HOMEMADE MANGO APPLESAUCE
Homemade canned applesauce tastes better when combined with sweet mango.

Steps:
- Core the apples. Peel if desired.
- Peel mango and cut into bite sized pieces.
- Cut apples into bite sized pieces.
- Add apples and mango to a large pot or Dutch oven. Add just enough water to keep fruit from sticking.
- Cook over medium heat, stirring occasionally, until fruit is soft.
- Transfer cooked fruit to a blender, food processor, or food mill.
- Process to desired consistency.
- Return to Dutch oven. Taste pureed fruit.
- Add honey if desired. Stir to mix well.
- Ladle hot sauce into pint jars.
- Cover with two-piece lids and process in a water bath canner for 20 minutes.
- Remove from canner and let cool overnight.
QUICK HOMEMADE APPLESAUCE - NO SUGAR ADDED
A quick, easy homemade applesauce recipe that I served with potato latkes this year. It has no added sugar, which makes it a better option for diabetics and low-carb people and others who avoid cane sugar. But if you prefer a sweeter sauce, add 1/2 cup of sugar. I recommend using 1/2 sweet apples (I like Braeburn) and 1/2 tart apples (Granny Smith, for example). Don't leave out the salt, it's a necessary ingredient for a good applesauce!

- Peel and core apples (I prefer to leave the skin on a few of them because I like the taste and texture). Cut apples into approximately 1 inch cubes.
- Add all ingredients to pot, and turn heat on high. Bring to a boil, then cover and reduce heat to low. Simmer for 20 minutes or until the apples have softened significantly.
- Stir frequently, making sure that the apples are not sticking to the bottom of the pot. Add more water if necessary. Remove lemon slices.
- Mash with a potato masher or use a food mill for a smoother consistency. Serve warm or at room temperature.

- Combine all ingredients except for almond extract, in crock pot or heavy pan.
- If using crock pot, set control to LOW and simmer 4-6 hours or until fruit is very soft. Remove crockpot cover, discard whole cinnamon stick if using, and if necessary, *mash any chunks of fruit with potato masher.
- Stir in almond extract. Adjust seasoning.
- For stovetop, bring fruit mixture to boil, cover and simmer on low 1 hour or until fruit is very soft. If any fruit chunks remain, *mash with potato masher. (Be sure to remove whole cinnamon stick first.) Stir in almond extract. Adjust seasoning.
- Serve applesauce warm or cold.
- Freezes well.
- *At this point, you could opt to use a hand held immersion blender to puree the fruit.

THE BEST HOMEMADE APPLESAUCE
After tasting the pure apple flavor of this homemade sauce, you just might never go back to the store-bought kind. Supermarket applesauce can be loaded with added sweeteners and flavorings. We use only a little sugar, plus lemon juice, salt and cinnamon, providing a balanced flavor and the perfect amount of sweetness.

- Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
- Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
- Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.

- Place raisins and hot water in a small bowl; set aside. , In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg. - Select & Buy a Fresh Apple. In fall, fresh apples are plentiful and inexpensive, as well as delightfully crisp, juicy, and flavorful. Look for firm fruit that's free of bruises and blemishes.
- Wash & Peel the Apple. Wash the apple with a mixture of three parts water and one part white vinegar to remove bacteria. Rinse under cool running water, dry, and peel.
- Core & Chop the Apple. Set the peeled apple, stem side up, on a clean cutting board. Slice in half. To remove the core, cup each apple slice in your palm and cut in a shallow scooping motion with a paring knife.
- Cook the Apple. Bring water to a boil in a medium-size saucepan. Reduce heat until bubbles are soft. Cook apple chunks until tender. Check apples after 10 minutes; it's important to minimize cooking time to help preserve vitamins and minerals.
- Puree or Mash the Apple. Puree in a food processor or blender until smooth. Add water as needed to reach desired consistency. For chunkier applesauce, which is ideal for babies 10 months or older, mash the cooked apple with a potato masher instead of pureeing it.
- Serve the Applesauce. Baby applesauce is extremely versatile. Serve it plain or mix it with another puree or two to introduce your baby to new flavors and textures.
- Refrigerate or Freeze Leftover Applesauce. Cool applesauce and refrigerate leftovers in BPA-free containers for up to 3 days. Freeze leftovers for up to 3 months.
