Hamburger buns
Lettuce

Steps:

  • Combine ground beef, pepper, salt, mustard and Worcestershire sauce.
  • Gently form mixture into 8 patties.
  • Heat grill or skillet to high.
  • Cook patties 2-3 minutes per side (if you make them thicker, you'll need to cook them longer)
  • Serve on grilled hamburger buns with lettuce, tomato, cheese and onions. Pickles if you must.
  • Devour!

1 lb lean ground beef or 1 lb ground chicken
1 medium onion, peeled
1 medium potato, peeled
2 eggs
1/2-1 cup breadcrumbs or 2 -3 slices bread, cut or torn into small pieces (may need more or less)
salt and pepper

Steps:

  • Grate the potato and then the onion in a large bowl.
  • Add 1 of the eggs and mix with spoon or hands (you can add the salt and pepper at this time if you like).
  • Add the beef (or chicken) and the other egg, mix until well blended.
  • Add the breadcrumbs until the mixture sticks together but is not too dry.
  • Remember to add salt and pepper.
  • Shape mixture into 4 patties, each about 3/4-inch thick.
  • You can bbq, fry or broil the burgers for 10-15 minutes.

1 tablespoon Dijon mustard
1 teaspoon paprika
½ teaspoon onion powder
½ teaspoon garlic powder

Steps:

  • In a large bowl, mix together the egg, Dijon mustard, paprika, onion powder, garlic powder, salt and pepper. Add the ground beef and breadcrumbs, and use your hands to mix until combined.
  • Gently shape the mixture into 4 patties, about ¾ inch in thickness. Use your thumb to press down in the center of each patty to create an indent.

½ cup crushed saltine crackers (or Panko breadcrumbs)
1 large egg
2 tablespoons Worcestershire sauce
2 tablespoons milk
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon black pepper

Steps:

  • Set out a large mixing bowl. Add in the ground beef, crushed crackers, egg, Worcestershire sauce, milk, salt, garlic powder, onion powder, and pepper. Mix by hand until the meat mixture is smooth, but stop once the mixture looks even. (Overmixing can create a dense heavy texture.)
  • Press the meat down in the bowl, into an even disk. Use a knife to cut and divide the hamburger patty mixture into 6 - 1/3 pound grill or skillet patties, or 12 thin griddle patties.
  • Set out a baking sheet, lined with wax paper or foil, to hold the patties. One at a time, gather the patty mix and press firmly into patties. Shape them just slightly larger than the buns you plan to use, to account for shrinkage during cooking. Set the patties on the baking sheet. Use a spoon to press a dent in the center of each patty so they don't puff up as they cook. If you need to stack the patties separate them with a sheet of wax paper.
  • Preheat the grill or a skillet to medium heat. (Approximately 350-400 degrees F.)
  • For thick patties: Grill or fry the patties for 3-4 minutes per side.
  • For thin patties: Cook on the griddle for 2 minutes per side.
  • Stack the hot patties on hamburgers buns, and top with your favorite hamburgers toppings. Serve warm.

1 1/2 teaspoons ground black pepper
1 teaspoon salt
2 teaspoon paprika

6 buns (, toasted, if desired)

Steps:

  • Make burger seasoning by combining all spices in a bowl. Set aside.

2 pieces white sandwich bread, crusts removed and cut into ¼-inch pieces
⅓ cup milk
2½ teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 garlic cloves, minced
1½ tablespoons Worcestershire sauce
2 tablespoons ketchup
3 pounds 80 to 85% lean ground beef
3 scallions, white and green parts, very finely sliced (optional)
8 hamburger buns

Steps:

  • Preheat the grill to high heat.
  • In a large bowl, mash the bread and milk together with a fork until it forms a chunky paste. Add the salt, pepper, garlic, Worcestershire sauce and ketchup and mix well.
  • Add the ground beef and scallions and break the meat up with your hands. Mix everything together until evenly combined. Divide the mixture into 8 equal portions and form compact balls. Flatten the balls into ¾-inch patties about 4½ inches across. Form a slight depression in the center of each patty to prevent the burgers from puffing up on the grill.

