This is a great recipe that came from the Food Network, so I wanted to post it here (I was looking for a really good fortune cookie recipe on here). One thing, I did find that when I used the recommended tablespoon in putting the batter on the cookie sheet, the centers of the cookies were too "doughy" and the edges were golden brown, and the cookies broke when I tried to bend them into the fortune cookie shape. So, using a rubber bowl scraper, I put a small amount on the cookie sheet and just swirled it around until it was a nice, thin layer, about 3-inches in diameter. This worked perfectly! But, when the recipe says only make a few at a time, it's no joke! These harden quickly and unless you've got others in the kitchen to help or you move with lightning speed, I suggest only making 2 or 3 at a time.

1/3 cup sugar
4 tablespoons melted butter, cooled

Steps:

  • You will also need: 2 1/2 x 1/2-inch fortune strips.
  • Preheat oven to 350°F.
  • Grease a cookie sheet thoroughly.
  • Whip the egg whites on low speed until light and foamy.
  • Blend in the sugar and continue to beat until soft peaks form.
  • Pour in the melted butter, flour, salt, and extracts; mix until well combined.
  • Drop a tablespoon of the batter onto the prepared cookie sheet.
  • Using the back of a spoon, spread the batter evenly into very thin 3-inch rounds.
  • Alternatively, use the lid of a jar with a 3-inch circle punched out as a template, pour the batter in the ring, and remove.
  • Because you must work quickly to shape these cookies, bake just 3 at a time.
  • Bake for about 5-8 minutes or until the edges are a light golden color.
  • Remove the cookies with a spatula and place on a work surface.
  • Lay a fortune in the lower middle of the cookie, and fold in half to make a semi-circle.
  • Bend the edges up toward each other to make a crescent.
  • Drag the crease across the rim of a small measuring cup, with the ends facing down.
  • Cool in mini muffin tins to hold shape until crisp.
  • Repeat with remaining batter.

2 egg whites
1 tsp vanilla extract
1 tsp almond extract
3 tbsp sunflower oil
100g plain flour
2 tsp cornflour
100g caster sugar
1 ½ tbsp black sesame seeds

Steps:

  • Preheat the oven to 180C/160 fan/gas 4 and line a large baking sheet with baking parchment, or use a silicone baking sheet. Write or print fortunes on paper measuring 6cm long by 1cm wide.
  • Put the egg whites, vanilla, almond extract, oil and 2 tsp cold water into a bowl and whisk with an electric hand whisk until frothy, 20-30 secs. Measure the flour, cornflour, sugar and a good pinch of salt into a bowl, then sift into the egg white mixture. Whisk everything together until you have a smooth batter-like consistency. Chill the mixture for 1 hr.
  • Next, put a tbsp of mixture onto the prepared baking sheet. Oil a metal spoon, then use the back of it to swirl the mixture out into a 8-10cm circle. Repeat with another tablespoon of the mixture, to create 2 cookies. Make sure there is space between each cookie as they will spread in the oven. It is best to only bake 2-3 cookies at a time, as you will need to shape them whilst they are hot. Sprinkle 1 of the cookies with black sesame seeds, then bake for 10-12 mins until the edges of the cookies turn golden.
  • One at a time remove the cookies with a palette knife once they are out the oven. You want them to still be soft so you can shape them so work quickly. Turn the cookie over so that the sesame seeds are face down and put the fortune in the middle of the circle. Fold the circle in half to secure the fortune and pinch the 2 edges together to seal. Pop the cookie on the rim of a mug or cup and very gently pull the 2 corners down to get the fortune cookie shape. Hold for 10 secs, then transfer the cookies to muffin tins so that they hold their shape whilst cooling completely. Repeat with the remaining cookie mixture.

