SUPER EASY: BAKING SAUSAGE
My daughter taught me to cook bacon with no splatter or mess on the stove top, by baking it instead. So I decided to try baking breakfast link sausage the same way. I use a 10"x15" jelly roll pan or the bottom of a broiling pan. I buy parchment paper for baking in rolls in bulk online. I bake 3 pounds of maple breakfast link sausage at a time and freeze it in individual servings.

Steps:
- Preheat oven to 400 degrees F.
- Line a 10"x15" jelly roll pan with parchment paper for cooking/baking.
- Place one package of sausage links in the jelly roll pan flat on top of the parchment paper in a single layer.
- When the oven comes up to temperature, place the pan with the sausage on the middle shelf of the oven and bake for 15 minutes.
- When the time goes off remove the sausage from the oven and rotate them to the other side.
- Place them back in the oven for another 10 minutes or until sausage is thoroughly cooked through.
- Remove finished sausage to paper towels or brown paper and blot excess grease off of the links with paper towels.
- Repeat process until entire 3-pounds of sausage is cooked.
- Freeze in portion sized bags.
- Afterward, clean-up is a breeze. Wait for grease to cool and then throw away parchment paper.

CLASSIC SAUSAGE STUFFING

- Preheat the oven to 350˚. Butter a 3-quart baking dish. Melt 6 tablespoons butter in a large wide pot over medium-high heat. Add the sausage and cook, breaking up the meat, until no longer pink, 3 to 5 minutes. Add the onions, celery, sage and thyme and cook, stirring occasionally, until the vegetables are softened, about 5 minutes. Add the chicken broth, 1 teaspoon salt and a few grinds of pepper. Bring to a boil, then remove from the heat.
- Whisk the eggs and parsley in a large bowl. Add the bread cubes and sausage-broth mixture and toss until evenly combined. Transfer to the prepared baking dish, dot with the remaining 2 tablespoons butter and cover with foil.
- Bake the stuffing until hot, about 30 minutes. Uncover and bake until golden brown, 20 to 30 minutes. Let cool at least 15 minutes before serving.

- Preheat oven at 400°convection. Anything from 350° to 425° with or without convection should be fine, but you will need to adjust time and perhaps need a couple of minutes under a broiler at the end to brown up some.
- If cooking sausage patties, dimple the patty center by about 1/4 inch deep and 3/4 inch diameter. This will prevent puffing of the meat during cooking.
- Spread sausage over a rimmed baking tray, so they don't touch. I'm using a non-stick baking pan. A spray of PAM doesn't hurt. You could use parchment paper or non-stick foil also.
- Bake for 10 minutes, then flip the sausage. If doing links of sausage, rotate them.
- Finish cooking to an internal temperature of 165°. If you want more browning, do a few minutes under a broiler.

- Add the breakfast sausage to a large nonstick skillet over medium heat. Cook, breaking up with a spatula until no longer pink, 7-8 minutes.
- Add the white and light green scallions, ½ of the bell pepper, and ½ of the spinach. Sauté for 2 minutes, until the spinach is wilted, then add the rest of the spinach and continue cooking until wilted. Remove the pan from the heat and let cool.
- In a medium bowl, whisk together the eggs, salt, and garlic powder. Add the milk and whisk to incorporate.
- Grease a 9 (22 cm) x 13-inch (33 cm) glass baking dish with nonstick spray.
- Add the cubed bread to the baking dish. If you don't have day-old bread, spread the cubed bread on a baking sheet and dry out in a 300˚F (150˚C) oven for 15-20 minutes.
- Sprinkle 1 cup (100 G) of shredded cheese over the bread, then evenly spread the sausage mixture on top. Pour the egg mixture over the sausage mixture. Cover the baking dish with plastic wrap and refrigerate for at least 1 hour, or overnight.
- Preheat the oven to 375˚F (190˚C).
- In a liquid measuring cup or small bowl, combine the chicken stock and heavy cream.
- Pour over the chilled bake. Sprinkle the remaining cup of cheese and remaining bell pepper over the top.
- Cover with foil and bake for 45 minutes, then uncover and bake for another 15-20 minutes, until the custard is set and the cheese is golden brown. Remove from oven and let cool for 15 minutes.
- Garnish with the dark green scallions, then slice and serve.

My mother would prep this on Christmas Eve Day and let it set overnight, then bake it Christmas morning for a simple but decadent dish. - Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Coat a 9x13-inch baking dish with cooking spray.
