PIGS IN A BLANKET WITH HOMEMADE DOUGH
Pigs in a Blanket were a natural choice for serving at my farm animal them meal. I filled the hot dogs with cheese and wrapped them in a light dough to make them special. They are tasty, fun and handy to eat.

Steps:
- In a large bowl, dissolve yeast and 1 teaspoon sugar in milk and water; let stand for 5 minutes. Add the egg, shortening, salt, remaining sugar and enough flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 8-10 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Cut a 1/4-in.-deep lengthwise slit in each hot dog. Cut cheese slices into five strips; place one strip in a slit of each hot dog., Punch dough down; divide into 10 portions. Roll each into a 5-in. x 2-1/2-in. rectangle and wrap around prepared hot dogs; pinch seam and ends to seal. , Place seam side down on greased baking sheets; let rise for 30 minutes. Bake at 350° for 15-18 minutes or until golden brown.

I have been using this recipe for blanketed piggies since I first came across it almost 15 years ago from either my sister or my grade 9 home economics class. I'm so glad I have it since it's so hard to find a blanket recipe from scratch! I can cover a typical Canadian package of 12 hot dogs with this recipe.

Steps:
- Sift the dry ingredients in a bowl.
- Mix in the butter/margarine and milk.
- On a lightly floured surface, roll out the dough to desired thickness and as wide as the hot dogs to be wrapped are.
- Wrap the individual hot dogs or sausages in their own blanket.
- Bake at 425°F for about 10 minutes or until slightly brown.
- *If you get to the end of the dough, yet still have more hot dogs left without blankets, it's easy just to roll the wrapped hot dogs between your hand and your work surface to make their blanket thinner, that way you can cut off the excess dough off from either side of the hot dog and combine the ends and roll out another strip of blanket. Maybe you'd like to consider adding a bit of cheese inside the blanket for added flavor.

Steps:
- Heat the oven to 400ºF. Grease a large baking sheet. Sift the dry ingredients (flour through salt) into a mixing bowl (or dump them in one at a time, whatever).
- Rub the butter pieces into the dry ingredients until mixture is crumbly. Stir in cheese until evenly distributed.
- Make a well in the dry ingredients and add the buttermilk. Stir well with a wooden spoon. Let the dough sit for 3 minutes.
- Sprinkle the dough with flour and stir once or twice then turn out onto a well floured counter.
- With floured hands, pat the dough into a 15 by 7 inch rectangle, trimming the sides if necessary to get a true rectangle. (Handle the dough as little as possible for tenderness, yeah right).
- Using a pizza cutter, slice the rectangle into thirds horizontally then slice each third into thirds vertically, this will give you 9 small rectangles. Slice each rectangle diagonally into two thin triangles.
- One at a time, roll up the sausages in the triangles. Place pointy side down on greased cookie sheet.
- Bake for 12 to 13 minutes, until golden brown. Cool on the sheet for 3 minutes then tranfer to a wire rack.

Kids love this one. My mom made it for me as did her mom. If making for a small child, cut the hot dogs into fourths length wise. The cheese is always optional.

- Wrap cheese around each frankfurter then the biscuit around that. Put on cookie sheet with the overlap of biscuit faced down, so you don't have to use tooth picks.

- 1. Rinse the hot dogs and pat dry with a paper towel. Set aside.
- 2. Preheat the oven to 450 degrees. Pull out a baking sheet.
- 3. In a medium bowl, mix the baking mix, milk, and prepared mashed potatoes. Stir well.
- 4. Spread some of the baking mix on your work surface. You can use a wooden cutting/pastry board if you like. Scoop the dough onto the work surface. Sprinkle with a little baking mix. Knead the dough, folding and turning, for one minute. If the dough is still sticky, add a little more baking mix.
- 5. Using a rolling pin, roll out the dough to 1/2 inch thickness. Using a sharp knife, cut it horizontally into 1-inch strips. Spread the strips out, leaving half an inch between them.
- 6. Pick up a hot dog. Set the top of the hot dog on the left edge of the strip. Roll gently, spiraling the dough around the hot dog. Press dough ends into the main spiral. Continue with all the hot dogs.
- 7. Place on an ungreased baking sheet leaving some space between them. Bake 8-10 minutes or until golden brown.
- 8. Notes: I used Bisquick. If you prefer another brand of baking mix, be sure to follow their baking directions for basic biscuits. You can make a cut in the hot dogs and add cheese. I served these with ketchup or mustard as a dipping sauce. If you have any dough leftover, make some biscuits.

- Preheat the oven to 375°. Working quickly while cold, unroll the crescent dough sheet on a lightly floured surface and separate the perforated dough into 8 triangles. Cut each dough triangle into three equal skinny triangles.