Steps:

  • Preheat the oven to 425˚F (220˚C).
  • Add the egg whites and vanilla extract to a medium bowl and use a whisk or hand mixer to beat until frothy, about 1 minute.
  • Sift in the flour, sugar, and salt through a fine-mesh sieve.
  • Using a spatula, gently incorporate into the batter until paste-like.
  • Add the water, 1 tablespoon at a time, until the batter is smooth and falls into ribbons when the spatula is picked up.
  • Place 1 tablespoon of batter onto a silpat-lined baking sheet and spread into a 3-inch (7-cm) circle.
  • Repeat with another tablespoon of batter, making sure to only leave two circles on the silpat.
  • Bake for 8 minutes, until the edges become golden brown.
  • Working quickly, use a spatula to remove the cookies from the pan. Add a fortune in the middle, fold the cookies in half, then place the flat side on the lip of a cup, folding the edges down into a fortune cookie shape. Place the folded fortune cookies in a mini muffin tin until cooled to retain their shape.
  • Repeat with remaining batter.

  • Preheat oven to 400°. Write fortunes on small strips of paper (3-1/2x1/4-in.); set aside. Line a baking sheet with parchment. Using a pencil, draw two 3-1/2-in. circles on a sheet of parchment.   • Preheat oven to 400 degrees F. Butter a cookie sheet. Write fortunes on strips of paper about 4 inches long and 1/2 inch wide. Generously grease 2 cookie sheets.
  • Mix the egg white and vanilla until foamy but not stiff. Sift the flour, salt, and sugar and blend into the egg white mixture.
  • Place teaspoonfuls of the batter at least 4 inches apart on one of the prepared cookie sheets. Tilt the sheet to move the batter into round shapes about 3 inches in diameter. Start with 2 or 3 to a sheet and see how many you can do.
  • Bake for 5 minutes or until cookie has turned a golden color 1/2 inch wide around the outer edge of the circle. The center will remain pale. While one sheet is baking, prepare the other.
  • Remove from oven and quickly move cookie with a wide spatula and place upside down on a wooden board. Quickly place the fortune on the cookie, close to the middle and fold the cookie in half. Place the folded edge across the rim of a measuring cup and pull the pointed edges down, one on the inside of the cup and one on the outside. Place folded cookies into the cups of a muffin tin or egg carton to hold their shape until firm.

  • Gather the ingredients.
  • Write fortunes on pieces of paper that are 3 1/2 inches long and 1/2 inch wide.

  • In a medium bowl, lightly beat the egg white, vanilla extract, almond extract, and vegetable oil until frothy, but not stiff.

  • Bake until the outer 1/2-inch of each cookie turns golden brown, and they are easy to remove from the baking sheet with a spatula (14 to 15 minutes).
  • Working quickly, remove the cookie with a spatula and flip it over in your hand.
  • Place a fortune in the middle of a cookie.
  • To form the fortune cookie shape, fold the cookie in half, then gently pull the edges downward over the rim of a glass, wooden spoon or the edge of a muffin tin. Place the finished cookie in the cup of the muffin tin so that it keeps its shape. Continue with the rest of the cookies.

  • Cut a stencil out of a plastic coffee can lid in the shape of a 3-inch disk. Whip the egg whites until stiff and chill. In a mixer, cream the butter, then add the sugar and continue mixing. Add the flour and blend in, then add the vanilla and blend again. Add the chilled egg whites and mix on low until well incorporated and the batter is smooth. 2 tablespoons vegetable oil
28 grams egg white

  • Sift the flour and corn flour. Add sugar and salt. Mix well. Stir in the oil, egg whites, water, vanilla and almond essence. Mix well.
  • Next heat a non stick pan (medium heat). Drop a heaping tablespoon of batter into the pan. Then spread the batter with a spoon into a cookie about 4 inches in diameter. Cook until light golden brown on both sides, flipping once the first side is golden.
  • Next, (write your own fortune), place a fortune paper (2 1/2 x 1/4 inches)in the center of the cookie and while the cookie is still soft and pliable, fold in half. Then fold the edges together and down. Again fold cookie in half. You are looking for a fortune cookie/crescent shape.
  • Now place in muffin pan to hold shape and bake in oven about 5 minutes (temperature 200 C) Enjoy!!

These Homemade Fortune Cookies are definitely going to be a hit at your next party! These cinnamon sugar fortune cookies are so easy to make and fun to customize for parties!

