EGG NOODLES

Egg Noodles image

Five ingredients are all you need to make these homemade egg noodles - perfect side that's ready in an hour.

Provided by Betty Crocker Kitchens

Categories     Side Dish

Time 1h

Yield 6

Number Of Ingredients 5

2 cups all-purpose* or whole wheat flour
1 teaspoon salt
3 large egg yolks
1 large egg
1/3 to 1/2 cup water

Steps:

  • In medium bowl, mix flour and salt. Make a well in center of flour mixture. Add egg yolks, whole egg and water to well; mix thoroughly. (If dough is too dry, mix in enough water to make dough easy to handle. If dough is too sticky, mix in enough flour to make dough easy to handle.)
  • Divide dough into 4 equal parts. On lightly floured surface, roll one-fourth of dough at a time into rectangle, 1/16 to 1/8 inch thick (keep remaining dough covered). Loosely fold rectangle lengthwise into thirds. Cut crosswise into 1/8-inch strips for narrow noodles, 1/4-inch strips for medium noodles or 1/2-inch strips for wide noodles. Unfold and gently shake out strips. Hang pasta on pasta drying rack or arrange in single layer on lightly floured towels; let stand 30 minutes or until dry. (If using pasta machine, pass dough through machine until 1/16 inch thick.)
  • Break strips into smaller pieces. In 6- to 8-quart saucepan, heat 4 quarts water (salted if desired) to boiling; add pasta. Boil uncovered 5 to 7 minutes, stirring occasionally, until firm but tender. Begin testing for doneness when pasta rises to surface of water. Drain pasta.

HOW TO MAKE HOMEMADE PASTA

How to Make Homemade Pasta image

Making homemade pasta in Italy is an ancient art: from the fresh pasta sheet you get tagliolini or tagliatelle, ravioli or tortellini and the everlasting lasagna. It does not take long to make a good fresh homemade pasta: 15-20 minutes for a nice smooth and elastic dough, 30 minutes of rest, 15 minutes to roll out... in about 1 hour fresh homemade pasta is ready

Provided by Recipes from Italy

Categories     pasta recipes

Time 1h

Yield 4

Number Of Ingredients 3

200 g (1 ½ cup) of 00 soft wheat flour
200 g (1 ½ cup) of durum wheat flour
4 eggs of at least 70 g (2,5 oz) each

Steps:

  • Place the flours on a work surface and create a hole with your hands. For those who are making homemade pasta for the first time we recommend using a bowl because the job will be easier. Split the eggs and put them in a bowl then pour the eggs into the hole.
  • With the help of your hands, mix the eggs with the flours, incorporating a little at a time, until everything is combined. Knead the pieces of dough together.
  • After ten minutes, make a big ball and wrap it in a cling film. Let it rest for 15/30 minutes.
  • Make sure that your pasta maker machine is clamped firmly to a clean surface. Dust your work surface with some durum wheat flour. Take a lump of pasta dough the size of a tennis ball and press it out flat with the palms of your hands. Roll the lump of pasta dough through the widest setting of your pasta machine. Remember to dust the pasta dough with durum wheat flour if you feel it's becoming sticky.
  • Fold the pasta dough in half and then again in half.
  • Roll again the sheet of pasta dough through the widest setting of the pasta machine. Repeat the process for 3/4 times. You have to work the dough till it's smoother. Finally, you can start to roll the dough through all the remaining settings of your pasta machine, from the widest to the narrowest.
  • So now you have long strips of fresh pasta dough that you can use for different types of pasta, like tagliatelle, tagliolini or lasagna.

PARMESAN NOODLES FOR TWO

Parmesan Noodles for Two image

I used to love the boxed side dish "Noodle Roni Parmesano." I hadn't seen it in store shelves for quite some time, so I played around until I came up with something close to it. As it is just me and my DS at home these days, I intentionally developed the recipe as a side dish for two (or a main course for one!) Although I haven't tried it, I would imagine the recipe would double easily enough.

