These homemade energy bars are healthy, delicious and easy to make! These no-bake oatmeal peanut bars date energy bars are perfect as healthy dessert, as a post workout snack or maybe as a snack to take to work or school. They are soft, free of refined sugar and packed with good nutritional value.

1¾ cups (160g) Rolled oats
12oz (340g) Pitted dates- about 15 large dates
1/2 cup (60g) Walnuts
1/3 cup (80g) Natural peanut butter
1/4 cup (40g) Dark chocolate chips (optional)
1/4 teaspoon Salt
2 tablespoons Chia seeds
1 teaspoon Vanilla extract

Steps:

  • Combine oats, peanut butter, ground flax seed, chocolate chips, honey, chia seeds, and vanilla extract together in a bowl. Cover and chill dough in the refrigerator 30 minutes.

Steps:

  • In a large microwave-safe bowl, combine peanut butter and honey. Heat, uncovered, until warmed, 20-30 seconds. Stir until smooth; add remaining ingredients and stir until combined. Transfer to a lightly greased 13x9-inch pan; gently press mixture into pan. Cover and refrigerate until set, 1 hour or overnight. Cut into bars.

5/8 cup honey
2 tablespoons whey protein

Steps:

  • Combine the peanut butter and honey in a large nonstick pot and warm over low heat until runny and mixed.
  • Mix in the oatmeal and protein powder.
  • Do not bake, but heat enough to mix nicely.
  • Press into a 9x9 inch pan and let cool (to make cutting them easier, you could stick the covered pan into the refrigerator for a few hours).

Steps:

¾ cup sweetened dried cranberries (such as Craisins®)
⅔ cup sunflower seeds
½ cup white chocolate chips
½ cup toasted sesame seeds
½ cup oat bran
3 tablespoons flax seeds
1 tablespoon ground cinnamon
1 teaspoon salt
1 ½ cups creamy natural peanut butter
1 cup honey
5 tablespoons olive oil

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine oats, sweetened dried cranberries, sunflower seeds, white chocolate chips, sesame seeds, oat bran, flax seeds, cinnamon, and salt in a large bowl. Stir in peanut butter, honey, and oil. Press mixture firmly into a 9x13-inch baking pan.
