pectin is dissolved, 1 minute. Remove from heat and skim off any foam with a metal spoon.
  • Sterilize jars and lids in boiling water for at least 5 minutes. Pack apricot jam into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil, then carefully lower the jars into the pot using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 5 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, for at least 24 hours. Press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). It may take up to 2 weeks for jam to set. Store in a cool, dark area.

In just under an hour and with only three ingredients, you can make a batch of raspberry jam that's bursting with flavor and color. We found that macerating the berries prior to cooking helps release more of their natural fruit pectin, eliminating the need for any additional thickener. Serve the jam on toast, as part of a cheese board or over yogurt or even ice cream.

4 cups fresh raspberries (about four 6-ounce containers)
2 cups sugar
Zest of 1 lemon plus 1 tablespoon lemon juice

Steps:

  • Toss the raspberries, sugar and lemon zest and juice in a medium saucepan to combine, then mash slightly to release some of the berry juice. Set aside for 10 minutes to allow the raspberries to macerate and the sugar to dissolve. Meanwhile, place a small plate in the freezer to chill; this will be used to test the doneness of the jam.
  • Place the saucepan over medium-high heat. Bring the mixture to a boil and then reduce the heat to medium, stirring frequently. Continue to cook until the jam becomes thick and syrupy, about 25 minutes. To test doneness, place a small amount of the jam onto the chilled plate and freeze for 2 minutes. Drag your finger or spoon through it. If the jam holds its shape and thickness, the jam is done; remove from the heat. If it's runny, continue to cook and test again in 5-minute increments. Once the jam has reached the right consistency, transfer to jars and cool completely before storing, covered tightly. Jam will keep in the refrigerator up to 6 months.

7 cups raspberries
2 cups chopped apricots
6 cups sugar

Steps:

  • Add the apricots, raspberries, and sugar to a large Dutch oven.
  • TIP: At this point rub some butter around the top of the Dutch oven. The fat (butter) keeps the jam from boiling over. Boiled over jam is a real mess!
  • Slowly bring the mixture to a boil over medium heat (it took me about 30 minutes to get to this point), stirring until the sugar is dissolved.
  • Turn the heat up a little and cook rapidly (stirring often to prevent sticking) until the jam reaches the gelling point. For me this took about 17 more minutes.
  • TIP: Watch out for spitting. The closer the jam gets to the gelling point, the further it will spit - and it's hot!
  • Use the plate method to check for gelling or use a digital thermometer. Gelling is reached at 220 degrees or 8 degrees above the boiling point of water.
  • Spoon the hot jam into prepared jars, leaving ¼ inch headspace.
  • Wipe the lip of each jar with a damp paper towel, top the jars with a lid and a lid ring.
  • Process the jars in a water bath canner for 15 minutes. Remove and let cool completely.

30 Minute Homemade Apricot Jam image

Save money and make your own homemade apricot jam in 30 minutes. All you need is fresh apricots, sugar and lemon juice - no pectin required. Includes easy canning instructions for preservation. This recipe makes 3 (1/2 pint) jars of jam.

2 1/2 cups sugar
3 tablespoons lemon juice

Steps:

  • Prepare the apricots by peeling, removing pits and crushing them. You can crush they by hand with a potato masher or throw in a food processor and pulse a couple of times.
  • In a pot over medium high heat, mix together crushed apricots, sugar and lemon juice. Bring to a boil and continue stirring until sugar completely dissolves.
  • Continue cooking, stirring frequently, until the mixture thickens and turns into a jam. This takes about 20-25 minutes. Once it's thick and jam like, remove any foam from the top and proceed to the next step.
  • For refrigerator jam: Remove pot from heat and allow to cool before pouring it into mason jars and placing in the refrigerator for immediate serving.
  • For canning jam: Prepare (3) 1/2 pint jars by cleaning and sterilizing jars, lids and rings in hot water (dishwasher or water bath). Pour hot jam into sterilized jars, leaving about 1/4 inch of space on top. Use a thin knife and run around the inside of the jar once jam is inside to make sure to remove any air bubbles. Wipe rims of jars clean and place lids and rings on them. Bring a pot of water to a boil, lower the jars into the pot and process for 15 minutes (water boiling, pot covered). During this process, you want to make sure the water level never gets lower than 1 inch from the tops of the jars. Carefully remove the jars from the pot and let sit until cool. Once cooled down, press the top of each lid down to make sure the jar is sealed. Store in cabinet.

  • Place the raspberries, halved apricots, and white wine in a large, heavy-bottomed pot over medium heat. Bring mixture to a boil, cover, and reduce heat to low. Cook the raspberries and apricots until tender (timing will depend on how soft they are at the beginning).
  • Remove the lid and add the sugar, stirring to combine. Increase heat to medium and let the mixture violently bubble up. Eventually the bubbles will start to rise and with them a white foam. Skim off any foam that rises to the top. Once you've skimmed all foam, reduce heat to medium-low, and cook until the mixture thickens and reduces. Be sure to stir frequently to keep the bottom from burning.
  • To test the consistency of your jam, take one of the plates from the freezer, and spoon a small amount on the plate. Return the plate to the freezer, and wait 2 minutes. Push the chilled jam with your finger. If it starts to pile up on itself, it's done. If it seems too thin, cook the jam for 5 to 10 minutes more, and test again. This whole process took me about 35 minutes.

  • Add the butter and sugar to the bowl of a stand mixer fitted with the paddle attachment. Cream together on high speed until completely creamy and whipped, about 1-2 minutes. Reduce the speed of the mixer to medium low, and add the egg yolk. Allow the egg yolk to mix in completely before adding the vanilla extract. Once mixed, scrape down the sides and bottom of bowl as needed. Turn the mixer off, add the flour to the wet ingredients. Turn the mixer on low and slowly allow the flour to mix in and form a soft dough. Once the dough is completely mixed, place it in a container, press down, and cover with plastic wrap. Refrigerate for at least 2 1/2 hours. I prefer overnight (about 8 hours).
  • Position a rack in the center of the oven and preheat the oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone mat (the mats will cause less spreading). Shape the cookie dough into balls. I used 1 tablespoon dough per ball. Bake the balls for 3 minutes. Remove from oven and using the back of a small melon baller or your thumb make an indentation in the dough. Fill each thumbprint with 1/4 - 1/2 teaspoon of jam.
  • Bake the shortbread cookies for 12-15 minutes or until very lightly browned on the edges. Mine took exactly 12 minutes on the dot. Do not over-bake. Allow cookies to cool for 30 minutes in total before glazing.
  • In a small bowl, combine the confectioners sugar, half and half, and vanilla extract. You make need a little bit more liquid to get the desired consistency. Drizzle over the cookies or use a small baggie that's been snipped in the corner to drizzle. Glaze will take a few minutes to set.
