If you haven't tried making your own homemade low carb gumdrops, you are missing out! This sour lemon gumdrops recipe comes together in just a few minutes and tastes much better than the store-bought ones made with artificial flavors and tons of sugar. And they are very kid-friendly!

1/2 cup lemon juice ((from a bottle is fine))
1/2 cup water
2 tbsp powdered sweetener
3 tbsp gelatin
1/2 cup erythritol
1 tsp citric acid ((food grade, granular))
8 drops yellow food coloring (optional)

Steps:

  • Mix the lemon juice, water and sweetener in a small saucepan over very low heat.
  • Slowly add the gelatin a little at a time, while stirring.
  • If you have any chunks, continue to stir until they melt and break down.
  • Strain the mixture through a wire sieve and into a measuring cup or another vessel with a pouring spout.
  • Pour the mixture into silicone molds and put in the fridge to set.

This is an old recipe from my childhood. Many people have memories of cutting this candy with their mother's and grandmothers. I have passed it on and am now posting here for all to share in this classic Christmas tradition!

Number Of Ingredients 6

2 cups white sugar
1 cup water
¾ cup light corn syrup
½ teaspoon peppermint extract
1 drop red food coloring
⅛ cup confectioners' sugar

Steps:

  • In a heavy 2 quart saucepan, combine the sugar, water and corn syrup. Cook, stirring constantly until the sugar is dissolved; then cook without stirring, lowering the heat and cooking more slowly during the last few minutes, to the hard crack stage (300 degrees F), If sugar crystals form on sides of pan, wipe them off with a damp brush.
  • Remove from heat, add oil flavoring and enough food coloring to color; stir only to mix. Pour into 2 well buttered 9 inch pans. Set one pan of candy over a sauce pan containing hot water (unless you have a helper to help cut the candy). As soon as the other pan of candy is cool enough to handle, cut it with scissors into 1-inch strips. Then snip the strips into pieces. Work fast. Drop the pieces onto a buttered baking sheet. If the candy cools too quickly, set it on a saucepan over hot water to soften it, but if it gets sticky, return at once to the work counter.
  • Toss in a small amount of powdered sugar to keep from sticking together. Repeat with the second pan of candy.

Homemade lemon drop candies give you a zesty flavor pop anytime you need a break. They're made with real lemon juice and zest for authentic taste.

2 1/4 cups sugar
1/2 lemon (juiced and zested)
3 drops yellow food color (optional)
2/3 cup water
2 tablespoons honey
icing sugar (to dust)

Steps:

  • Juice and zest the lemon with a fine grater.
  • Measure the water and sugar into a saucepan over a medium low heat.
  • Heat, stirring, until the sugar dissolves.
  • Add the lemon zest and bring to a rolling boil. If you have a candy thermometer, it should read 250 Fahrenheit.
  • Remove the saucepan from the heat. Add the lemon juice, honey, and food coloring if desired. Stir together.
  • Return to the heat until the mixture comes to another boil.
  • Strain out the lemon rind (or leave it in as you like). Pour the candy mixture onto a lightly greased baking tray.
  • Allow it to cool for a few minutes, just until it's cool enough to touch.
  • Use a spoon or clean fingers and pull out small pieces one at a time. Roll into a ball and dust with icing sugar.

Homemade Sour Hard Candies

8 lemons (1 cup freshly-squeezed juice)
1 cup sugar

Steps:

  • Squeeze lemons until you get 1 cup of fresh juice.
  • Combine lemon juice and sugar and stir to dissolve.
  • Boil mixture until thick and syrupy-about 20-30 minutes, stirring regularly. Test the syrup by dropping a small bit into cold water-if it crystallizes and becomes brittle, it's ready!
  • Spray down a mini muffin tin or silicone mold with cooking spray and add heated mixture to the tin/mold. Fill each mini muffin cup less than halfway full, or fill small silicone molds about ¾ full. (I used a cooking syringe to help transfer my syrup into the silicone molds.)
  • Transfer filled molds to the fridge to cool until hardened, ~1-2 hours.
  • Pop out and enjoy!
  • Yields 30 homemade lemon drop hard candies.
