HOW TO MAKE HASH BROWNS
Looking for a recipe for hash browns that don't taste like raw potato? These are crispy on the outside yet perfectly cooked on the inside.

Steps:
- Scrub potatoes and place in stockpot. Do not peel or remove brown spots. Parboil the potatoes by placing them in a large pot. Cover the potatoes with cold, salted water and bring to a boil. Boil for 10 minutes.
- Drain and rinse potatoes with cold water until easy to handle. Remove any bruised or brown spots with a knife. Using a box shredder or food processor, shred potatoes.
- Melt butter in a large nonstick skillet or griddle over medium heat or 350 degrees. Place potatoes in an even layer over the butter and cook until a golden-brown crust forms on the bottom (5-7 minutes). Flip potatoes and cook until crust forms on the other side.
- Remove from heat and serve immediately.

- Peel and grate the potatoes.
- Drop shredded potatoes into a large bowl of ice water to remove surface starch.
- Preheat oven to 400°F (200˚C).
- Strain or squeeze potato shreds and transfer to a large bowl.
- Add butter, cheese, eggs, chives, garlic salt, oregano, and pepper in with the shredded potatoes. Mix together.
- Take a handful of the mixture and pack it on a baking sheet into desired hash brown shape.
- Bake for 40-45 minutes or until brown and crispy.
- Allow to cool for 5 minutes. Serve warm.

- Rinse shredded potatoes until water is clear, then drain and squeeze dry. Place shreds in a bowl, and mix in the onion, flour and egg until evenly distributed.
- Heat about 1/4 inch of oil in a large heavy skillet over medium-high heat. When oil is sizzling hot, place potatoes into the pan in a 1/2 inch thick layer. Cover the whole bottom of the pan, or make separate piles like pancakes. Cook until nicely browned on the bottom, then flip over and brown on the other side. It should take at least 5 minutes per side. If you are cooking them in one big piece, it can be cut into quarters for easier flipping.
- Remove from pan, and drain on paper towels. Season with salt and pepper and serve immediately.

- Stir together egg, salt, garlic powder, paprika, and pepper in a large bowl. Add potatoes and cheese, and stir to combine. Sprinkle with flour, and toss to coat.
- Heat 1 tablespoon of the oil in a large nonstick skillet over medium-high. Add 3 heaping spoonfuls of potato mixture to skillet (about 1/3 cup per patty), and press gently with spatula to flatten. Cook until golden brown and crisp, 3 to 4 minutes per side. Transfer patties to a plate lined with paper towels, and repeat in 3 more batches with remaining potato mixture and oil. Serve immediately.

- Peel the potatoes and discard the skins, placing the potatoes in a bowl of cold water to keep them from discoloring.
- Meanwhile, bring 3 cups of water to a boil with the salt and sugar in a medium saucepan. When the water is boiling, grate the potatoes through the large hole of a box grater and add them to the boiling water. Cook for three minutes.
- Remove the potatoes to a strainer and run them under cold water to stop the cooking process.
- Transfer the potatoes to a cheesecloth-lined strainer and squeeze out most of the excess water. There should be some water remaining to help bind with the flour, but the potatoes should not be dripping wet.
- Place the strained potatoes in a medium bowl and mix with the rice flour, corn flour, onion powder, and white pepper.
- Form four patties about 1/4 cup each and shape them into large ovals.
- Freeze the patties for one to three hours, until they're hardened all the way through.
- In a large sauté pan, heat an inch of oil over medium-high heat until it's shimmering.
- Carefully add the potato patties to the hot oil, splitting them into two batches if necessary to avoid overcrowding the pan.
- Flip the hash brown halfway through, cooking for 4 to 5 minutes per side until they're golden brown and crispy on both sides.
- Remove the hash brown to a paper towel-lined plate.
- Serve hot.

- Take your potato and grate into a large bowl of icy cold water. Swirl the potato around and around with your fingertips until the water turns cloudy.
- In a colander or sieve, drain the potato and then add to the middle of a fine cloth or mesh. Squeeze as much water out as you can.
- Add the egg and seasoning. Using a large spoon mix all of the ingredients together
- Heat a pan with the oil, over a medium to high heat. Take small handfuls of your McDonald's hash brown mixture, and in the palm of your hand make it into the desired shape.

- Add grated potato to a mixing bowl and pour in cold water. Swish around with your hands and squeeze the potato to help remove the starch.

- 1. In a large bowl, combine shredded potatoes, flour, eggs, cheese and onion.
- 2. Add oil to large frying pan or skillet and bring to medium heat. There should be enough oil to cover the bottom of the pan.
- 3. Using a 1/2 cup measuring cup, scoop potato mixture. Press down to create a patty.
- 4. Add 3 patties to pan. Fry for 3 to 4 minutes on each side or until crust is golden brown.
- 5. Remove patties from pan and place on a paper towel lined plate. This will allow some of the grease to drain off.
- 6. Salt to taste.
- 7. Repeat steps 3-6 as needed. You may need to add more oil to the pan.

I recommend working fairly quickly as the longer you leave the patties the more wet they get.
- Add 2 tbsp vegetable oil and 1 tbsp butter to a large non-stick pan over medium-high heat. Add patties and fry for 3-5mins each side OR until golden brown and crispy.
