2/3 cup oil
1/2 cup margarine
4 ounces cream cheese
2 cups icing sugar
1/2 teaspoon vanilla

Steps:

  • Cookies:.
  • Mix cake mix, eggs and oil together well.
  • Shape into marble size balls.
  • Bake at 350°F for 10 minutes. They are done when the tops looked cracked.
  • Filling:.
  • Mix margarine, cream cheese, icing sugar and vanilla together.
  • When cookies are completely cooled, frost the flat side of one cookie and then sandwich with another cookie.

Steps:

  • Preheat oven to 350 degree.

3/4 cup baking cocoa
2 cups sugar, divided
3 large eggs
1-1/2 cups whole milk, divided
3/4 cup shortening
2 cups cake flour
1 teaspoon baking soda
1/8 teaspoon salt
1 teaspoon vanilla extract

Steps:

  • In the top of a double boiler, combine cocoa and 1 cup sugar. Beat 1 egg; add to double boiler. Add 1 cup milk; cook until thick and smooth. Set aside to cool. , Meanwhile, cream shortening and remaining sugar in a large bowl. Add remaining eggs, one at a time, beating well after each addition. , Sift together flour, baking soda and salt; add alternately with remaining milk to creamed mixture. Add vanilla and cooled cocoa mixture; beat thoroughly. Pour into two greased 8- or 9-in. round baking pans. , Bake at 375° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool. Frost with your favorite seven-minute or fudge icing.

1 box Devil's Food cake mix
8 oz. cream cheese
1/2 cup butter
1 tsp vanilla
2 cups powdered sugar

Steps:

  • Beat cookie ingredients together with an electric mixer until combined.
  • Preheat the oven to 350 degrees. Roll into small one or two tablespoon balls. Place on a baking sheet. (Chill the dough for about 30 minutes if it's too soft to roll.)
  • Bake for 8 minutes. Remove and allow to cool.
  • Beat frosting ingredients together with an electric mixer. Using a plastic bag with the end cut off, or a pastry bag, pipe a swirl of frosting onto one cookie and gently press a same-size cookie on top. Voila! Store in the refrigerator - or on your cold porch if you live in Minnesota!

Me and the gals love Oreo cookies. Between us, we can eat a package in about 20 min. So, for a get-together, I came up with this for my part of the meal (we eat together every time we get together!) This big ole "cookie" is easy and inexpensive enough to make any old night of the week and appears elegant enough to be the Grande Finale of a birthday meal. Beware dieters, weight watchers, diabetics, and health food eaters, this is NOT FOR YOU...unless you just wanna splurge a bit!

1 (18 ounce) box betty crocker devil's food cake mix
3 eggs
1/2 cup oil
1 1/3 cups water
8 ounces cream cheese, softened
1/2 cup powdered sugar
8 ounces whipped topping, thawed if frozen
12 Oreo cookies or 12 other chocolate sandwich style cookies, coarsely chopped
1 cup chocolate frosting (from a can is fine)

Steps:

  • Preheat the oven to 350 degrees.
  • Prepare the cake mix with the oil, water, and eggs. Bake in two 9-in cake pans per directions on the box.
  • While cake is baking, cream the sugar and softened cream cheese together until fluffy. Fold in the cool whip and crushed cookies. Set aside.
  • Cool cakes completely.
  • To assemble, place one cake, top side down, on the plate. Spread cream cheese "middle" on the top. Top the middle with the second cake, top side down. Place the one cup of chocolate frosting in the microwave just long enough to soften to make it easier to spread. Let cool just a second if too runny. Spread on the top of the cake, but not the sides.
  • NOTE: You can omit the crushed cookies if you don't have them on hand. Then the cake itself becomes as a true oreo cookie. YUM!

2 (18.25 ounce) packages devil's food cake mix
4 eggs
1 cup shortening

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Blend the above ingredients together with a pastry blender until mixed.
  • Roll in balls about the size of a quarter and place on ungreased baking sheets. Make an even number of balls.
  • Bake for 10 minutes. Let cookies stand on cookie sheet for 5-6 minutes before removing them to cooling rack. After cookies have cooled, put Cream Cheese Frosting (see recipe or use one can of pre-made frosting) between two cookies, putting bottom sides together.
  • NOTE: Adding chopped pecans to the cookies without making them into sandwiches is also very good. Spice cake mix can be used in place of Devil's food.

Soft Brownie-like cookies filled with fluffy vanilla buttercream. You might also enjoy them with cream cheese frosting, as well! Many people love to keep these in the fridge and eat them cold.

15.25 oz Devil's Food Box Cake Mix (ignore box directions)
2 eggs
1/2 cup shortening (I use butter flavored Crisco, see notes)
1/2 cup real butter
1 1/2 cups powdered sugar
1 teaspoon vanilla

Steps:

  • For cookies, preheat oven to 350 degrees and line a baking sheet with parchment or a silicone baking mat and set aside.
  • Place cake mix in a bowl and add shortening and eggs. Beat until well combined into a smooth cookie dough. Use a cookie scoop to portion dough into round balls onto the cookie sheet (photos show a scoop that is 1 1/2 tablespoons and produces a cookie on the larger side).
  • Bake for about 10-12 minutes. All ovens cook differently so keep an eye on them. Edges should be set and tops nice and craggly. If your cookies are smaller than 1 1/2 tablespoons they will bake faster, more like 8-10 minutes.
  • Let cool on the baking sheet for about 5 minutes and then transfer to cooling rack. Cool completely before filling.
  • Frosting
  • Beat butter until soft and creamy. Add vanilla, and then powdered sugar a little at a time, beating until incorporated. Continue to beat for 1-2 minutes until super creamy and fluffy. If for any reason your frosting is too thick, you can add tiny amounts of milk or cream until it reaches consistency, but it should be fine as-is!
  • Scoop frosting into a zip-top bag and slice the corner off. Turn half of your cookies over with the bottom side facing up and then pipe your frosting on. Sandwich cookies together.
