1/3 cup uncooked elbow macaroni
1/3 pound lean ground beef (90% lean)
1/4 cup chopped onion
1 cup canned diced tomatoes
3/4 cup tomato juice
3/4 cup canned kidney beans, rinsed and drained
1 small garlic clove, minced
3/4 teaspoon chili powder
1/8 teaspoon salt
1/8 teaspoon dried oregano
1/8 teaspoon pepper
2 tablespoons sweet pickle relish

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. , Add the tomatoes, tomato juice, beans, garlic, chili powder, salt, oregano and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. , Drain macaroni; add to beef mixture. Stir in pickle relish; heat through.

Steps:

  • Brown ground beef. When it is about half done press garlic into pan and add onion.
  • cook till ground beef is done onions should be clear drain grease.
  • While cooking ground beef cook macaroni acording to box. Drain macaroni.
  • Add diced tomatos and tomato sauce Stir.
  • Add chilli powder and cumin Stir.
  • Add macaroni Stir.
  • Add salt. Season to taste. Stir.
  • Serve and top with chedder cheese makes.

1 medium onion, chopped
1 green bell pepper, chopped
1 (14.5 ounce) can Mexican or chili-style stewed tomatoes, undrained
½ cup water
1 (1.25 ounce) package taco seasoning mix
2 cups elbow macaroni or small shells, cooked and drained

Steps:

  • Cook ground beef, onion and green pepper in large skillet over medium heat 5 minutes or until beef is no longer pink; pour off drippings. Add tomatoes, water and taco seasoning; simmer 5 minutes, stirring occasionally.
  • Toss pasta with meat mixture. Spoon 3 cups of mixture into an 11x7-inch baking dish. Sprinkle with 1 cup cheese; top with remaining meat mixture. Cover with foil; bake in preheated 375 degrees F oven 30 minutes. Uncover; sprinkle with remaining cheese. Return to oven 5 minutes or until cheese is melted.

1 tablesp. olive oil, or vegetable oil
1-1/4 lbs. ground beef
salt to season the ground beef
pepper to season the ground beef
garlic powder, to season the ground beef
onion powder, to season the ground beef
1 medium size onion, diced
3 garlic cloves, minced
1 tablesp. chili powder
1 tablesp. ground cumin
1 tablesp. brown sugar
1 tsp. coriander
1 tsp. onion powder
1/2 tsp. salt
1 (15 oz.) can tomato sauce
1 can (14.5 oz.) diced tomatoes with basil, oregano, and garlic
1 (4 oz.) can chopped green chilies
2 cups water
8 ounces elbow macaroni
1-1/2 tablespoons dried parsley, or cilantro
1 cup shredded mozzarella, or pepper jack cheese
1/2 cup shredded sharp cheddar cheese
Garnish: a large dollop sour cream
Garnish: a sprinkle of dried parsley

Steps:

  • 1. Heat oil in a large deep-dish size skillet over medium heat. (I omitted the cooking oil, and sprayed the inside of a chicken fryer with a no-stick cooking spray.) Added the ground beef and onion, and season it with a bit of salt, pepper, garlic powder and onion powder. Brown the meat.
  • 2. Once the meat is done cooking, and no longer pink; strain off any excess grease in a colander, then place the meat mixture back in the skillet or fryer.
  • 3. To the skillet, add the minced garlic, chili powder, cumin, brown sugar, coriander, onion powder, and 1/2 teaspoon salt, and cook over medium heat for about 1 minute; stirring continuously.
  • 4. Stir in the tomato sauce, diced tomatoes, green chilies, water, and macaroni. Bring to a boil, stirring continuously, then lower the heat to a medium simmer. Cover, and simmer for about 20 minutes; stirring frequently, so the uncooked macaroni doesn't stick to the skillet or fryer, and until the juices are absorbed and the macaroni is tender.
  • 5. Now uncover the beef/macaroni mixture, and add the parsley (or cilantro), and stir in the shredded mozzarella (or pepper jack cheese), and the shredded sharp cheddar. Once the cheese has dissolved into the beef-macaroni mixture, serve immediately, and top each serving with a large dollop of sour cream, and each with a sprinkle of the dried parsley.