12 Street Taco sized flour tortillas (*See Note)
1 stick of butter
1 cup sugar mixed with 3 tablespoons ground cinnamon
Toothpicks
Canola or vegetable oil for frying

Steps:

  • Fill a large, heavy bottomed pot with oil only halfway or a third full. You'll want enough oil to submerge the tortillas but don't fill the pot more than halfway full. Heat over medium heat until the oil reached 350 degrees.
  • Fold the tortillas in half (check out the pictures in the post for reference) and grab the tortilla in the middle of the arc of the circle side with two fingers. Push the folded side of the tortilla towards the pinched side with your thumb, then bring the ends together to make the shape of a fortune cookie. Secure the ends together with a toothpick.
  • Repeat with the rest of the tortillas.
  • Once the oil has come to temperature, carefully add 2 or 3 tortillas to the oil. Fry the tortillas, turning over at least once during cooking, until golden brown on both sides about 3-4 minutes.
  • Using a metal tongs, lift the tortilla from the oil and drain the oil out from the inside. Be sure to do this well, or you'll have soggy fortune cookies! Place the fried tortillas on a plate lined with paper towels and repeat with the remaining tortillas.
  • Once all the tortillas are fried, melt the butter and brush on the tops of the tortillas, then coat generously with the cinnamon and sugar mixture.
  • Once the tortillas have cooled, yo can gently remove the toothpicks. Serve immediately or keep on a loosely covered plate until ready to serve, but these homemade fortune cookies are best served freshly made.

SPRINKLY ALMOND COOKIES

Crumbly, shiny almond cookies were a treat that I would get at Chinese restaurants growing up. Usually they were instead of, or in addition to, the classic fortune cookies, and they made that meal extra special. This version has sprinkles because it's the New Year; they're kind of like fireworks. And they are ever so slightly softer and chewier in the center than the crumbly ones I grew up with.

1/2 cup (115 grams) unrefined coconut oil, at room temperature
1/4 cup (50 grams) granulated sugar
1/4 cup (50 grams) dark brown sugar
3/4 teaspoon kosher salt
2 large eggs, separated
3/4 teaspoon almond extract
1/2 cup (60 grams) almond flour
1 cup (130 grams) all-purpose flour
1/2 teaspoon baking soda
1/3 cup sprinkles (red and gold with a few rainbow ones mixed in), plus more for sprinkling

Steps:

  • Place an oven rack in the middle position of the oven and preheat to 350 degrees F. Line a rimmed cookie sheet with parchment paper.
  • In a large bowl, whisk together the coconut oil, sugars and salt until thoroughly combined and creamy. Add the egg yolks, one at a time, whisking to incorporate, then whisk in the almond extract. Add the almond flour and mix to combine using a rubber spatula or wooden spoon. Add the all-purpose flour and sprinkle in the baking soda. Mix until just combined. (The dough will be stiff.) Fold in the sprinkles.
  • Into a bowl with the reserved egg whites, add a splash of water (about 1 teaspoon) and whisk to incorporate. Set aside.
  • Using a 1 1/2-ounce ice cream scoop, scoop out a level portion of the dough and place on the prepared cookie sheet. Repeat with the remaining dough, evenly spacing them apart. Press gently to flatten each dough ball to a healthy 1/2-inch thick. Brush the egg wash on the cookies, then top with additional sprinkles. Bake until lightly golden, begin checking at 12 minutes.
  • Let cool on the cookie sheet for 10 minutes, then cool completely on a rack. Store in an airtight container.

The foam should turn white in color and you should have about 3 times the volume of what you started with, but you don't want to beat to the point where it start to form peaks. Using an egg straight from the fridge, it took me about 30-40 seconds to reach the white foam consistency.
  • In a small bowl, sift together sugar and flour. Add to mixing bowl. Mix on medium speed just until flour and sugar are completely incorporated and a smooth batter forms. Be careful not to mix too long. This part should take about 1 minute.
  • Prepare baking sheets. You will want to prepare at least 2 sheets as you will be making these in very small batches (I recommend making two cookies at a time, and the max I've been able to do before the cookie dough hardens is 3). Cookie sheets need to be lined with silicone baking mat or parchment paper. I preferred how they came out with the silicone mats better. You will be making 3 inches circles on your mats. There are several ways to do this: you can do it free hand and measure them with a ruler; you can use silicone cookie mats that have 3 inch circles already drawn out (like the ones above which I got at Costco); you can print out a stencil of 3 inch circles and place them underneath your silicone mat to guide you which you then remove once you are done.
