PORCUPINE MEATBALLS
Great balls of fun! Here's a meatball rolling in flavor.

Steps:
- Heat oven to 425°F. Crush cereal. (To easily crush cereal, place in plastic bag or between sheets of waxed paper, and crush with rolling pin.) In large bowl, mix crushed cereal, beef, rice, milk, dry soup mix and egg. Using wet hands, shape mixture into 30 meatballs. Place in ungreased 13x9-inch baking dish or 3-quart casserole.
- Pour water and tomato juice over meatballs; stir gently.
- Cover and bake 50 to 55 minutes or until rice is tender and beef is no longer pink in center and juice is clear.

BROWN GRAVY PORCUPINE MEATBALLS
Very easy meal idea, made with boxed Rice-A-Roni, packaged brown gravy and 1 pound ground beef. Everyone loves this easy homecooked recipe.

- In a large bowl mix ground beef, rice mixture from Rice-A-Roni, half a packet of the seasoning mix from the Rice-A-Roni and the egg. Shape into medium size meatballs.
- Heat a large nonstick skillet on medium high and add oil. Add meatballs and brown on all sides. Turn heat down to medium low, cover with lid, and continue to cook until cooked through, about 7-9 minutes.
- In a large measuring cup or bowl, measure water and add gravy mix. Mix with fork or whisk and add to meatballs in the pan. Turn heat to low, cover and cook 35-40 minutes or until rice is cooked, stirring occasionally and adding additional 1/2 cup water gradually as needed if gravy becomes too thick.
- During the last couple of minutes of cooking, add black pepper. Serve with mashed potatoes, topping with gravy.
OVEN BAKED PORCUPINE MEATBALLS
You can make the meatballs ahead of time and freeze. Then simply remove from the freezer, add the remaining ingredients and bake. Double this recipe for a buffet company meal or camping trip. So easy to make as there's no need to brown the meatballs in the skillet-saves time and bother.

- Combine ground beef, rice, milk, minced onion, salt and pepper in bowl. Mix lightly, but well. Drop rounded tablespoonfuls of mixture into 13 x 9 x 2 inch baking pan.
- Combine tomato soup and water in bowl; mix well. Pour over meatballs. Cover baking pan tightly with aluminum foil.
- Bake in 350°F oven 1 hour or until hot and bubbly. Makes 6 to 8 servings.

MOM'S PORCUPINE MEATBALLS MY WAY
Just thought about these the other day so looked for Mom's recipe, I added a few things to the recipe, and used mushroom soup instead of tomato. Wasn't even going to post the recipe but then though why not so here they are another comfort food recipe.

- 1. Mix first 6 ingredients well. Add salt and pepper. Roll into balls. place in oven safe pan.
- 2. Preheat oven to 350 degrees. Mix mushroom soup with one can of water, pour over meatballs. Bake for 1&1/2 hours. Serve!

PORCUPINE MEATBALLS WITH MUSHROOM CREAM SAUCE

- Mix together the beef, rice, onions, eggs and seasoning. Form into meatballs about one and a half to two inches in diameter.