1 tablespoon olive oil
1 large yellow onion, (diced)
1/2 green pepper (capsicum), (seeded and diced)
4 cloves garlic, (minced (or 1 tablespoon minced garlic))
1 pound (500g) lean ground beef
1 tablespoon each ground cumin and red chili powder (or Cayenne (adjust to your tastes))
1/2 teaspoon smoked paprika ((or sweet paprika))
1/2 teaspoon salt
7 oz (200g) crushed tomatoes
7 oz (210g) tomato puree ((or Passata, condensed tomato soup for Aussies))
1 cup (250 ml) beef or chicken broth
1 tablespoon tomato paste
14 oz (400g) red kidney beans, drained
7 oz (200g) black beans, drained
1 cup shredded Cheddar Cheese ((or Monterey Jack))
1 cup shredded mozzarella cheese

Steps:

  • Heat oil in large heavy-based pot (or casserole pot) over medium-high heat. Add onions and sauté until transparent, then add the green peppers (or capsicum) and garlic, sautéing for a further minute until the garlic is fragrant.
  • Add beef and cook until browned, breaking up any big chunks with the end of your wooden spoon. Stir in the cumin, chili powder, paprika and salt and mix through until beef is fully coated in the seasonings.
  • Mix in the crushed tomatoes along with the juices, tomato puree, broth, tomato paste and beans. Bring to a boil, then lower heat and allow to simmer while stirring occasionally, until the chili thickens (about 10 minutes).
  • Preheat oven broiler (or grill) on medium heat.
  • Add the cooked pasta and toss well to combine. Top with cheese, transfer to oven and broil for 2 minutes, or until cheese is bubbling and melted.
  • Garnish with sliced jalapeños and chopped cilantro (optional). Serve with sour cream.

In searching what to make for dinner tonight, I took out a package of ground meat (buffalo, specifically) from the freezer, and found a box of elbow macaroni. Looked like Chili Mac makings to me! :) I had never made Chili Mac before (I just remember having it in the cafeteria when in grade school), so I took a look at what was here on Zaar... and was surprised not find many recipes for it. I put together a recipe out of what I found here and elsewhere online, but the below meat chili mac was somewhat adapted from Miss Annie's vegetarian Marvelous Macaroni Chili. Very tasty, very flexible! :) This is a Pantry Challenge recipe.

1 cup uncooked elbow macaroni (we use Mission lower-carb macaroni)
1 lb ground chicken or 1 lb ground turkey
1 cup chopped yellow onion
1 tablespoon minced garlic (about 4 cloves)
1 (14 -15 ounce) can chopped peeled tomatoes, with juice
1 (6 ounce) can tomato paste
1 (7 ounce) can chopped mild green chilies, with liquid
1 (15 ounce) can black beans or 1 (15 ounce) can black soybeans, drained
1 teaspoon chili powder
1 teaspoon dried ancho chile powder
2 teaspoons dried oregano
1 teaspoon ground cumin
1/4 teaspoon black pepper
1/2 teaspoon salt
Tabasco sauce, to taste
1 1/2 cups shredded cheddar cheese

Steps:

  • Preheat oven to 350 degrees F.
  • Cook the pasta according to package directions until al dente (if using regular macaroni this will take about 6 to 7 minutes, if using lower-carb versions it'll take about 15 minutes); drain and set aside.
  • While pasta is cooking, in a large sauté pan cook the ground meat, onion, and garlic until meat is browned, about 5 to 7 minutes; drain fat if desired or necessary.
  • Add the tomatoes, tomato paste, mild green chiles, beans, chili powder, ancho, oregano, cumin, pepper, salt, and tabasco (to taste) and simmer for 5 minutes.
  • Add the cooked macaroni and stir well to incorporate.
  • Pour mixture into a lightly pan-sprayed large casserole dish and sprinkle with the cheddar cheese.
  • Bake at 350 degrees F for 20 to 30 minutes or until the cheese is golden and bubbly.
  • Serve with a bit of sour cream for topping and veggies.