Spice Mix, optional, recipe follows
1 tablespoon vegetable oil
4 slices cheese, such as Cheddar, American, Saga blue cheese, and Swiss, optional
4 soft hamburger-style buns, split
4 slices beefsteak tomatoes, optional
Assorted lettuces and greens, such as iceberg, romaine, or watercress
Assorted mustards, such as whole-grained, Dijon, or French's, optional
Mayonnaise, optional
Ketchup, optional
1 tablespoon Worcestershire sauce
2 teaspoons garlic powder
2 teaspoons onion powder
Hot Sauce, to taste

Steps:

  • Preheat the oven to 450 degrees F. Place a roasting rack on a foil-lined baking sheet in the oven.
  • Using your hands, break the meat into small pieces and combine evenly but loosely on a parchment or waxed paper-lined baking sheet. Spread the meat out and season it generously with salt and pepper. If desired, add the spice mix at this time.
  • Divide the meat into 4 portions (about 6 ounces each). Using your hands, form each portion into a ball-shape by gently tossing it from 1 hand to the other. (Don't over work or press too firmly on the meat.) Gently form each portion into a patty about 3 1/2 inches wide and 1-inch-thick.
  • Preheat a large cast iron skillet over medium-low heat for 5 minutes. Raise the heat to high and add the oil. Add the patties and cook, turning once, until well-browned, about 2 minutes each side.
  • Using a spatula, transfer the hamburgers to the roasting rack in the oven and continue cooking to desired doneness, 8 to 9 minutes for medium-rare, 10 to 11 minutes for medium, and 13 to 15 minutes for well-done. If you are using the cheese, top the hamburgers during their last couple of minutes of cooking to melt.
  • Transfer the hamburgers to a plate, let rest for a couple minutes before serving. Meanwhile, toast the hamburger buns. Assemble the hamburgers with the condiments and toppings of your choice. Serve.
  • When cooking on a countertop grill, turn on grill, then place burgers on the heated grill.
  • Timing for a countertop grill:
  • For Medium-Rare: Cook for 3 minutes covered and then unplug the machine and continue to cook covered for 2 to 3 more minutes.
  • For Medium: Cook for 4 minutes covered and then unplug the machine and continue to cook covered for 4 more minutes.
  • For Well: Cook for 5 minutes covered and then unplug the machine and continue to cook covered for 5 more minutes.

1 cup Onion Slices - Sauteed
3 leaves Romaine lettuce or chopped kale
2 cup Tomato
3 oz Cheddar cheese
3 rolls Whole wheat bread or roll

Steps:

  • 1)Finely chop and quickly saute the red onion (3-4 mins on med heat). Set aside.
  • 2)In a bowl, place the hamburger patty ingredients (all but the beef): sauteed red onions, finely chopped rosemary and garlic, bread crumbs, egg, worchester sauce, olive oil, salt and pepper. Mix well.
  • 3)Add the ground beef to the bowl.
  • 4)Blend thoroughly, gently and quickly - with a wooden spoon or with your hands.
  • 5)TIP: avoid over-mixing which can make your hamburgers tough.
  • 6)Form into three (3) 4" patties.
  • 1)Prepare the toppings: thinly slice the white onions; slice the tomato and the cheddar cheese; wash and dry the romaine lettuce.
  • 1)In a skillet on medium heat, warm the olive oil, and then place the patty. Cook each side for 2-3 minutes. Melt the cheese on top once you flip the burger.
  • 2)Once your patty is cooked, set aside. Quickly saute the sliced white onions in the pan with the fond and flavorings from the beef patty.
  • 3)If desired, toast your bread or roll.
  • 1)Layer your burger: roll "bottom", condiment(s) of your choice, lettuce, cooked hamburger patty, tomato, sauteed onions and roll "top."
