Time 30m

Number Of Ingredients 5

1 (11.5 oz) bag milk chocolate chips
6 Tablespoons evaporated milk, divided
1 (7 oz) container Marshmallow fluff
1 (11 oz) bag of caramels, unwrapped
1 pound chocolate almond bark or milk dipping chocolate

Steps:

  • Add chocolate chips and 3 Tablespoons of evaporated milk to a microwave safe bowl. Microwave for 45 seconds, remove and stir. If your chocolate isn't melted, return to the oven and heat for 10 second intervals, stirring well after each time until the chocolate is completely melted.
  • Stir in the marshmallow fluff until completely combined.
  • Pour into an 8-inch square pan that is lined with parchment paper. Place in fridge to set up, while you melt the caramel.
  • Place caramels and evaporated milk in a microwave safe bowl and heat for 1 minute. Remove and stir. Repeat with 10 second intervals, stirring after each time, until the caramel is completely melted and smooth.
  • Pour caramel over the chocolate layer and place in the fridge for about 4 hours, or until they are completely set up.
  • Using the parchment paper, lift the candy out of the baking dish, and place on a cutting board. Cut into squares.
  • Melt almond bark, and using 2 forks, dip squares of candy in chocolate. Place on a lined baking sheet to set up.

Yield 8 serving(s)

Number Of Ingredients 3

2 cups marshmallow cream
1 cup chocolate chips, melted

  • In a medium-sized saucepan (I used a 2-quart pan), stir together the erythritol, agave, water, and salt, until evenly mixed. Place over medium-high heat and add a candy thermometer to the pot. Cook without stirring until it reaches 220 degrees Fahrenheit. While this is on the stove, put the egg whites in stand mixer bowl with whisk attachment. When the stovetop mixture reaches 260 degrees, start beating the egg whites on medium/high until stiff peaks form. When the temperature reaches 280 degrees, remove the pan from the heat.
  • Increase the mixer speed to high and VERY SLOWLY AND CAREFULLY drizzle the hot syrup into the whipping egg whites in a thin and steady stream. Beat until very thick and glossy (~8 minutes). In the last minute, add the vanilla paste.
  • Scoop the mixture into both brownie pans, trying to make them as even as possible. Spread the mixture out using an offset spatula. Place a sheet of parchment paper on top of each pan of nought. Press down with your hands to make sure it's flat and even. Let the nougat sit at room temperature overnight.

  • Place the chocolate chips in a microwave safe bowl. Microwave for about 45 seconds. Stir to completely melt all the chocolate. If you need to microwave further, do for very short periods – you do not want the chocolate the burn. Stir in the marshmallow fluff and the evaporated milk.
  • Pour this into an 8x8 pan that is lined with foil, and sprayed with non-stick spray. Place this in the fridge to harden while you work on the next step.
  • Put the caramels and the rest of the milk in a bowl, and microwave until they are melted. Start with 45 seconds, and then stir. If needed heat for longer, checking every 15 seconds. Once nice and smooth, pour over the chocolate mixture. Refrigerate for at least 4 hours.
  • Once firm, remove from the pan and cut into desired size. Melt the chocolate over a double boiler, and get to dipping! I set it on a baking sheet, and then placed it in the fridge to harden. Enjoy!