This chili mac is my family's favorite one-pot meal! Tender pasta, homemade beef chili, and ooey-gooey cheese. Add this to your regular dinner rotation!

1 tablespoon vegetable oil
1 medium yellow onion, (chopped)
1 tablespoon chili powder
1 tablespoon cumin
salt
4 large cloves garlic, (minced)
1 tablespoon brown sugar, (packed)
1 pound lean ground beef
2 cups water
1 (15-ounce) can tomato sauce
8 ounces about 2 cups elbow macaroni
1-8 ounce package shredded Mexican cheese blend
black pepper
2 tablespoons fresh parsley or cilantro, (chopped)

Steps:

  • In a 12 inch nonstick skillet, add oil (1 tablespoon) and heat until it's shimmering. Add onion (1), chili powder (1 tablespoon), cumin (1 tablespoon), and 1/2 teaspoon salt. Cook over medium heat until onion is soft, stirring often so spices don't burn, about 5-7 minutes.
  • Add the garlic (4) and brown sugar (1 tablespoon) and cook, continuing to stir, so garlic doesn't burn, for about 30 seconds. Add the ground beef (1 pound) and brown lightly, breaking it apart with a wooden spoon as it cooks, until there is no pink in the meat.
  • Add the water (2 cups), 3/4 teaspoon salt, and tomato sauce (1 (15-ounce) can) to the skillet and stir to mix. Stir in the pasta (8 ounces) and cover, increasing the heat to medium-high. Cook the mixture, stirring often and adjusting the heat to maintain a vigorous simmer (not a boil). Continue to cook until the pasta is tender, about 9-12 minutes.
  • Take the skillet off the heat and add 1 cup of the cheese mixture. Taste for seasoning and add salt and pepper to taste. Top the skillet with the remaining cheese and rest the mixture off the heat for a few minutes or until cheese melts. Sprinkle with chopped parsley (2 tablespoons). Serve.

1 small red onion, chopped

Steps:

  • Preheat the oven to 400 degrees F.
  • Bring a large pot of water to a boil. Add some salt and then the macaroni. Cook to al dente according to the package directions. Drain and hold until the cheese sauce is ready.
  • Heat the oil in a medium pot over medium heat. Add the red onions and cook, covered, until soft, a couple of minutes. Add the garlic and bell peppers and cook an additional 2 to 5 minutes, being careful not to burn the garlic. Add the ground beef and sprinkle with salt and pepper; cook until browned, stirring to break up the beef into small pieces. Add the chili powder, cumin, paprika and oregano, and cook until the spices are fragrant. Add the beans and their liquid, the tomatoes and their juices, and the tomato paste; simmer for 5 to 10 minutes.
  • In a separate saucepot, melt the butter over low heat. Add the flour and cook, whisking, for 1 minute. Whisk in the milk, raise the heat to high, and bring the mixture to a boil; cook, whisking, until thickened. Removing from the heat and whisk in the cream cheese, Cheddar, mustard, Worcestershire and some salt and pepper. Pour the pasta into the cheese sauce and stir to combine.
  • Mix the chili into the macaroni and cheese. Transfer to a serving bowl and top with additional Cheddar and the green onions. Serve with corn chips.

Steps:

  • In a large pot, boil pasta until al dente.
  • Meanwhile, in a big, deep pot, brown beef in oil over medium high heat. Add onions, peppers, and garlic. Season meat mixture with chili powder, cumin, cayenne, and salt. Cook together 5 minutes, stir in beer or broth, and reduce liquid by half, 2 minutes. Stir in tomatoes and simmer for 10 minutes.
  • Drain pasta. Add hot pasta to chili pot and stir to coat pasta evenly. Remove from heat and garnish big bowlfuls of chili mac with chopped scallions.
