This baked homemade applesauce is rich, tart and sweet -- almost like apple pie filling -- and a world apart from store-bought.

Provided by Jennifer Segal

Categories     Breakfast & Brunch

Time 1h

Yield About 4 cups

Number Of Ingredients 4

4 pounds apples (about 10), peeled, cored and cut into 1-inch chunks (I like a combination of McIntosh and Golden Delicious)
3 tablespoons unsalted butter, cut into ¼-inch chunks
¼ cup plus 2 tablespoons light or dark brown sugar, packed
Ground cinnamon, for serving (optional)

Steps:

  • Preheat the oven to 400°F.
  • Place the apples in a 9x13-inch baking dish. Scatter the brown sugar and chunks of butter evenly over top. Cover tightly with aluminum foil and bake for 45 to 50 minutes, tossing once halfway through, until the apples are very tender.
  • Mash the apples with a potato masher or fork. Taste; if the applesauce is too tart, add more brown sugar little by little until the flavors are balanced. (Note that no two batches will ever be the same; the flavor will depend on the tartness of the apples you use.)
  • Make-Ahead/Freezer-Friendly Instructions: The applesauce can be made up to 3 days ahead and refrigerated or frozen in an airtight container for up to 3 months.

Provided by Food Network Kitchen

Categories     condiment

Time 1h35m

Yield about 5 cups

Number Of Ingredients 5

4 pounds assorted apples, such as Golden Delicious, Gala, Honeycrisp or McIntosh (about 8), peeled, cored and chopped
1/4 cup sugar
Kosher salt
1 tablespoon freshly squeezed lemon juice
1/4 teaspoon ground cinnamon

Steps:

  • Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.

EASY HOMEMADE APPLESAUCE RECIPE

Easy Homemade Applesauce Recipe image

There is nothing like Homemade Applesauce both in flavor and texture. If you use ripe apples to make applesauce, you don't even need to add sugar.

Provided by Natasha Kravchuk

Categories     Easy

Time 1h15m

Number Of Ingredients 4

10 lbs apples (very ripe (any variety))
1 1/2 cups water
2 Tbsp granulated sugar ((optional), or add to taste)
cinnamon ((optional), to serve)

Steps:

  • Peel, core and slice all of the apples.
  • Into a large stockpot, add 1 1/2 cups water and 2 Tbsp sugar. Place over medium heat and bring to a boil to dissolve sugar. Add all of the sliced apples, reduce heat to low then cover with lid and cook for 1 hour, stirring occasionally.
  • Mash apples to desired consistency, using either a potato masher, an immersion blender, or an electric hand mixer.
  • Once applesauce is at room temperature, serve with cinnamon if desired. Refrigerate, freeze, or can for longer storage.
  • Wash and sterilize 8 pint-sized jars and lids. Use a ladle and funnel to pour hot applesauce into sterilized jars. Wipe the jar rims clean with a paper towel.
  • Fill a large canning pot 1/3 full with water and bring to a boil. Place applesauce jars into the hot water, making sure they are covered by 1-2 inches of water. Return to a boil and process for 20 minutes.
  • Carefully remove from the water using a jar lifter and place them right side up until they reach room temperature and lid suctions in and seals. The lids should not pop when sealed correctly. If any jars do not form the seal, refrigerate and enjoy within 2 weeks.

  • Peel, core and chop the apples into 2″ chunks. In a medium Dutch oven or large stainless steel saucepan, combine the apple chunks, water, maple syrup and cinnamon. Cover and bring the mixture to a simmer over medium heat. Continue simmering, stirring occasionally, until the apples are tender and falling apart, about 15 to 20 minutes.
  • Remove the pot from the heat. For chunky applesauce, use a potato masher or the back of a sturdy spatula or wooden spoon to break it up to your desired consistency. For smooth applesauce, blend it in your food processor.
  • Stir in the vinegar. Adjust to taste as necessary—for sweeter applesauce, stir in more maple syrup (I usually add 2 tablespoons); for more spice, add more cinnamon; for more complexity, add another teaspoon of vinegar.
  • Serve warm or chilled; let it cool to room temperature before covering leftover applesauce and storing it in the fridge. Leftover applesauce will keep well in the refrigerator for about 1 week, or for months in the freezer.
