SESAME HONEY CANDY

Steps:
- In a saute pan, toast the seeds over medium heat for 2 minutes until golden (the pumpkins will pop). Combine the water, honey, and sugar in a saucepan. Over high heat, bring the syrup to 240 degrees F. Add the seeds and bring the syrup to hard crack (250 degrees F). Spritz a cookie sheet with non-stick spray and pour the syrup onto it. After a few minutes, score the candy into 2 by 1/2-inch bars. Let harden, and then cut into bars.
HONEYCOMB CANDY
Steps:
- In a large saucepan, gently combine the sugar and water then add the honey and corn syrup. Boil until amber colored and the sugar looks like caramel. Add the baking soda, and with a wooden spoon, stir in gently. It will foam up a lot. Pour the mixture onto a silpat or a piece of parchment paper on a sheet pan, and let cool. Break into pieces.
HOMEMADE HONEY
I have not tried this, but found it a fascinating recipe. If anyone prepares this, do let us know the results!

Steps:
- In a large saucepan, bring water, sugar and alum to a boil and boil for 10 minutes.
- Take off heat.
- Rinse off blossoms in strainer and drain well (be sure not to leave any green parts on blossoms or honey will be wild or grassy tasting).
- Stir in blossoms and steep for 3 hours.
- Remove flowers, strain through cheesecloth if necessary.
- Reheat to a boil, then pour into jars and seal.
HOMEMADE HONEY CANDY

- Combine the first 3 ingredients and cook slowly on medium heat until it forms a hard ball when you drop it into ice water. It took me about an hour. As the mixture gets close to being done, the bubbles from the boil will get a lot smaller and closer together. Pour the mixture onto a buttered cooking sheet. When cooled, pull with buttered hands. Stretch, twist and pull until firm (this is the fun part! ;)) and then form into long ropes and place on waxed paper. Cut into bite size pieces. If you want, you can roll them in powdered sugar and wrap them in wax paper.
BIT O' HONEY CANDIES
One of my favorite candy bars when I was little, and still today! These are nice cut into bite-sized pieces, then wrapped. A lot easier to eat!

- Melt honey and peanut butter together in microwave. Add dry powdered milk and knead well. Roll out on wax paper. Cut in strips and roll. Wrap in wax paper to store.
