1 large bunch fresh cilantro, stems removed
1/2 bunch fresh flat-leaf parsley, stems removed
1 teaspoon ground cumin
1 teaspoon kosher salt
1/4 teaspoon cayenne pepper
3 cloves garlic
Juice of 3 limes
1/2 cup olive oil

Steps:

  • Fill a blender or food processor with the cilantro and parsley leaves. Add the cumin, salt, cayenne, garlic and lime juice. Put the lid on the blender, then remove the center piece. With the blender on low, drizzle in the olive oil. Blend until pureed and somewhat smooth. Serve with grilled steak or other meat.

3 scallions

1/4 teaspoon black pepper

  • Place all the ingredients into a food processor or blender and blend until the garlic and herbs break down into a sauce consistency.

4 cloves garlic, roughly chopped
Kosher salt and freshly ground pepper
1/2 cup packed fresh flat-leaf parsley leaves

1/4 cup ice cubes
1 jalapeno, stemmed, seeded and roughly chopped
1/4 cup plus 2 tablespoons extra-virgin olive oil

Steps:

  • Combine the vinegar, garlic and a generous pinch of salt in a blender and blend on low until smooth. Add the parsley, cilantro, oregano, ice and jalapeno and blend on medium speed. With the blender running, slowly drizzle in the olive oil and puree until smooth, about 1 minute, stopping to scrape down the sides if necessary. Season the chimichurri with more salt and pepper and transfer to a serving bowl, cover with plastic and refrigerate until ready to serve.

¾ cup good-quality olive oil
¼ cup red wine vinegar

1 lemon, zested

Steps:

  • Wash and dry the herbs.
  • Remove the parsley leaves from the thicker, woody stems, then finely chop with a sharp knife. Transfer 1 cup (40 g) to a medium bowl and save the rest of the herbs for another use.
  • Remove the oregano leaves from the stems and roughly chop. Add ¼ cup (10 g) to the bowl with the parsley. Save any leftovers for another use.
  • Peel the garlic cloves, then mince. Add to the bowl with the herbs.
  • Peel and mince the shallot, then add to the bowl.
  • Add the olive oil, red wine vinegar, salt, and red pepper flakes. Whisk well to combine. Add the lemon zest and whisk to incorporate.
  • Let the chimichurri sit in the refrigerator, covered, for up to 24 hours.
  • Serve over grilled veggies, steak, seafood, or grilled chicken thighs, use as a dip for crusty bread, or use as desired otherwise.

1 Tablespoon fresh lime juice
2 1/2 Tablespoons red wine vinegar
1 Tablespoon honey
1/3 cup olive oil

Steps:

  • Add the parsley, cilantro, oregano, jalapeño, shallots, garlic, lime juice, red wine vinegar, honey, 1/4 teaspoon salt and 1/8 teaspoon pepper to the bowl of a food processor and pulse until roughly chopped.
  • With the motor running, stream in the olive oil. Continue blending until combined, scraping down the sides as needed. Taste and season the chimichurri with salt and pepper then serve or store, covered in an airtight container, in the fridge for up to 3 days.

1/2 cup olive oil
2 tablespoons red wine vinegar
1/2 cup finely chopped parsley
3-4 cloves garlic (, finely chopped or minced)
2 small red chilies (, or 1 red chili, deseeded and finely chopped (about 1 tablespoon finely chopped chili))
3/4 teaspoon dried oregano
1 level teaspoon coarse salt
pepper (, to taste (about 1/2 teaspoon))

Steps:

  • Mix all ingredients together in a bowl. Allow to sit for 5-10 minutes to release all of the flavours into the oil before using. Ideally, let it sit for more than 2 hours, if time allows.
  • Chimichurri can be prepared earlier than needed, and refrigerated for 24 hours, if needed.
  • Use to baste meats (chicken or steaks) while grilling or barbecuing. We don't use it as a marinade, but choose to baste our meats with chimichurri instead. However, you can use it as a marinade if you wish. Also, add a couple of tablespoons over your steak to serve.

2 cups fresh Italian parsley, loosely packed
5 cloves garlic, peeled and smashed
2 tablespoons shallots, roughly chopped
2 tablespoons red wine vinegar
½ lemon juiced (about 2 tablespoons)
1 tablespoon fresh oregano, chopped ((dry works okay too, but fresh is more fragrant))
1 teaspoon salt
½ teaspoon pepper
½ teaspoon red chili pepper flakes
½ - ¾ cup extra virgin olive oil

Steps:

  • Place all ingredients except olive oil in the food processor and pulse a few times until everything starts to break up.
  • Start slowly adding the olive oil. Start with just ½ cup, and then slowly add more and pulse a few more times. Don't puree, just a few pulses will do. If it's too thick add more olive oil until you get to your desired consistency. Serve over grilled or smoked beef, chicken, pork, fish, and even vegetables.