DUMPLING NOODLE SOUP

Dumpling Noodle Soup image

Keep a package or two of frozen dumplings in your freezer for this warming weeknight meal. This recipe is loosely inspired by wonton noodle soup, but replaces homemade wontons with store-bought frozen dumplings for a quick alternative. The soup base, which comes together in just 10 minutes, is surprisingly rich and full-bodied, thanks to the trio of ginger, garlic and turmeric. Miso paste brings extra savoriness, but you could substitute soy sauce or tamari. Scale up on veggies if you like; carrots, peas, snow peas or mushrooms would be excellent additions. Any type of frozen dumpling works in this dish, making it easy to adapt for vegan, vegetarian or meat-loving diners.

Provided by Hetty McKinnon

Categories     weeknight, soups and stews, main course

Time 25m

Yield 4 servings

Number Of Ingredients 12

Kosher salt (Diamond Crystal)
6 ounces thin dried wheat, egg or rice noodles
1 tablespoon sesame oil
1 (2-inch) piece ginger, grated
2 garlic cloves, peeled and grated
1 teaspoon ground turmeric
6 cups vegetable stock
2 tablespoon white miso paste
16 ounces frozen dumplings (not thawed)
4 baby bok choy (about 12 ounces), trimmed and each cut into 4 pieces through the stem
1 small head broccoli (about 9 ounces), cut into bite-size florets
Handful of cilantro or chopped scallions, for serving

Steps:

  • Bring a large pot of salted water to a boil. Add the noodles and cook according to package instructions, until the noodles are just tender. Drain, rinse with cold water and drain well again. Divide them among four serving bowls.
  • Place the same large pot over medium heat, and add sesame oil, ginger, and garlic. Stir and cook for 30 seconds, until aromatic. Add turmeric, and stir for 15 seconds, until fragrant.
  • Pour the vegetable stock into the pot, then season with 1 teaspoon of salt. Cover and cook for 8 to 10 minutes on medium heat, to allow flavors to meld.
  • Remove the lid and add the miso paste, stirring constantly until it is dissolved. Taste, and season with more salt, if needed.
  • Increase the heat to medium-high, and carefully drop the dumplings into the broth. When they float to the top, add the baby bok choy and broccoli, and cook for about 2 minutes, just until the broccoli is crisp-tender.
  • Ladle the broth, dumplings, baby bok choy and broccoli into the four bowls over the noodles. To serve, top with cilantro or chopped scallions.

HOMEMADE PASTA

Homemade Pasta image

Guess what? You don't need a pasta machine or fancy pasta attachment for your mixer to make homemade pasta. I like to use whole eggs in my pasta dough because it makes it easier to work with and yields a more tender noodle.

Provided by Kardea Brown

Categories     main-dish

Time 2h40m

Yield 8 servings

Number Of Ingredients 4

5 large eggs, at room temperature
3 1/2 cups all-purpose flour, plus more for kneading
1 tablespoon olive oil
1 teaspoon kosher salt

Steps:

  • Combine the eggs, flour, olive oil, salt and 1 tablespoon water in the bowl of a food processor. Pulse until a dough forms, about 10 seconds. Remove the dough from the food processor to a lightly floured surface. Knead the dough until smooth and elastic, 4 to 5 minutes. Shape the dough into a ball; wrap with plastic and rest at room temperature for 30 minutes.
  • Cut the dough in half and keep one half refrigerated. Cut the remaining half into two equal pieces. (Make sure to keep the unused dough pieces covered.)
  • Working with one piece at a time, roll the dough with a rolling pin as thin as possible (but still thick enough to be lifted off the counter without breaking, about a 10-by-16- inch rectangle; the dough should be paper-thin, but you shouldn't be able to see through it.)
  • Dust each dough sheet with flour. Fold the dough in half (using the short ends) and dust the top with flour. Repeat twice more, dusting with flour between each layer to create a stack. Use a sharp knife to cut the dough into thin strips (1/4-inch wide).
  • Separate the noodles into "nests" and let dry on a lightly floured surface, about 1 hour. Repeat the process with the remaining dough piece, then with the remaining refrigerated dough.
