2 teaspoons egg yolk
2 tablespoons imported mustard
4 teaspoons red-wine vinegar
1/2 cup safflower oil
1/2 cup olive oil
2 tablespoons finely chopped fresh herbs, such as basil, parsley and dill
Salt to taste, if desired
Freshly ground pepper to taste

Steps:

  • Put the egg yolk, mustard and vinegar in a mixing bowl. Start beating with a wire whisk while gradually adding the safflower and olive oils. Beat until thickened and smooth.
  • Beat in the herbs, salt and pepper.

1 tablespoon imported mustard such as Dijon
1 tablespoon white-wine vinegar
Salt to taste, if desired
Freshly ground pepper to taste
1 cup corn, peanut or vegetable oil
3 tablespoons horseradish, preferably freshly grated

Steps:

  • Put the egg yolk, mustard, vinegar, salt and pepper in a mixing bowl. Start beating briskly with a wire whisk and gradually add the oil until all of it is added.
  • Stir in the horseradish.

2 tablespoons finely chopped cornichons (small sour gherkins)
2 tablespoons finely chopped drained capers
1 tablespoon finely chopped shallots
1 cup olive oil
Salt to taste, if desired
Freshly ground pepper to taste

Steps:

  • Put the egg yolk, mustard, white-wine vinegar, parsley, tarragon, cornichons, capers and shallots in a mixing bowl.
  • Start beating with a wire whisk while gradually adding the oil. Beat until thickened. Add salt and pepper.
