Steps:
- Place a fine-mesh sieve over a medium bowl; set aside. In a medium saucepan, off heat, whisk together sugar, cornstarch, and salt. If making chocolate pudding, add cocoa powder. Very gradually (a few tablespoons at a time) whisk in milk, taking care to dissolve cornstarch. Whisk in egg yolks.
- Whisking constantly, cook over medium heat until the first large bubble forms and sputters. Reduce heat to low; still whisking, cook 1 minute. Remove from heat; immediately pour through sieve into bowl. Stir butter and vanilla into hot pudding.
- Place plastic wrap directly on surface of pudding (to prevent skin from forming); chill at least 3 hours and up to 3 days. Before serving, whisk pudding until smooth; divide among four serving dishes.
HOMEMADE PUDDING (FROM SCRATCH)
This is the best homemade pudding recipe I've ever used, it tastes better than store-bought, and it's fairly easy to make. NOTE: you can use splenda in place of sugar for a "lite" version.

Steps:
- In a pot(or the microwave) get all 3 cups of milk scalding.
- Whilst the milk boils; separate the eggs and discard the whites (if desired, you can set aside for an omlette or a meringue)and beat the cornstarch and sugar in the bowl with the egg yolks. It will have a hard time coming together at first; but keep whisking, it'll get there.
- Keep milk very hot. Pour all of the egg yolk mixture into the scalding milk and beat vigorously until the mixture seems completely liquified. Add the salt, vanilla extract, and butter. Keep whisking until butter is well incorporated.
- Keep warm and continuosly stir until the pudding thickens. Once thick (if making chocolate) add the sifted cocoa powder and stir until well incorporated.
- Serve warm or refridgerate for 2 hrs (preferred) and serve with or without garnish.
CARDAMOM MILK PUDDING
There are many variations on the Middle Eastern milk pudding known as _muhallebi_, but this one, delicately flavored with cardamom, is especially silky, thanks to arrowroot. It tastes best when served well chilled.

- Add the milk, cream and vanilla bean and scrapings (if using) and bring to a boil over medium heat, whisking frequently (you will have to stop whisking to verify that it is boiling; there will be fat bubbles that pop gloopily). While you whisk, make sure to scrape the entire bottom of the pot, including the corners. When you see the gloopy bubbles, reduce the heat to medium-low to maintain a simmer and continue cooking for 1 1/2 minutes (set a timer). The pudding should be the texture of a loose yogurt, or warm caramel sauce.
- Fish out the vanilla pod (or strain the pudding into a measuring pitcher if at all lumpy) and divide the pudding between 4 heat. (You can rinse the vanilla pod, let it dry, and stick it in a bottle of booze or a jar of sugar, if you like.)

- Pour the pumpkin mixture over the bread cubes, pressing down with a spatula or spoon to totally immerse the bread. Allow to sit at room temperature for 20 minutes to absorb the pumpkin mixture.
- Stir the mixture lightly and sprinkle the nuts on the top. Transfer the dish to the middle rack of the oven and bake 55-60 minutes, until puffed up and a skewer inserted in the center comes out clean.

- For blended/smooth version: Place all ingredients in blender and blend on high for 1-2 minutes until completely smooth.
- For whole chia seed version: Blend all ingredients except chia seeds in a blender until smooth, including any added flavors, fruits, or chocolate. Whisk in chia seeds.
- Pour mixture into a jar or glass container and place in the refrigerator for at least 4 hours or overnight to let gel.
- Shake or whisk a few times within the first hour to help it gel evenly. I prefer to make this at night to have ready for a fast breakfast the next day. It is also great to make in the morning for a delicious pre-made dessert at night.
