It's simple to make your own homemade almond milk ice cream with this recipe. It only takes 10 minutes to prepare! This recipe works great as a dairy-free ice cream base to make your family's favorite flavor variations!

2 cups unsweetened almond milk
1 large egg (whipped)
1 tablespoon vanilla extract
1/2 pouch grass-fed gelatin (about ½ tablespoon)
3/4 cup low carb sugar substitute
1/2 teaspoon sea salt

Steps:

  • Combine the almond milk, whipped egg, vanilla extract, gelatin, sweetener, and sea salt in medium saucepan over medium heat.
  • Let the mixture cook until it begins to steep (strands of steam form on top of the heated liquid).
  • Transfer the liquid to a heat-safe container and place it into your fridge for 60 to 70 minutes so the liquid can cool.
  • After the base has cooled, pour it into a prepared, chilled ice cream maker and let it churn for 25-30 minutes.
  • Last, put soft churned ice cream into a freezer safe container, cover it, and let it freeze for at least 4 hours before serving.

1 cup raw almonds
1 whole vanilla bean
2 dates, pitted
1 pinch sea salt
4 cups water

Steps:

  • Place almonds and vanilla bean in a bowl; add enough water to cover completely. Place dates in a separate bowl and add enough water to cover completely. Soak almonds and dates at room temperature, 8 hours to overnight.
  • Drain and discard soaking water from almonds and rinse almonds thoroughly. Drain water from dates and keep water to add to the almond milk, if desired.
  • Combine soaked almonds, vanilla bean, dates, and sea salt in a blender; pour in 3 cups water. Blend on high for 1 minute. Let sit to allow foam to subside, about 1 minute. Add remaining 1 cup water and some of the date water for extra sweetness; blend until almond milk is smooth, about 1 minute.
  • Place a nut milk bag in a quart-size measuring cup or large bowl. Pour almond milk into the bag and lift to drain. Gently squeeze the bag to extract as much milk as possible. Store almond milk in the refrigerator.

Steps:

  • Combine milk, sugar, and vanilla in a medium bowl. Stir till sugar is dissolved.
  • If using Ice Cream Machine: Add milk mixture to an ice cream machine and process 20 minutes or until mixture thickens. Pour into tupperware and freeze 8 hours or overnight. Consistency may improve by stirring every 4 hours or so until fully frozen.
  • If not using Ice Cream Machine: Pour into shallow freezer-proof dish and put in freezer. Stir every 2-4 hours once crystals form. Follow above directions for freezing.

When it comes out all frozen, let it sit for a few minutes in the sun and then stir it up, it is much more like ice cream at that point. Even better, you can make as much as you want at a time :) For the flavorings, add to your taste, obviously if you choose fresh fruit you may want more than an extract flavoring. Cooking time is actually time to freeze.

1 cup milk, any kind
1 teaspoon artificial sweetener (or sugar)

Steps:

  • Choose a bowl or ceramic mug, any container that can be frozen and will hold as much as you make. If its tupperware and you choose to use the lid, remember it will be harder to remove when frozen, otherwise use plastic wrap. (told you this is easy :) ).
  • Mix all ingredients in the bowl. Cover with plastic wrap.
  • Place in the freezer overnight.
  • Next day, let it sit in sun for a few minutes then stir it and you will have ice milk. Until then it just looks like frozen ice lol.

A dairy-free chocolate ice cream based with almond milk, dutch process cocoa powder, egg yolks, and organic sugar. Super delicious and so easy.

3 cups unsweetened almond milk
6 large egg yolks
3/4 cup sugar
1/3 cup quality, unsweetened cocoa powder ((such as Dutch process))
1/4 tsp xanthan gum ((for thickening))
1 1/2 tsp pure vanilla extract

Steps:

  • Add cocoa powder and half of the almond milk to saucepan over medium heat and whisk vigorously to combine. Add remaining almond milk and bring mixture to a simmer, stirring occasionally, then remove from heat after 2-3 minutes.
  • To a large mixing bowl, add the egg yolks and whisk until they lighten in color. Gradually add the sugar in small increments while whisking vigorously so the two emulsify. You'll know you're done when it's thick and you achieve a ribboning effect - the mixture will form a ribbon when held from the whisk over the bowl (see picture).
  • Next, scoop in roughly 1/3 cup of the warm chocolate-almond milk mixture and whisk to combine, in order to temper the eggs (amount as original recipe is written // adjust if altering batch size). Add remaining liquid slowly and mix until completely combined.
  • Add xanthan gum to the mixture through a sifter and mix once more. This is not necessary, but will help the ice cream thicken.
  • Lastly, add the vanilla extract and stir once more. Then cover and refrigerate overnight or for at least 6-8 hours until completely cooled. Don't forget to chill your ice cream maker canister overnight as well.
  • Once chilled, pour the mixture into the pre-chilled ice cream container and prepare according to manufacturer's instructions. It should take 20-30 minutes.
  • Either consume immediately as "soft serve" consistency, or freeze, covered for 6-8 hours in a freezer-safe container to harden. Let set out for 10-15 minutes before scooping.

2 cups raw unsalted almonds, soaked overnight in enough water to cover the almonds
6 cups water
3 fresh Medjool dates, pitted
2 teaspoons good quality pure vanilla extract
Pinch of sea salt

Steps:

  • Drain and rinse the almonds, discarding the soaking water. Rinse.
  • In a high speed blender, combine the rinsed almonds, fresh water, dates, vanilla and a pinch of sea salt. Blend on high for 1-2 minutes.
  • Strain using a nut bag or clean tea towel, squeezing all the liquid into a large clean bowl. Transfer to a glass bottle and refrigerate.
  • Will keep, refrigerated, about a week. Shake to combine before using.
