Steps:
- Start with clean fruit. Depending on what fruit you are using, hull the berries, pit the stone fruit, or trim rough ends from the rhubarb. Do not peel stone fruit, much flavor and color comes from the skins.
- Chop the fruit into bite sized pieces and add to a saucepan, along with the sugar. Add 1/4 cup water, and bring to a boil, stirring to dissolve the sugar. If your fruit is dry you may need to add a bit more water. Cook for about 5 minutes, just enough to soften the fruit.
- Puree the fruit using an immersion blender, a regular blender, or food processor.
- Add the fruit puree to the vodka and give it a stir. Let sit on the counter, covered, for 24 hours.
- Strain through a nut bag, or several layers of cheesecloth, squeezing to get all the liquid out. Discard the solids.
- Keep the liqueur in the refrigerator until needed. Note: these liqueurs need to be refrigerated because of the fresh fruit component, and should be consumed within 2 weeks.

Steps:
- Pour raspberries into a large jar and cover with sugar. Pour vodka over all and close with lid.
- Shake several times the first day until all of the sugar has dissolved.
- Store in a cool, dark place for a minimum of one month (I recommend 6 weeks, longer is fine too). Shake every day or two.
- When the liqueur is ready to be bottled, line a strainer with a couple of layers of cheesecloth, preferably butter muslin and place it over a large pot or bowl. Pour the liquor over the cheesecloth slowly letting the liquid drain while the strainer catches the solids. Repeat if necessary.
- When ready, store in bottles. I like to keep one in the fridge for an icy after dinner drink!

Steps:
- Combine the sugar and water in a large saucepan over high heat. Bring to a boil and let simmer for 10 minutes or until it begins to thicken. Stir the instant coffee into the sugar mixture and mix well. Remove from the heat. Add the vodka and vanilla bean to the coffee mixture. Mix well then let cool to room temperature. Transfer the kahlua to bottles and seal well. Let the mixture sit for 3 weeks before using. Turn the bottles daily to make sure the coffee has dissolved and no sediment forms. Strain the kahlua into other bottles and use like commercial kahlua.

CHERRY VODKA
Steps:
- Pit and halve the cherries. As in all vodka recipes, it is important that the flesh of the fruit be somehow exposed.
- Fill a jar with the cherries, but do not pack it. Pour the vodka on top and seal tightly. Leave in a dark place, preferably for at least 2 weeks-or up to 6 months. At the end of that time, open the jar and strain. If you have a very fine-mesh strainer, that will do. If not, use an ordinary strainer lined with a cheesecloth or even a coffee filter. Set the strainer over a large bowl, ideally one from which you'll be able to easily pour afterward. Pour the vodka mixture through the strainer and allow the fruit to sit, seeping liquid, for a good hour or so, stirring a bit and pressing if need be to make the liquid go through.
- Now taste the vodka. Add sugar if you want an after-dinner liqueur, or leave it out if you want something sharper. Pour (or ladle) into a decorative bottle.

