- Whisk in half of the chopped chocolate until melted, then whisk in the remaining chocolate until smooth. Remove from the heat and whisk in the vanilla. Pour into mugs and top with marshmallows or whipped cream.
HOMEMADE HOT CHOCOLATE
Hot-chocolate mix is a wintertime staple. A homemade version is delicious and natural-containing only cocoa, sugar, and salt-and especially economical compared with store-bought mixes.

Steps:
- In a large bowl, combine sugar, cocoa, and salt, and whisk to combine well. Store the mixture in an airtight container.
- For individual servings, pour 1 cup whole milk into a microwave-safe mug, and microwave on high just until hot. Add 2 tablespoons of cocoa mix, and stir to dissolve. For a larger batch of cocoa, warm the milk in a saucepan set over medium-low heat, taking care not to let the milk boil; as it warms, stir in 2 tablespoons of mix for each cup of milk.

HOMESTYLE HOT COCOA
Growing up in snowy Canadian winters, my mom would always make my brothers and me hot cocoa after a night of tobogganing. When I got older - and had long since abandoned real cocoa for the instant variety - I had a craving one night for a more wholesome treat. Here's my recipe for a creamier, homestyle cup of cocoa. Perfect for those snowy winter nights!

HOT COCOA MIX
I make this at the beginning of the cold weather, and have it ready all winter. Vary the flavor of your mix by trying flavored nondairy creamer; I like the cinnamon.

SIMPLE HOT COCOA FOR ONE
As with hot chocolate, use any milky liquid you prefer, whether it's from a cow, nuts (almond milk), beans (soy milk), or grains (rice milk). For sweeteners, feel free to substitute maple syrup, honey, or agave nectar for sugar, but start with less, about 1 tablespoon, and taste the combination before adding more.

- Old-Fashioned Hot Chocolate. One of the first recipes that you will want to try is old-fashioned hot chocolate. It is simple, takes just a few more minutes than a packet of cocoa, and is delightfully lush and creamy.
- Authentic Mexican Hot Chocolate. Also called chocolate caliente, Mexican hot chocolate requires a particular type of chocolate. Chocolate de mesa (or "table chocolate") is dark cacao flavored with sugar and cinnamon, and the spice instantly upgrades the drink.
- Viennese Hot Chocolate. The word "luscious" can barely begin to describe Viennese hot chocolate. It is rich and thick and requires just three common ingredients.
- Spanish Hot Chocolate. These thick hot chocolate recipes are the epitome of "drinking chocolate" and are often served in small cups. Spanish hot chocolate is among the densest and it's nearly a national drink in Spain.
- Dutch Hot Chocolate. Called warme chocolademelk, Dutch hot chocolate is a classic recipe from the Netherlands. It uses two types of chocolate—dark chips and Dutch cocoa—and doesn't skimp on the milk.
- El Submarino. El submarino comes from Argentina, and it's a fun, interactive way to enjoy hot chocolate, especially with kids. For this recipe, you'll hold off on the chocolate and simply warm milk, sugar, and vanilla.
- French Hot Chocolate. Chocolat chaud is the French take on hot chocolate. The French hot chocolate recipe is similar to others, though it's unique because it uses both water and milk.
- Iced Hot Cocoa. Iced coffee is excellent, but have you tasted iced hot cocoa? It's just as satisfying and a perfect way to get your chocolate fix on a warmer day.
- Hot Chocolate Mix. Making hot chocolate mix from scratch is unbelievably simple. It's a mix of a few common dry ingredients, including powdered milk, sugar, and cocoa powder.
- Keto Hot Chocolate Mix. The keto hot chocolate mix skips the sugar, opting for an allulose or monkfruit sweetener instead. It's also dairy-free and vegan because it uses powdered coconut milk; be sure to mix it with hot water or plant-based milk.
