Beef drippings
2 tablespoons Gold Medal™ all-purpose flour
1 cup Progresso™ beef flavored broth (from 32-oz carton) or water
Browning sauce, if desired
Salt and pepper to taste

Steps:

  • After removing beef from pan, scrape all brown particles from pan and pour particles and drippings into bowl or glass measuring cup. Skim 2 tablespoons of fat from the top of the drippings; add fat to 1-quart saucepan. Discard any remaining fat; reserve remaining drippings. Stir flour into fat in saucepan.
  • Cook over low heat, stirring constantly, until mixture has thickened; remove from heat. Gradually stir in reserved drippings plus enough broth or water to equal 1 cup. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in a few drops browning sauce for darker color. Stir in salt and pepper.

Steps:

  • Place turkey neck and giblets in a medium or large sauce pan along with 5 cups of water. Bring to a boil over high heat. Skim foam off surface and reduce heat to a simmer. Cook for 1 hour. Strain stock through a fine mesh strainer into a heatproof container. Discard solids and serve strained stock. If making ahead, the stock will keep in fridge for up to 3 days. When turkey is done roasting, remove from oven and place on a cutting board to cool. Take roast pan with drippings and place on the stove top across two burners. Heat over medium-high heat until pan drippings come to a simmer. Cook, scraping up browned bit with a wooden spoon until thickens, about 10 minutes. Add flour and stir to combine. Cook about 1 minute. Slowly add stock and whisk to combine. Take your time an add in ¼ cup to ½ cup increments, whisking until fully combined before adding more stock. Reduce heat to medium and bring to a simmer and cook until gravy thickens, about 5 minutes. Once smooth, add a bit more stock and stir. Continue to stir and add stock until you get the desired consistency. Strain gravy through a fine-mesh strainer to create a super-smooth gravy. Season with salt and pepper and keep warm. Whisk immediately before serving. If too thick, thin with 2 teaspoons of water.

This is a basic gravy recipe using pan drippings from roast turkey, but it works well with roast chicken, too. The recipe can easily be doubled, and made ahead of time if pan drippings are available.

Pan drippings from roast turkey
1 cup turkey stock, divided, homemade or store-bought
1/4 cup all-purpose flour
kosher salt
1 teaspoon cider vinegar
Freshly ground black pepper

Steps:

  • Pour drippings from the roasting pan into a saucepan and set aside. Place the roasting pan over medium heat; add ¼ cup of turkey stock to deglaze, using a spatula to scrape up the brown bits on the bottom. Add the contents of the roasting pan to the saucepan.
  • Pour off and set aside nearly all the drippings, leaving ¾ cup in the saucepan. Set the saucepan over medium heat and whisk in the flour to make a roux. Continue whisking until the flour is evenly incorporated; then add another ½ cup of the reserved drippings. Whisk continuously until the roux thickens to a brown paste.
  • Slowly add in the rest of the stock, a little at a time, whisking between additions until smooth. Once all the stock has been added, bring to a low boil to make a thick, rich gravy, 2 minutes. Add salt, vinegar, and pepper to taste, then stir to combine. Makes about 1½ cups of gravy.

SIMPLE PAN GRAVY

Pan drippings from roasted turkey
1/2 cup Madeira wine, may substitute sherry, white wine or water
4 tablespoons unsalted butter
3 tablespoons all-purpose flour, may substitute any gluten-free flour
1 1/2 cups turkey or chicken stock, plus more as needed
Kosher salt, to taste
Freshly ground black pepper, to taste

Steps:

  • While the turkey rests, make the gravy: Use a fine-mesh strainer to strain the turkey pan drippings into a medium bowl, leaving behind any browned bits, or "fond," stuck to the pan. Press down on the solids to get as much liquid as possible into the bowl; discard the solids. Pour the liquid into a measuring cup or a fat separator and allow the fat to rise to the top. Meanwhile, place the roasting pan across two burners over medium-low heat. When the pan is sizzling, add the wine and stir, scraping up all the fond in the pan. Turn off the heat and pour the wine mixture through a fine-mesh strainer set over a bowl.
  • Ladle or spoon off the fat from the pan drippings and discard; set aside the jus. In a saucepan over low heat, melt the butter. Then sprinkle in the flour and whisk until the flour is completely incorporated and light golden brown, 1-2 minutes. Slowly add the wine mixture, whisking constantly. When it has fully absorbed into the roux, slowly add the reserved jus. Small additions of liquid and continuous whisking are the keys to smooth gravy.
  • Finish the gravy by adding turkey or chicken stock a ½ cup at a time and whisking; taste and adjust the seasoning with salt and pepper as you go. (You'll need a total of 2½-3 cups of liquid to make the gravy.) When the gravy is thick yet pourable and perfectly seasoned to taste, transfer it to a bowl or gravy boat and serve immediately.

1 1/2 cups chopped yellow onion (2 onions)

Defatted turkey drippings plus chicken stock to make 2 cups, heated
1 tablespoon Cognac or brandy
1 tablespoon white wine, optional
1 tablespoon heavy cream, optional

Steps:

  • In a large (10 to 12-inch) saute pan, cook the butter and onions over medium-low heat for 12 to 15 minutes, until the onions are lightly browned. Don't rush this step; it makes all the difference when the onions are well-cooked.
  • Sprinkle the flour into the pan, whisk in, then add the salt and pepper. Cook for 2 to 3 minutes. Add the hot chicken stock mixture and Cognac, and cook uncovered for 4 to 5 minutes until thickened. Add the wine and cream, if desired. Season, to taste, and serve.

¼ cup drippings from a roast chicken
2 ½ tablespoons all-purpose flour
2 cups cold chicken stock, or more if needed

Steps:

  • Pour fat from drippings into a bowl and reserve. Whisk flour into remaining drippings left in pan; mixture will seem dry. Add 2 tablespoons reserved fat, or as needed, to the drippings mixture to combine with flour.
  • Place pan of drippings mixture over low heat and toast flour until light brown and mixture gives off a nutty fragrance, about 5 minutes.
  • Drizzle about 1/3 cup cold chicken stock at a time into pan drippings, whisking each addition of stock into mixture until thoroughly combined. Continue whisking, scraping any browned pan drippings from the bottom of the pan into gravy; bring to a simmer. Continue to cook, whisking constantly, until gravy is thick and flour has combined with the liquid, 8 to 10 minutes.
  • Adjust thickness of gravy; if too thick, whisk in a little more stock. If gravy is too thin, continue to simmer, whisking constantly, until reduced and thickened, about 10 more minutes. For the smoothest texture, strain gravy before serving.
