HOMEMADE PROTEIN BARS - PALEO FRIENDLY
This is our rendition of a protein bar to have for quick meal/snack options that you can make at home. We really liked this one... not too sweet. We use fruit juice sweetened dried cranberries. You can set aside some of the nut mixture if you'd like to put on top, but it makes for messy bars.

Steps:
- Preheat oven to 220 degrees F (104 degrees C). Arrange walnuts and pecans on a baking sheet.
- Bake in the preheated oven until nuts are roasted and fragrant, about 30 minutes. Remove nuts from oven. Increase oven temperature to 230 degrees F (110 degrees C). Grease a 9x13-inch pan.
- Pulse roasted walnuts, roasted pecans, and almonds together in a food processor until mixture is resembles a coarse meal; transfer to a large bowl. Add pumpkin seeds, cranberries, protein powder, dates, raisins, coconut flour, maple syrup, coconut oil, vanilla extract, cinnamon, and molasses; mix well. Press mixture into the prepared pan.
- Bake in the preheated oven until golden brown, about 40 minutes.

DARK CHOCOLATE PROTEIN BARS (NO BAKE, PALEO, VEGAN)
Healthy, homemade dark chocolate protein bars! These no bake Paleo and Vegan protein bars are low in sugar, great for snacking and tasty enough for dessert.

Steps:
- Line an 8" x 4" baking pan with parchment paper (aluminum foil works too). Set aside.
- Combine the melted cacao butter***, sunflower seed butter, water, maple syrup and vanilla. Whisk until smooth.
- Add in the chocolate protein powder, cacao powder and salt. Mix with a spatula until well combined.
- Firmly press the dough into the lined baking pan.
- Freeze for 20 minutes, or until set.
- Remove the bars from the freezer and cut into 8 protein bars****
- For the chocolate drizzle, melt the chocolate chips and coconut oil in a small sauce pan, over low heat. Drizzle the melted chocolate over the protein bars.
- Place back in the freezer a few minutes for chocolate to fully set.

- Combine the almond meal, ground flax seeds, chia seeds, protein and shredded coconut in a mixing bowl. Mix with a spoon.
- Add the almond butter and honey to the bowl and mix with a spoon, then use your hands to fully combine all the ingredients. The result should be a crumbly texture (it shouldn't be all stuck together like dough).
- Line a 9x5 inch loaf pan with parchment paper. Press the mixture into the pan firmly. You'll really want to press in hard all over to pack in the mixture tightly--this will ensure that the bars hold their shape.
- Place the bars in the refrigerator overnight or for at least 3-5 hours. After it's been refrigerated take it out of the pan with the parchment paper and use a sharp knife to cut it into 5 bars.

- Add the nuts and pumpkin seeds to multiple bowls or one big bowl. Add a pinch of salt to each and cover with water. Add Medjool dates to another bowl with water. Soak all for 4-6 hours. Smaller pumpkin seeds need less time than say Brazil nuts, hence why I often soak them separately but you can do them all together.
- Strain and rinse the nuts. Reserve a small handful of almonds and pumpkin seeds and add the rest to a food processor. Strain the dates, remove the pips and add the flesh to the food processor as well. Reserve a tablespoon of sesame seeds and add the rest to the processor too.
- Grind everything together for about a minute, stopping and scraping the sides a few times. Add coconut oil, vanilla and honey and process for a further 30 seconds to a minute, scraping the sides a couple of times.
