- In a large skillet cook the ground beef over medium heat until it's no longer pink and starts to brown. Drain off any excess fat, if needed. If using extra lean ground beef there won't be any excess fat to drain.
- Add the ketchup, mustard, hot sauce, onion powder, garlic, salt, pepper and stir everything together.
- Stir in the pasta and beef broth. Bring to a boil then turn the heat down. Cook for about 15 to 20 minutes or until the pasta is cooked through. Most of the sauce should have been absorbed as well.
- Stir in the sour cream then the cheeses and cook for another 30 seconds to a minute until the cheese melts.

- Add the beef and onions to a soup pot. Cook over medium-high heat until the beef has browned (about 7-10 minutes), breaking the meat up with your spoon as you go along. If there's a lot of excess fat, spoon most of it out.
- Reduce the heat so it's not furiously boiling (a rapid simmer is good). I ended up cooking mine over medium heat. Let it cook uncovered until the pasta is tender and most of the liquid has been absorbed (about 13-15 minutes). I stir it every couple of minutes.

- In a large soup pot (4 to 5.5 quart is good), on medium-high heat, brown the ground beef and garlic. Drain any fat or liquid (there won’t be much since we’re using lean meat).
- When the beef is completely cooked, add the beef broth, water, tomato paste, onion powder, Worcestershire sauce, smoked paprika, dried parsley and black pepper. Keep the temperature at medium-high heat. (This may look like a lot of fluids, but it is needed to properly cook the pasta)
- Add the elbow macaroni and cook for about 20 to 25 minutes. Stir often and make certain the pasta does not stick to the bottom of the pan.

- Heat a large Dutch oven over medium heat. Add beef, onions, carrot, red pepper flakes, salt, and pepper and cook, while crumbling the beef, until the beef is browned. Add garlic and cook 30 seconds. Drain excess grease if needed.
- Add beef broth and half of the evaporated milk. Whisk the cornstarch with remaining evaporated milk and add to the pot. Increase heat to high to bring to a boil while you stir in all of the remaining ingredients except the pasta and cheeses.
- Once boiling, add the pasta and reduce to a simmer over medium-high heat for 10-12 minutes (uncovered) OR until al dente, stirring often so the bottom doesn’t stick and burn then pushing the pasta into an even layer so it’s covered in liquid. The pasta should still have some excess liquid (that will become the sauce) once the pasta is done cooking.
- Remove the pan from the heat and stir in the ½ cup cheddar cheese and 1 ½ cups gouda until melted. Taste and season with salt, pepper and/or red pepper flakes to taste. If you would like a saucier pasta, stir in additional beef broth.
