Paleo-friendly breakfast sausage has a nice, mild flavor; kick up the heat if you want by adding a few red pepper flakes or some cayenne.

1 pound ground pork
2 teaspoons salt
1 teaspoon ground turmeric
1 teaspoon dried sage
½ teaspoon dried oregano
½ teaspoon ground black pepper
½ teaspoon paprika
⅛ teaspoon dried marjoram
2 tablespoons olive oil, or as needed

Steps:

  • Place ground pork in a large bowl. Combine salt, turmeric, sage, oregano, black pepper, paprika, and marjoram in a small bowl. Sprinkle half of the seasonings over the pork. Mix well with your hands or a wooden spoon to combine. Sprinkle remaining seasonings onto the pork and mix until evenly distributed.
  • Cover bowl with plastic wrap and refrigerate, 8 hours to overnight.
  • Scoop out 1/4 cup of the chilled pork mixture at a time and shape into patties.
  • Heat olive oil in a large skillet over medium-high heat. Cook patties until no longer pink in the center and browned, about 4 minutes per side.

Paleo style! Feel free to use whichever type of ground meat you prefer. Use ground pork, chicken, or turkey.

1 pound ground pork
1 teaspoon kosher salt
¾ teaspoon ground black pepper
2 teaspoons finely chopped fresh sage leaves
1 teaspoon finely chopped fresh thyme
¼ teaspoon chopped fresh rosemary
¼ teaspoon ground nutmeg
¼ teaspoon cayenne pepper
¼ teaspoon red pepper flakes

Steps:

  • Mix together ground pork, kosher salt, black pepper, sage, thyme, rosemary, nutmeg, cayenne pepper, and red pepper flakes in a bowl. Knead with hands until thoroughly incorporated. Form into 8 patties.
  • Place patties into a skillet over medium heat; cook until browned, 8 to 10 minutes. Flip patties and continue to cook until fully cooked through, 5 to 8 more minutes.

  • Melt 3 tablespoons coconut oil in a large skillet over medium-high heat. Add the onion and apple, and cook 3 minutes, stirring occasionally. Turn the heat down to medium-low, add the garlic, and cook 1 minute more, stirring constantly. Turn off the heat and cool completely.
  • Combine the cooled apple/onion mixture, ground chicken breast, thyme, salt, sage, fennel seeds, black pepper, nutmeg, and vinegar in a large bowl. Just mix until the apples and onion are incorporated, being careful not to over-mix.
  • Scoop the sausage mixture into 3-tablespoon-sized balls (I use an ice cream scoop for this), and then flatten the balls into 2 1/2 to 3-inch circles. (Like making mini hamburgers.)
  • To cook on the stovetop, heat a large skillet or griddle (I use my cast iron griddle, but a nonstick surface will also work) over medium to slightly medium-high heat. Add a little bit of coconut oil and spread it around to coat the skillet or griddle. Add the sausages and cook until they’re golden on both sides and fully cooked inside, about 3 to 4 minutes per side, flipping once. You can work in batches if they don’t all fit at once. (Don’t press down on the sausages as they cook because this will release the juices that keep them moist.)