- Picking Ingredients Choose the ingredients you want to ferment into vodka. Vodka is commonly made from wheat, rye, barley, corn, or potatoes.
- Making Different Mashes Try a wheat mash. In a 10 gallon (38 L) metal pot with lid, heat 6 gallons (23 L) of water to about 165° F (74° C).
- Fermenting the Alcohol Clean all your utensils and prepare the area properly. Fermentation is conducted in clean, sanitized vessels that are sometimes open but often sealed from the air to prevent cross-contamination.
- Picking a Still Use a column still if possible. Column stills are more complex and sophisticated than pot stills. They can be purchased or, depending on the still design, built using readily available materials.
- Distilling the Alcohol Get ready for distillation. Stills heat the fermented, relatively-low alcoholic wash to a temperature that is greater than the boiling point of alcohol, yet less than the boiling point of water.
- Adding the Finishing Touches Filter the vodka through carbon. Pass the distillate through an activated carbon filter, such as those available at homebrewing shops, to remove unwanted volatile flavors and aromas.
10 DELICIOUS AND EASY HOMEMADE LIQUEUR RECIPES
From thespruceeats.com
- Replace the Kahlua. Coffee liqueurs like Kahlua and Tia Maria are among our favorite spirits in the bar. They're so useful, too. One bottle can give you a variety of cocktails, from the black Russian to the midnight martini.
- The Ever-Useful Amaretto. Amaretto is another liqueur that we use all the time in the bar. Without it, we wouldn't be able to make great cocktails like the toasted almond.
- Irish Cream Makes a Great Gift. Put down that bottle of Baileys and grab a bottle of Irish whiskey instead. It's time to make your own Irish cream. This is a quick homemade liqueur and it's a favorite gift for the holidays.
- Sweet, Delicious Limoncello. Limoncello is a very sweet lemon-flavored liqueur and it is used to create some delicious cocktails. If you enjoy a zesty dessert drink the likes of the lemon cake or in & out lemontini, try it with your own limoncello.
- Let's Get Peachy. When peach season hits, grab a couple extra pounds and make your own peach liqueur. It's sweet, fruity, and a delicious alternative to commercial schnapps for any of your favorite peach cocktails.
- The Liqueur for Cranberry Season. Though it's best with fresh cranberries, you can use the frozen variety for this tasty liqueur. That means there's no reason to wait for cranberry season to mix up an amazing crantini.
- The Sweet Taste of Lychee. Lychee is a fun tropical fruit that made its way into the cocktail scene in the early 2000s. While most of the commercial liqueurs have come and gone, you can still get a taste of it with a homemade lychee liqueur.
- Slow Down With Sloe Gin. Sloe gin is an old-fashioned liqueur made from sloe berries. A few decades ago, you could find it in many bars because it was used in fun drinks like the sloe gin fizz.
- Try a Walnut Liqueur. If you're a fan of nutty liqueurs like Frangelico, a homemade nocino may be the right liqueur for you. This is an Italian favorite that is made from walnuts that have yet to ripen, so it's a very seasonal recipe.
- Get Fancy With an Italian Amaro. When it's time to really get serious about your homemade liqueurs, give a bottle of old-fashioned Italian amaro a try.

- Amaretto. Let's start with Amaretto. If you like almond flavor, you probably would like this Amaretto recipe. I like the fact that it isn't over-the-top sweet.
- Kahlua. My Uncle Bill made wonderful Kahlua, and he gave me his recipe, which I treasure. It is great on its own, or in coffee, or with a little added cream.
- Cherry Liqueur. If you like cherry-flavored things, this Cherry Liqueur recipe will not disappoint. I could hardly wait for cherries to go on sale so that I could start this recipe.
- Peach Liqueur. Peaches are on sale now, and this recipe needs to age, so it's a great time to try this Peach Liqueur. My dad will love this, and remind of him of a time when he picked peaches as a teen outside Sacramento.
- Nocino. This one's for Wise Bread's own Meg Favreau, who actually told me she has the makings for this already. If you can get some green walnuts, try Nocino — a spicy, sweet walnut liqueur.
- Limoncello. My pal Anne went to Italy and brought back a bottle of Limoncello for us. It's so refreshing, especially after a heavy meal. I don't believe I'll be traveling to Italy anytime soon, but that doesn't mean I'm deprived.
- Apple Liqueur. My husband spent some time in Germany and suggested we try to make Apfelkorn, which he loved while he was there. Apfelkorn is technically a schnapps but he said this Apple Liqueur was a great substitute.
- Anisette. I love the flavor of licorice so had to try this Anisette recipe. Star anise stars as the licorice flavor, ably supported by vodka and simple syrup.
- Chocolate Liqueur. If you have ever tried Godiva's Chocolate Liqueur, you will be happy about this copycat recipe. You can use it in dessert recipes or just sip on its own, which is exactly what I like to do.
- Irish Cream. If you procrastinated about making one of these liqueurs ahead of the holidays, don’t despair! You can still whip something up. What I love about this copycat recipe for "Bailey's" Irish Cream is that it doesn't need to be aged!
