ZESTY PUB CHEESE DIP

Easy to make, all American classic cheddar pub cheese dip with a touch of heat from hot sauce. Chef tried and true and very customizable.

3 cups shredded cheddar*
2-3 oz cream cheese
2 pieces spreadable cheese such as Laughing Cow (or increase cream cheese by 2 oz or add 2 oz sour cream)
1 clove garlic (or 1 tsp garlic powder)
2/3 cup beer**
1 tbsp Worcestershire sauce (or to taste)
1 tbsp Dijon mustard (or to taste)
1 tsp hot sauce (or to taste)
1 tsp prepared horseradish (or to taste)
1 tsp sweet paprika + a pinch to sprinkle over dip
1/2 tsp black pepper
1 tsp sea salt (or to taste)
2 tbsp finely cut fresh chives + 1 tsp more to sprinkle over dip

Steps:

  • In the bowl of a food processor add the shredded cheddar, cream cheese, spreadable cheese (or substitute) and roughly chopped garlic clove. Process until combined.
  • Add all the other ingredients except for the beer, salt and chives. Process and while processing slowly add the beer while monitoring the consistency (do not add it all if the dip is becoming runny).
  • Transfer to a mixing bowl and taste. Adjust seasonings as needed and add salt as needed. Fold in the chives, cover and refrigerate.
  • Serve garnished with a pinch of paprika and chives and accompanied by crackers, bread sticks and/or veggie sticks.

3 cups shredded sharp cheddar cheese
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon dried mustard
2 tablespoons Worcestershire sauce
⅔ cup light beer (pilsner, lager, etc)
(optional) 2 teaspoons cayenne pepper

Steps:

  • Combine all ingredients in a food processor and secure the lid.
  • Pulse the ingredients until mixed, then blend on high until smooth.
  • Spread will keep in the fridge, tightly covered, for up to 1 week.

2 fluid ounces lager beer at room temperature, or more if needed
10 ounces freshly grated sharp Cheddar cheese
½ (8 ounce) package cream cheese, at room temperature
½ tablespoon Worcestershire sauce
2 teaspoons dry mustard powder (such as Colman's®)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon finely chopped fresh chives

Steps:

  • To quickly remove any carbonation, pour the room temperature beer into a bowl, and whisk occasionally for 5 to 10 minutes.
  • Combine Cheddar cheese, cream cheese, Worcestershire, mustard powder, garlic powder, and onion powder in a food processor. Pulse until the ingredients are mixed.
  • Turn food processor to high and slowly pour in beer through the feed tube; blend until smooth. If mixture is too thick, add a bit more beer to reach your desired consistency.
  • Transfer to a serving bowl and sprinkle with chopped chives. Store in the fridge, tightly covered, for up to 10 days.

This is an all-time favorite in English Pubs. Best if aged in the refrigerator for one week. For a more upscale and refined spread, substitute brandy or cognac for the beer.

1/2 cup beer
1 lb white cheddar cheese, grated
4 tablespoons butter, softened
2 tablespoons fresh chives, snipped
2 tablespoons fresh parsley, minced
1 tablespoon onion, grated
2 teaspoons lemon juice
1 teaspoon dry mustard
1 teaspoon cayenne powder
3 garlic cloves, peeled halved

Steps:

  • In a blender or food processor, combine the beer, cheese, butter, herbs, spices and lemon juice. Process until blended and smooth.
  • Spoon one-third into a crock or jar with an airtight cover. Push 2 garlic halves into the mixture. Add another one-third of the mixture. Insert 2 more garlic halves. Fill the crock with the remaining cheese mixture and insert the remaining garlic halves.
  • Lay a single layer of plastic wrap over the top of the cheese mixture and press down so it is covering the entire top of the cheese mixture. Gather the remaining overlapping plastic wrap and fill the space between the cheese spread and the top of the crock. Seal the crock tightly.
  • Age the cheese spread in the refrigerator and remove plastic wrap before serving. Some people remove the garlic cloves while others leave them inches Your choice.

  • Place on a serving plate or board and surround with crackers or flatbreads.
