HOW TO MAKE & FREEZE HOMEMADE TOMATO SAUCE

How to Make & Freeze Homemade Tomato Sauce image

Preserve summer's bounty! It's easy to make and freeze this large-batch Italian tomato sauce to enjoy all fall and winter long.

Provided by Oh My Veggies

Categories     Sauce

Time 3h30m

Number Of Ingredients 9

10-11 pounds fresh tomatoes
6 tablespoons olive oil
3 medium onions (diced)
6 garlic cloves (minced)
2 4-ounce cans tomato paste
1-3 teaspoons sugar or honey (to taste (optional))
1/2 cup chopped fresh herbs or 2 tablespoons dried Italian herbs
1 tablespoon salt (plus more to taste)
1/2 teaspoon Black Pepper (plus more to taste)

Steps:

  • Have a large bowl filled with cold water ready and waiting. Set a large pot of water over high heat and bring to a rolling boil. Working in batches, drop the tomatoes in one at a time, then let sit in the boiling water until the skins split open, 30-60 seconds. One at a time, remove tomatoes from hot water with a slotted spoon and transfer to the bowl of cold water. When cool enough to touch, slip off and discard the tomato skins and remove the hard stem end and core. Trim away any bad spots. Roughly chop the tomato using a food processor or blender, a knife, or by squishing with clean hands. Set aside.
  • Add the olive oil to an extra-large 8-10 quart stock pot over medium-high heat. When the oil is shimmering, add the diced onions. Cook, stirring frequently with a large wooden spoon, until onions start to soften and turn golden, about 8 minutes. Add the garlic and cook for another 30-60 seconds, stirring constantly so it doesn't burn. Add the tomato paste and cook for 1-2 minutes, stirring and scraping the bottom of the pan so it doesn't burn. Add the fresh tomatoes.
  • Bring just to a boil, then lower heat to medium-low and let simmer, uncovered, for 2-3 hours, until thickened. Stir occasionally to make sure the sauce at the bottom of the pan isn't burning.
  • Add sugar or honey, if desired, along with the herbs, salt, and pepper. Taste and add additional salt and pepper if needed.
  • Let the sauce cool completely. Pour into to freezer-safe containers or heavy-duty freezer bags. Label well with date and contents, then transfer to the freezer. The sauce will last 3-4 months, or longer if you use a deep freeze.

FRESH GARDEN TOMATO SAUCE

Fresh Garden Tomato Sauce image

I'm showing you how to make a tomato sauce using fresh tomatoes. You'll often hear me say in these videos that what we're making is way better than what you can buy at the store and with this, not only is it better, but you literally can't get this at a store! If you've never done this before, I think you'll be surprised at how simple and easy it is-in fact, the hardest thing will be finding vine-ripened tomatoes.

Provided by Chef John

Categories     Side Dish     Sauces and Condiments     Sauces     Pasta Sauces     Tomato

Time 35m

Yield 10

Number Of Ingredients 6

3 tablespoons olive oil
3 cloves garlic, thinly sliced
8 leaves fresh basil
5 pounds vine-ripened tomatoes, seeded and quartered
1 teaspoon kosher salt, or to taste
⅛ teaspoon red pepper flakes

Steps:

  • Heat olive oil in a saucepan over medium heat and add sliced garlic. Cook and stir for about 30 seconds before adding basil leaves. Sizzle garlic and basil in olive oil until the thinnest slices of garlic just start to turn golden. Quickly transfer in tomatoes. Add salt and pepper flakes and increase heat to medium-high.
  • Cook, stirring occasionally, until the mixture simmers and the tomatoes have completely collapsed and liquefied. Turn off the heat.
  • Using a strainer or colander, strain the sauce into another pot, pressing everything through with the back of a ladle or spatula, until nothing is left in the colander except the skins and seeds.
  • Place strained sauce back over medium heat and reduce to about 5 cups, or until desired thickness. Taste for seasoning and use immediately, or store in an airtight container until needed.

  • Select The Right Tomatoes. If you’re a gardener, then really ANY tomato can be used to make homemade tomato sauce. I gathered up a bunch of tomatoes from my garden and my parent’s garden and turned it into tomato sauce.
  • Wash the Tomatoes. Tomatoes from the garden can be dirty, especially if the vines are on the ground. To clean the tomatoes fill your sink with water and put the tomatoes in the water.
  • Remove the Tomato Skins and Seeds. When you’re making tomato sauce it’s usually preferable to remove the skins of the tomato. For one thing, the tomato skins tend to be noticeable in a sauce.
  • Cook Down the Tomatoes Into a Sauce. OK now that the harder work is done, it’s time to work on your patience. The next step is to cook the tomato juice down until it gets to the consistency that you like.
  • Can the Tomato Sauce. If you’re thinking of canning tomato sauce, this is the time to do it! It’s simply pure tomato sauce but you can add additional ingredients later when you open the jar.
  • Add Extra Ingredients. If you’re skipping the canning and just want to make homemade tomato sauce for dinner, then I suggest adding extra ingredients to make the tomato sauce more vibrant and tasty!

From thespruceeats.com
  • Ingredients You'll Need. Tomatoes (about 5 to 6 pounds for every quart of sauce that you want to make) Chopped onions (1 medium onion per 1 quart of sauce)
  • Blanch the Tomatoes. Start by plunging your tomatoes into boiling water for 1 to 2 minutes. This will loosen their skins, so they're much easier to remove later.
  • Remove the Skins, Stems, and Seeds. Once the tomatoes are cool enough to handle, remove their skins, and cut out the spot where the stems used to attach to the tomatoes (this is referred to as coring the tomatoes).
  • Saute the Onion and Garlic. Add about a 1/4 cup of olive oil to a large pot. Then, saute the onions and garlic until they're soft (a few minutes should do it).
  • Combine All the Ingredients and Cook. Add the tomatoes and all of the remaining ingredients to your onion-garlic mixture, and bring the pot to a boil.
  • Jar Your Sauce. Pour your finished sauce into jars. Use freezer jars if you want to freeze your sauce or canning jars if you'd like to can your sauce for shelf-stable storage.
